Below are the most successful recipes for baking from “milk” dough, where regular cow’s milk, its baked, condensed or sour version, as well as an exotic coconut product are used as the base.

The best milk-based dough recipes

Quick baking with milk can be different: from milk shortcakes to melt-in-your-mouth cakes that are prepared in less than an hour. Each housewife has her own top list of the most delicious “milk” recipes; one article is not enough to list them all, but no one will argue that delicious donuts and airy custard sponge cake with milk are worthy of being called the best recipes for such baked goods.

For custard milk sponge cake you should take:

  • 3 eggs;
  • 165 g granulated sugar;
  • 120 ml milk;
  • 60 g butter;
  • 7 g baking powder;
  • 165 g flour;
  • 3 g salt;
  • 3 g vanillin.

Baking step by step:

  1. Place the cubed butter into the milk and put it on the fire until it boils.
  2. Beat the eggs with sugar, salt and vanillin with a mixer into a fluffy foamy mass, into which then stir in the flour in two or three additions, after combining it with baking powder.
  3. Pour boiling milk into the dough in several additions and mix thoroughly. Pour the mixture into a mold lined with parchment and cook in a preheated oven for half an hour at 170 degrees.

The finished sponge cake can be used as a base for a cake or simply cut into portioned slices and served with tea.

And for delicious donuts with milk you need:

  • 250 ml milk;
  • 2 eggs;
  • 60 g butter;
  • 80 g white crystalline sugar;
  • 1.5 g vanillin;
  • 1.5 g salt;
  • 11 g dry yeast;
  • 600 g flour.

Baking method:

  1. Beat the eggs with sugar until smooth, pour in the milk and melted butter. Separately mix the flour with the rest of the bulk products.
  2. Combine both components of the dough (liquid and bulk) and knead into an elastic mass, which is allowed to rise in a warm place for one hour.
  3. Next, roll out the dough into a centimeter layer, from which cut out circles with a hole in the center. Allow the preparations to lie in a warm place for another quarter of an hour, and then literally fry for 2 - 3 minutes in boiling vegetable oil on both sides.

Ready-made donuts can be coated with colored sugar glaze and decorated with confectionery sprinkles or crushed nuts and coconut flakes.

Honeysuckle pie on puff pastry


This delicious pie will have a very concentrated, rich taste of fresh berries, since apart from thin puff pastry and honeysuckle there will be no foreign ingredients present.
So if honeysuckle is your thing, then this recipe is for you. Try it! Ingredients:

  • Honeysuckle – 400 gr.
  • Puff pastry without yeast – 1 plate
  • Granulated sugar - to taste
  • Cinnamon, vanillin, cardamom - to taste and optional

Cooking process:

  1. Take the puff pastry and place it in the room to defrost a little. When it has slightly thawed, unwrap the plate and let it defrost completely, but not to the point where the dough begins to spread.
  2. Sort and rinse the honeysuckle well, then dry it in a colander or spread it out on a paper towel folded in several layers. While the dough is defrosting and the honeysuckle is drying, you can drink tea or do other preparations.
  3. Roll out the thawed puff pastry into a layer about 2-3 mm thick, then carefully place it in a baking dish and make sides about one centimeter high.
  4. Carefully spread the honeysuckle over the surface of the dough, evenly and very tightly. Please note that the berries must be completely dry. After spreading all the berries over the surface of the dough, sprinkle them with sugar, sparingly. You can also add a little cinnamon and cardamom to suit your taste.
  5. Turn on the oven at 150 degrees, and while it is heating up, cut the remaining dough into strips about two centimeters wide and place a mesh on top of the berries, securing the ends of the strips to the sides.
  6. Place the pie in the preheated oven and bake until done, about half an hour. This puff pastry pie is delicious served warm or cold. It is very appetizing to eat this dessert with ginger and lemon tea and other savory types of tea.

Quick baking with milk in the oven

How long does it take to bake something delicious in the oven? An hour and a half? No! A delicious manna with milk without flour can be baked in almost forty minutes.

