Ingredients for the dough:

  • 180 g butter;
  • 180 g granulated sugar;
  • 2 eggs;
  • 180 g flour;
  • 2 tsp. baking powder;
  • 1 tsp. vanilla sugar;
  • 5 tbsp. l. milk.

For Kurd:

  • 100 g berries;
  • 100 g granulated sugar;
  • 2 eggs;
  • 1 tbsp. l. butter.

For cream cheese:

  • 200 g curd cheese;
  • 100 g butter;
  • 50 g powdered sugar.

Preparation:

  • Place soft butter in a mixer bowl and add sugar, start beating at low speed, and then at high speed until you get a fluffy mass.

  • Beat the eggs into the resulting butter mixture one at a time and stir each time, then add the flour and baking powder and mix well with a spatula.

  • Now we pour in the milk drink, this is necessary so that the cupcakes do not come out dry, but on the contrary, airy and soft. Instead of milk, you can take cream or kefir.

  • Mix everything again with a mixer and get a soft dough, which we put into molds. Don’t forget that the dough will rise, so fill the molds 2/3 full.

  • Place the cupcakes in the oven for 20 minutes, temperature 180 °
    C.

  • Cooking Kurd. For those who do not know what it is, let us explain that it is a dessert cream that can be served as an independent dessert, as a sauce, or used as a filling for various baked goods, including cupcakes.

  • So, take any berries, fresh or frozen, puree them with a blender and put the resulting puree in a saucepan along with sugar and eggs.
  • Place the berries on the fire, stir the mixture continuously so that it does not curdle, and as soon as the first bubbles appear on the surface, remove the saucepan from the heat.
  • Add the oil and stir everything well.

  • Now let's move on to the curd cream, everything is simple here, take the creamy product, soft butter and sweet powder, put everything in a blender bowl and beat, put the finished cream in a cool place.

  • Once the cupcakes are ready, take a small knife and make a hole in the middle, which we fill with berry cream.

  • Next, put the cream cheese in a pastry bag, choose a rose or star nozzle and decorate the cupcakes with flowers.


Advice!
Before decorating cupcakes with cream, you need to take it out of the cold in advance, since when it’s cold it’s hard to put out and you won’t be able to make beautiful flowers from it; the edges will turn out torn.

Cooking with kefir

What do you need for baking?

  • Natural cow butter (soft) – 100 g;
  • granulated sugar – 0.75 cups;
  • eggs – 2 pieces;
  • kefir – at least ½ cup;
  • flour - one and a half glasses;
  • chocolate (black is more suitable) – 50 g;
  • cocoa powder - 3 tablespoons is enough;
  • soda – ½ teaspoon;
  • salt - a pinch.

Beat butter with sugar. We spare our hands and use a mixer.

Without turning off the device, add eggs to the butter-sugar mixture, one at a time. They are followed by kefir and soda powder. We knead all this, but now we use a spoon.

Next in line is flour (we sifted it together with cocoa before), salt, and chocolate pieces. After diligent kneading, the dough comes out.

Distribute it among the molds and put it in an oven heated to 180°C. When, after checking (piercing the central cupcake), the wooden skewer remains dry, the dessert must be pulled out.

You can fill small forms with dough, or place it in one large one. In the first case, the delicacy will bake faster.

  • After that, add flour in portions, do not forget about baking powder and knead the curd dough, which we fill the molds with and put in the oven for 20-25 minutes, temperature 180 °

  • Cool the finished muffins in the pan first and then transfer them to a wire rack.

  • For the cream, we take only chilled heavy cream, which we pour into the mixer bowl and begin to beat, gradually adding sweet powder and flavored sugar to it.
  • Then add cream cheese into the creamy mass in three additions and mix everything well again.
  • Using food coloring and a piping bag with tips and beads, decorate the cupcakes.

Important!

For the dough, you need to use only high-quality oil with a fat content of at least 82.5%; the taste of the finished baked goods will be greatly affected by using poor products.

Advice!

For the cream, it is better to use powdered sugar rather than sand, since its crystals simply do not have time to dissolve in the cheese, and the cream will not taste very pleasant.
