Preparing the salad

At the first stage, we need to marinate the vegetables. To do this, you need to wash, peel and finely chop the carrots. Wash the Chinese cabbage and leave to drain on a paper towel until completely dry. After that, we chop it and send it to the carrots. We do the same with cucumber. If its peel is a little bitter, it is better to remove it. Mix all the vegetables and pour in the marinade. We prepare the marinade separately.

While the vegetables are marinating, pour boiling water over the rice noodles for fifteen minutes.

After it is ready, rinse it in a colander and add it to the already pickled vegetables. Pour soy sauce here and add coriander and black pepper. Before serving, sprinkle the salad with sesame seeds. Mix everything well. Harbin salad is ready.

Preparing the marinade

It is prepared in several stages.

Initially, pour vinegar into the container, add a couple of pinches of red pepper, a little salt and sugar. Pour in the vegetables.

The next step is to mix vegetable oil with a few drops of sesame oil. Place the mixture in the microwave. Be careful not to let the oil boil. Otherwise, it will no longer be suitable for further use and will have to be redone.

Next, add the oil to the container with the vegetables, mix them and leave to marinate for half an hour.

Step-by-step cooking instructions

First, prepare the vegetables:

  • peel and wash the onion;
  • wash the cucumber and remove the peel;
  • we separate the leaves of Chinese cabbage, wash them and let them drain on a towel;
  • wash the tomato and remove the skin, you can do this simply with a knife, or you can blanch it.

At the next stage, chop all the vegetables. Shred the cabbage into strips, the rest of the vegetables in the form in which you use them for a regular salad. Cut the onion into small cubes.

Peel the egg, chop finely and add to the vegetables. We also send pre-cooked rice here. It should crumble and not stick together, otherwise you may end up with porridge instead of salad.

Mix all the ingredients well and add the remaining ingredients. If you are unable to find Chinese seasoning, you can replace it with ground red pepper.

If you want to get as close as possible to the original salad recipe, then you need to add as much soy sauce to it as possible. Then the dish will have a pronounced brown color.

In our latitudes, this variation of the Harbin salad is not often prepared. The recipe involves the use of daikon. You can find the root vegetable at the market or supermarket, or in specialized Chinese food stores. A salad with daikon will pleasantly surprise you with its taste.

To prepare this dish, we take the usual ingredients: cabbage, tomatoes, carrots, cucumber, two raw chicken eggs, butter, sesame seeds, rice noodles. To them add one green bell pepper and one daikon the size of a cucumber. Don't forget about traditional Chinese spices.

  1. First of all, pour boiling water over the rice noodles and prepare the vegetables.

Making homemade Chinese salad Harbin

In order for the salad to not only feel, but also look unusual, it must be cut exactly as indicated in the recipe! This will give it a special twist and make it a real table decoration.

  1. First, boil the funchose. We do this according to the instructions, and so that the finished noodles do not stick together, completely drain the water from them, let them drain in a colander and place them in a deep bowl.
  2. Now let's prepare the egg pancakes. Beat the eggs in a plate, salt them and fry 2-3 eggs in a small frying pan, turning them over on one side and the other.   3. Remove the top leaves from a head of Chinese cabbage and cut it crosswise, no more than 7-8 mm wide. You should get beautiful “curly” rings.
  4. Cut the cucumber and raw peeled carrots as follows: lengthwise into very thin and long strips.
  5. Finally, we’ll prepare the dressing for the Harbin Chinese salad. Mix lemon juice, soy sauce, oil, be sure to sweeten and mix thoroughly until the grains are completely dissolved.
  6. Combine all the ingredients in one bowl, season, sprinkle with sesame seeds and mix - this can be done with your hands or with a spoon. You can serve this salad right away.

Harbin Chinese salad with red pepper

  • Shred Chinese or white cabbage (250 g) and 1 raw carrot, as indicated above.
  • Sprinkle cabbage and carrots with 1 tsp. sugar, and ½ tsp. salt, season heartily with red pepper, add 1 tsp. table vinegar and mix everything with your hands, forcefully kneading tough vegetables so that they release juice - this way they will soak faster. Set aside and begin preparing other ingredients.
  • Boil 200 g of rice noodles, rinse them with cold water and let them drain. Shred the cucumber into strips.
  • We prepare the dressing as follows: since the cabbage and carrots are already salted and seasoned, we need 2 tbsp. sesame oil mixed with 1 tbsp. soy sauce, ½ tsp. sugar and the same amount of coriander.

Stir and heat the dressing in the microwave for 30 seconds at maximum power, and then pour in the vegetables and funchose. Warm sauce will soak up all the ingredients much faster and the salad will turn out juicier.

There are no egg pancakes in this recipe; without them, the appetizer turns out completely lean, but no less tasty! For vegans and anyone observing fasting, such a dish on the table will be very welcome.

Crush the cookies in a blender and mix them with butter. We put our mixture into the mold and sculpt the bottom and side, it must be compacted tightly. After that, we put the mold in the oven for 8 minutes at 180-200°C. After this, you need to take out the mold and reshape the sides, they will slide a little.

While the mold is cooling, you need to mix the cheesecake itself. Mix the cheese with sugar, you need to use a whisk, because if you use a mixer, the mixture will be saturated with oxygen and the cake will tear apart!))) Add eggs, I add one at a time, then cream, the main thing is to mix carefully, do not beat. Once everything is mixed, pour into a cooled mold, you need to hit it a little on the table so that any bubbles that have formed come out. Just like when you make foam on a cappuccino, you have to tap it a couple of times.

Now bake, first put in the oven at a temperature of 200°C, after 10 minutes, reduce to 110°C for an hour. Protein coagulates at 80°C, so don’t be afraid it’s not low. Towards the end, crack the baking sheet a little; the middle should shake a little. I put it in the middle because I have a different operating principle for my oven; in a home oven you have to put it below the middle. If the cheesecake bursts, it means you overcooked it. A lot depends on the diameter of the mold. Here I give everything based on the usual round shape; at home I do it in this way. Now that the time is up, the cheesecake needs to be cooled, first you need to turn off the oven and leave it to cool inside for about 30 minutes, if there are telescopic guides, then it can be pulled out. Then take it out and let it cool at room temperature. Before putting it in the refrigerator, you need to go along the wall of the mold with a thin knife. When it is already cold, you can put canned peaches and pour in jelly; I make jelly from water from peaches. I honestly can’t tell you the proportions, I poured the gelatin into cold water and warmed it up, then cooled it and the jelly is ready, the main thing is to pour the cooled jelly over the cheesecake.

  6. In addition, this salad will perfectly complement daikon. We clean it and cut it into strips on a vegetable cutter.

Combine all the ingredients and prepare the dressing:

  • mix 1 tbsp. soy sauce with 2 tbsp. sesame oil,
  • be sure to add 1 tsp. without a mountain of sugar,
  • beat them vigorously with a fork, and then season the salad.
