Shortbread pie filled with jam
Kitchen appliances: oven.
Ingredients
Name | Quantity |
Eggs | 3 pcs. |
Sugar | 120 g |
Butter | 200 g |
Baking powder | ½ tsp. |
Sifted flour | 300 g |
Jam | 200 g |
How to choose the right ingredients?
- Theoretically, you can replace butter with margarine, but I don’t advise you to experiment with the spread.
- You can use any jam, but not too liquid, as the syrup may leak out and burn.
- Fruit jam or fresh berries are also ideal for this recipe.
Cooking sequence
- Remove the butter from the refrigerator, warm to room temperature and mix with sugar.
- Separate the yolks from the whites, add to the sugar and butter mixture and mix well.
- Add half of the pre-sifted flour here and mix thoroughly, adding baking powder in the process.
- Add the remaining flour to the resulting mass and continue stirring until smooth.
- Knead the dough a little more with your hands, divide it into two parts and roll it into large and small balls, wrap the small one in cling film and place in the refrigerator for a while.
- Grease a shallow baking dish, place a large ball of dough there and spread over the entire surface, carefully forming the “sides” of the future pie.
- Place the filling on the dough and smooth it over the entire area of the pie.
- Remove the small ball from the refrigerator and, plucking small pieces from it, sprinkle on top of the pie.
- Bake the pie in an oven preheated to 200°C for about 40 minutes.

What to do next?
If there is a pie on the menu, roll out the dough to the size of the mold, pierce it several times with a fork to prevent it from swelling, cover with parchment paper and cover with a weight. Special heat-resistant balls or beans and peas can be used as a weighting agent. This design is baked for about 15 minutes at 180 °C. Then remove the weight, add the pie filling and cook until done.
It is better to choose the filling adjusted for the sugar content in the dough. Unsweetened chopped is suitable for quiches with filling, pies with meat and vegetables. Dough with added sugar will be the basis for fruit and berry tarts.
Baskets are baked in the same way, only the cooking time must be reduced in proportion to the reduction in the size of the cakes. It is enough to bake cookies and other small products in the oven until lightly browned, otherwise they will be too hard.

The most delicious quick grated pie with jam
Thin and crumbly pie with jam in a hurry. The peculiarity of the recipe is that the dough contains starch. The layers are made thin, and there is a lot of filling inside.
This delicious dish takes only 20 minutes to bake.
To prepare we will need:
- Butter – 200 gr.
- Egg – 1 pc.
- Sugar – 120 gr.
- Flour – 400 gr. + 2 tbsp.
- Salt – 0.5 tsp.
- Vanillin - to taste
- Corn starch – 1 tbsp. with a slide
- Baking powder – 1.5 tsp.
- Thick jam – 200-250 gr.
1. Add sugar, egg, salt to a bowl with melted butter and stir everything well.
2. Pour flour, vanillin, baking powder, and corn starch into the resulting butter mixture. The presence of cornstarch will make the cake more crumbly.
3. Knead the dough. It turns out buttery, and after baking it will become crumbly and tender.
I separate the third part for the top grated crust, add 1.5 tablespoons of flour to make this dough dense enough and put it in the freezer for 15 minutes. This way it will be easier for us to rub it.
4. I place the rest in a bowl to rest to increase gluten. After 15 minutes, the part for the bottom cake can be rolled out for baking in a thin layer. To prevent lumpiness from forming during baking, prick the dough with a fork.
5. The next layer is jam, spread it without reaching the edges so that it does not leak out.
6. Rub the top of the dough using a coarse grater over the entire surface. I turn the edges inward and press down with a fork for strength and a beautiful design.
7. I send it to bake in the oven preheated to 180 degrees. This took 20 minutes. The pie turned out crumbly and tender. I recommend cutting it while it's hot.
I wish you delicious tea parties.

Simple and easy grated jam pie
This recipe is a very simple shortcrust pastry. Minimum ingredients and maximum pleasure. This pie is baked for 35 minutes. Absolutely any jam will do.
To prepare we will need:
- Butter – 180 gr.
- Egg – 2 pcs.
- Sugar – 300 gr.
- Flour – 420 gr.
- Salt - a pinch
- Baking powder – 2 tsp.
- Thick jam – 300 gr.
- Shape 40x27 cm.
1. Heat the butter to room temperature. Add salt, sugar and beat with a mixer at high speed for a couple of minutes until fluffy.
2. Add the eggs one at a time and beat the mixture after each ingredient for 2 minutes at high speed.
3. The result should be a very fluffy and light mass.
4. Add dry products to this mass, i.e. flour with baking powder. Stir the mixture until smooth.
5. The dough turned out a little sticky, but you don’t need to add a lot of flour. Sprinkle the table with flour and shape the dough to visually divide it into 3 parts.
6. Place 1/3 of the dough on the top of the pie and put it in the freezer. Place the remaining portion for the main crust in the refrigerator for 40-60 minutes. It will cool down there, change its structure, and become denser.
7. After the specified time, distribute the dough for the bottom crust in a thin layer on a baking sheet. Cover it with filling. I love sour fillings, so I have apple-cherry jam. And of course, it should be thick enough so as not to spread.
8. Now we take part of the dough out of the freezer and grate it on top of the filling on a coarse grater and distribute it evenly.
9. Place the pie in the oven preheated to 180-190 degrees. Baking time is approximately 35 minutes. A sign of readiness will be a golden brown crust.
The pie is delicious, beautiful, and crumbly. We make tea and treat ourselves.
How can you decorate such pies?
- Sand pie is a real field of activity for creative individuals. You can come up with many options for its design, and, in particular, thanks to the top layer of dough. The usual grid of strips of dough can be replaced with braids, zigzags, laid out in the form of a basket, or replaced with hearts cut out using cookie cutters.
- You can roll out the top layer of dough into a thin cake and make round holes in it - this option also looks very elegant.
- If you have an artistic streak, you can cut out real patterns from the dough in the form of flowers, leaves or stars, and also lay out an ornament of small stripes.
Step-by-step recipe for grated pie with jam on margarine
This time we will prepare the dough with margarine. Margarine is a mixture of vegetable and animal fats, and here you need to be careful that it does not contain harmful additives.
Also, this recipe does not contain baking powder; instead we will use baking soda slaked with vinegar.
To prepare we will need:
- Margarine or butter – 200 gr.
- Eggs – 2 pcs.
- Sugar – 150 gr.
- Sour cream – 1-2 tbsp. l.
- Flour – 400-450 gr.
- Soda – 1 tsp. slaked with vinegar
- Vanilla sugar - sachet
- Jam – 150-200 gr.
1. Beat the eggs and sugar a little. Add sour cream and melted margarine here.
2. Stir and add vanilla sugar and baking soda.
3. Sift the flour to saturate it with oxygen and add it to the total mass.
4. All ingredients are collected, knead a soft, elastic dough. Cut off the third part and put it in the freezer for 20-60 minutes.
5. Place the remaining dough in a baking dish and distribute it into a thin crust, making small sides along the edges.
Spread jam or thick preserves on top. And for the jam, grate the frozen dough.
6. We will bake in an oven preheated to 180 degrees. Baking time is different for everyone. From 25 to 40 minutes, until golden brown.
Slice the pie while hot. The pie is delicious, which is why this recipe has been around since the 90s to the present day. Enjoy!