To check this, you need to take:

  • 160 g semolina;
  • 200 ml milk;
  • 3 eggs;
  • 180 g sugar;
  • 50 g butter;
  • 3.5 g soda.

Sequence of actions:

  1. Place melted butter, sugar, eggs and semolina into a bowl suitable for whipping. Beat all these products with a mixer until smooth. Then pour in the milk and soda, whisk everything again.
  2. Pour the resulting mass into a greased mold and place it in the oven, remembering to preheat it to 180 degrees in advance. As soon as the cake is “golden” and a toothpick comes out dry, the baked goods can be removed from the oven.

In addition to this dear and familiar manna, you can make popover buns with milk, which are familiar in English cuisine under the name “Yorkshire pudding”.

Our housewives call them pancake buns:

  • 2 eggs;
  • 150 ml milk;
  • 30 g vegetable oil;
  • 2.5 g salt;
  • 150 g flour.

How to cook:

  1. From all the ingredients listed in the list, knead a liquid pancake dough, which should be put in the refrigerator for about an hour. If there is no time, the cooling process can be omitted.
  2. Heat the oven to 230 degrees. Treat the inside of cupcake or muffin molds (preferably silicone) with vegetable oil and fill 2/3 with dough.
  3. Place the pan with the dough in a hot oven, and after 15 - 20 minutes, remove the buns that have practically jumped out of it.

Since the pastry is hollow inside, it can be filled with cream and served as a dessert. It’s convenient to put savory filling in it instead of tartlets, or simply serve these buns with soup instead of bread.

Recipe for a quick tea pie with jam

Wonderful recipe, the cake turns out very soft and tender. It is very pleasing with its simplicity and airiness. You can use both jam and jam.

Ingredients:

  • Egg - 4 pcs.;
  • Sugar - 6 tablespoons;
  • Vegetable oil - 6 tablespoons;
  • Milk - 6 tablespoons;
  • Flour - 6 tablespoons;
  • Baking powder - 8-9 g;
  • Jam - 400 g;
  • Walnut (any) - 150 g.

Step 1.

Drive the eggs into a deep container and beat with a mixer until fluffy. Once the foam has become fluffy, add sugar and beat well with a mixer. The mass should turn white and increase in volume.

Step 2.

Then we remove the mixer; it is no longer needed. Pour vegetable oil into our mixture and mix.

Then pour in the milk and mix too. You can stir with a tablespoon or spatula.

Step 3.

Now mix the sifted flour with baking powder and add it to our mixture. We measure in heaped tablespoons. Mix all the dough thoroughly until smooth, so that there are no lumps.

Step 4.

We prepare any form. Grease with vegetable or butter. You can lay out the parchment and grease it with oil. Next, pour only half of the dough into the mold. Spread into an even layer.

Place our dough in an oven preheated to 200 degrees for approximately 10 - 12 minutes.

Step 5.

While the first cake is baking, prepare the jam. To do this, we need the jam (any kind of jam or jam) to be liquid, for easy application to the cake. If yours is thick, as jam usually is, then you can add a little warm water and mix well.

Then add crumbs of any nut and simply mix everything so that it is evenly distributed over the jam.

Step 6.

10 minutes have passed, we take it out of the oven. Now, carefully place our jam on top. Try not to press on the cake so as not to push it through.

And then pour the second part of the dough on top and distribute it evenly.

For them you must prepare:

  • 1000 ml sour milk;
  • 2 eggs;
  • 50 g or to taste sugar;
  • 3 g salt;
  • 2 g vanillin;
  • 5 g baking powder;
  • 30 ml vegetable oil;
  • 360 – 420 g flour.

Prepare as follows:

  1. Beat eggs with sugar and salt, pour in sour milk, and then a mixture of flour, vanillin and baking powder. Lastly, add vegetable oil.
  2. If there are lumps in the dough, you should let the mixture sit for a while so that they disperse.
  3. Fry the pancakes in a non-stick frying pan without oil. The amount added to the dough will be enough to prevent them from burning.

The pancakes are served hot with sour cream, jam, honey or condensed milk.

