Pies on snow with currants

Our secretary, Galina Grigorievna, shared this recipe. For which we thank her so much - we all liked the cupcake! I have baked it 3 times already with different additives (with raisins, candied fruits and nuts), and it always turned out great. Help yourself!

Ingredients: 2 eggs 100 grams of creamy margarine 3/4 cup of sugar 3/4 cup of raisins 1/2 cup of kefir 2 cups of flour 1 full teaspoon of vanilla powder 11 gram bag of baking powder

Chocolate muffins

Actually, there was this cake, but I like it even more with cupcakes.

Ingredients: 1 cup sugar (preferably brown) 1.5 cups flour with baking powder (I used regular flour and 1.5 tsp baking powder) 1 pack of vanilla sugar 3 tbsp. cocoa 3 eggs 1/3 cup vegetable oil 1/3 cup milk salt on the tip of a knife

Cupcake "Snowflake"

Prepares quickly and eats even faster!

Ingredients: 1 can of condensed milk, 1 egg, 6 tbsp. starch, 0.5 tsp. soda, lemon zest

Orange juice cake

I had accumulated a lot of oranges, which were sweet and juicy, but terribly bony, so I decided to use them on the cupcake. It turned out exceptionally tender, it just melted in your mouth! I mixed the remaining orange juice with blackberry juice and added 2 tbsp. l. sugar and boiled. I soaked the hot cake with this syrup, often pricking it with a splinter. But this could not have been done. The cake itself was very tender, slightly moist and very orange.

Ingredients: orange juice 200 g orange zest 2 tsp. butter 100 g sugar 100 g egg 2 pcs. flour 250 g baking powder 1 tsp. berries (cherry, strawberry, blackberry, raspberry) 15 pcs.

Lemon yogurt cake

This recipe turns out just perfect! Moist, spongy, fragrant, golden, tender, simply perfect!

Ingredients: Cake: 1 ½ cups flour 2 tsp. baking powder ½ tsp. salt 1 cup yogurt 1 cup sugar 3 large eggs 2 tsp. lemon zest (about the zest of 2 lemons) ½ tsp. vanilla extract ½ cup vegetable oil

syrup: 1/3 cup lemon juice 1/3 cup sugar icing: 1 cup powdered sugar 2 tbsp. lemon juice

Chocolate cupcake with bananas and honey

This cupcake is very chocolatey with soft notes of banana and honey. The consistency is a bit like moist brownies.

Coconut Highball

Coconut Highball.

Ingredients: 60 ml whiskey 20 ml coconut syrup 20 ml lemon juice 100 ml mineral water Lime slice for decoration

Whiskey Highball is one of the classic cocktails. At one time it consisted only of whiskey and soda, replacing brandy and soda when phylloxera destroyed almost all the vineyards in France. One of the promoters of this cocktail was none other than Tommy Dewar. So why not make it with Duars whiskey?)

Also, this cocktail fits very well with modern trends, when you are not ready to drink 200 grams of strong alcohol in good company in the evening, but you want to sit with them, but in the morning you have to go do things.

So: Take a glass filled to the top with chunky ice. Such ice will take longer to melt, leaving the drink cold for the maximum amount of time without unnecessary delution. Pour in 60 ml of whiskey. I use Dewars 8, you can take what you like best. Next 20 ml of lemon juice. You can take freshly squeezed, or ready-made (its composition is lemon juice and a preservative). Then 20 ml of syrup. I use coconut (as I make Coconut Highball), but it can also be replaced with sugar (boiling water and sugar 1 to 1 , a drop of lemon).Then mix the ingredients so as not to lose the carbonation of the next component. Fill the glass to the top with mineral water. Stir lightly again. And garnish with lime.

That's all =) Cook quickly, enjoy slowly.

You can play with the ingredients - add more whiskey or completely change it to another drink, pour more mineral water, change the syrup (sugar, coconut, orange, etc.) and it will be a cocktail that you like)))

And don’t forget, it’s important to eat tasty and responsibly! ________________________________________________ The video format didn’t do much good here, so let’s try the text version. ________________________________________________

Dough recipes

As you've probably noticed, I really love baking.
But I don’t have the patience to stay in the kitchen for more than an hour or an hour and a half. Therefore, I try to use dough recipes that do not take much time, and most importantly, are very tasty. Kefir dough with cheese

  • 1 cup kefir
  • 1 cup grated cheese
  • 0.5 tsp salt
  • 2/3 teaspoon soda
  • 1 teaspoon sugar
  • 2 cups of flour

If you grate the cheese on a coarse grater, you will get excellent flatbreads and sausages in the dough, and if you grate it on a fine grater, you will get a good dough for other small baked goods, such as bagels, etc.

Unleavened dough with sour cream

  • 1 cup sour cream
  • 2 cups of flour
  • 2 tbsp. spoons of sugar
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 egg
  • 100 g milk
  • 50 grams of melted margarine

Every home has products for this test. Therefore, it is especially popular. You can use it to simply bake cakes for tea, or you can make pies with any filling.

Yeast dough with kefir

  • 1 glass of kefir
  • 0.5 cups vegetable oil
  • 1 tbsp. spoon of sugar
  • 1 teaspoon salt
  • 1 teaspoon dry yeast (50g wet)
  • 2.5 cups flour

My grandmother used this unique dough. And she was a master of all sorts of tricks. The dough is not greasy, fluffy, good for savory baked goods, or for products that you will fry in oil. I baked Khachapuri and garlic buns from it.

Dissolve yeast in kefir at room temperature. Then add the rest of the ingredients and knead the dough. Leave for an hour and a half to rise.

Kefir-based dough (five minutes)

  • 2 eggs
  • 0.5 teaspoon salt
  • 1 cup flour
  • 1 glass of kefir
  • 1 teaspoon soda

Quench the soda with kefir, add eggs, salt, flour and mix thoroughly. Ready. The dough is light, fluffy and most importantly, without a drop of fat. You can cook any pie and even pizza with it. Just the filling should not be wet. I have a pie with raw minced meat. It turned out great.

Unleavened yeast dough

  • Whey (you can use milk or kefir) – 300 ml
  • Yeast (50 g fresh or 1 teaspoon dry)
  • Margarine – 250 gr
  • Salt – 1/2 teaspoon
  • Sugar – 1/2 cup
  • Flour – 4-5 glasses
  • 3 eggs

Dissolve the yeast in the warm whey. Melt the margarine. Knead the dough from all the ingredients and put it in the refrigerator. Do not make the dough thick, because the margarine will harden in the refrigerator. It's better to do it at night. In the morning you can start baking. The good thing about the dough is that the longer it sits in the refrigerator, the better it gets. It's a pleasure to work with him. It is suitable for both sweet and savory baked goods. I bake bagels, cheesecakes, sweet pies, chocolate rolls, and much more from it. Very good for beginners.

Unleavened yeast dough

  • 0.5 l milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1 tbsp. spoon of sugar
  • 1/3 cup vegetable oil
  • 4-5 cups flour
  • 30 g wet yeast

2. Shortbread snowball cookies with coconut flakes

These fluffy lumps are always in demand at the holiday table, my attempts to prepare them were crowned with success, so I wish you, too, to carefully read this recipe and bake snowball cookies.

Components:

  • butter - 120 grams;
  • chicken egg - only two yolks;
  • flour - 200 grams (or 1 cup +1/4 cup);
  • sugar - 2.5 full tablespoons;
  • vanilla sugar - one teaspoon;

For the glaze:

  • warm boiled water - 2 tablespoons;
  • powdered sugar - 100 -110 grams;
  • coconut shavings - as needed.

According to the recipe, snowball shortbread cookies with coconut flakes are prepared as follows:

1. Place butter at room temperature in a convenient bowl, add soft butter, sugar and vanilla sugar. Mix a little with a tablespoon, and then beat for 3-4 minutes.

2. Without stopping the beating process, add one yolk at a time and continue beating for another 2-3 minutes. If the oil mixture sticks to the walls of the container, carefully return it to the bowl using a spatula.

3. Add flour to the resulting mass and knead the dough until smooth. If the dough sticks to your hands, it needs to be placed in the refrigerator for 10-15 minutes.

4. Return the dough to the work surface and form identical balls from it, which we place on a baking sheet lined with baking paper. When laying out the balls, do not place them tightly together.

5. Preheat the oven and set to bake our snowball cookies. After baking, cool and apply fondant and coconut.

6. For the glaze, add two tablespoons of water to the powdered sugar and stir until smooth. If the glaze seems runny, then you can add a little more powdered sugar.

7. Finally, once the cookies have cooled, dip the top of the cookie in the glaze and then roll it in coconut flakes. You can taste it. Beauty, isn't it?

Cooking process

Snezhka pancakes have a number of advantages. Firstly, the use of “Snezhka” in the recipe allows you to save on the use of granulated sugar. And the low sugar content in the dish is a significant plus for both your figure and overall health. Secondly, you do not need to use yeast to prepare the dish. Fermented milk products mixed with soda give excellent foam. Pancakes on Snezhka are fluffy and delicious.

To prepare, you will need a deep bowl in which it would be convenient to mix the ingredients. Pour “Snowball” into it and break a chicken egg into it. If you want the pancakes to have a rich yellow color, then add another yolk or use homemade “country” eggs for cooking, which are very yellow in themselves.

Mix the egg mixture and fermented milk drink thoroughly. Gradually add water, a pinch of salt and a tablespoon of sugar. Mix flour and soda in a separate bowl. Then little by little add this dry mixture to the dough.

It is important that the frying pan in which you plan to bake pancakes on Snezhka is well heated. Pour oil. We are waiting for it to warm up thoroughly. In the meantime, you can prepare a glass of water. This is needed to prevent the dough from sticking to the spoon.

Try to pour pancakes away from each other. The dough is liquid and tends to spread a lot. Pancakes poured close together on Snezhka will stick together and you will end up with a pancake. As a rule, about four to five pancakes fit on an average frying pan.