The following baked goods made from sour milk will be a lifesaver for suddenly arriving guests, since the pie according to this recipe is made very quickly and turns out worthy even of a festive feast:

  • 2 eggs;
  • 180 g sugar;
  • 200 ml sour milk;
  • 5 g soda;
  • 260 – 390 g flour;
  • 150 – 200 g of any berries or fruits.

Baking technology:

  1. Mix sour milk with soda and set aside.
  2. Beat eggs with sugar until foamy.
  3. Add sour milk and flour to the foamy egg mass. The dough should be thick, like sour cream.

Thanks to the cooking technology, it contains more vitamins, iron, calcium and easily digestible proteins. Baked milk can replace regular cow's milk in most recipes, but there are baked goods that are prepared only with it.

Milk shortcakes

Previously, such shortcakes were sold in school and student canteens, and it seemed that nothing could be tastier.

But you can repeat this deliciousness in your home kitchen by taking:

  • 100 g butter;
  • 200 g sugar;
  • 2 eggs;
  • 100 ml baked milk;
  • 420 g flour;
  • 5 g baking powder;
  • 2 g vanillin.

Bakery:

  1. Grind soft butter with sugar, then stir in eggs one at a time, pour in baked milk at room temperature, stir until smooth.
  2. Flour, vanillin and baking powder are mixed in one bowl, then sifted so that the baking powder is evenly distributed in the dough. The resulting mixture is mixed with the remaining ingredients.
  3. The result is soft dough, which is rolled out into a flat cake 7–10 mm thick. Round cakes are cut out of it, which are also greased with a small amount of baked milk and baked for about a quarter of an hour at 180 °C.

Baked milk cake

By slightly changing the proportions of the same ingredients, you can bake a delicious and aromatic cupcake. It can be topped with glaze made from 80 g of white chocolate and 50 ml of heavy cream.

Ratio of ingredients in the dough:

  • 100 g soft butter;
  • 100 g sugar;
  • 1 egg;
  • 300 ml baked milk;
  • 12 g baking powder;
  • 350 g flour.

How to bake:

  1. Combine all ingredients in the same sequence as when kneading the shortbread dough.
  2. Pour the resulting dough, flowing like sour cream, into the prepared pan and bake until toothpick dry at standard 180 degrees. After cooling, cover the finished cake with frosting.

It is very easy to prepare baked milk using a slow cooker. To do this, bring it to a boil, pour it into a multi-pan and simmer for 1.5 - 2 hours in the “Stew” mode.

Homemade cakes with coconut milk

Dough made with milk can also be dietary, and even during Lent it is quite possible to drink tea with a pie made with milk. True, not cow's, but coconut's. Below is the recipe for the dough, which can be easily turned into a cake by cutting the finished fluffy cake into thinner layers. It’s easy to bake small cupcakes from it, which will be convenient to give to your child for a snack at school.

Proportions of coconut milk and other products:

  • 210 ml coconut milk;
  • 60 ml vegetable oil;
  • 55 ml orange juice;
  • 140 g sugar;
  • 195 g flour;
  • 40 g starch;
  • 8 g baking powder;
  • 2.5 g vanillin.

Progress:

  1. Dissolve sweet sugar crystals in coconut milk, then pour in vegetable oil and orange juice. Stir everything.
  2. Separately combine and strain all dry bulk ingredients through a sieve. Combine this mixture with the liquid ingredients in several steps. If desired, you can add orange zest, chocolate drops, candied fruits or raisins to the dough.
  3. Pour the dough into a mold, the stacks of which have been treated with vegetable oil, and bake at 180 degrees. For the cake to brown and bake well, 30 to 40 minutes will be enough.

Coconut milk can be easily prepared at home. To do this, the coconut pulp is separated from the peel and grated, then poured with water in a ratio of 1:1.5 and left for 2 hours. Next, the mass is blended with a blender and filtered through a fine sieve.

With sour cream

A quick sour cream pie is good because it always turns out tender and fluffy. And if you vary the amount of sugar, you can add various fillings, even salty ones. The main ingredients of the dough are simple products: sour cream, eggs, sugar, salt, butter, baking powder or soda. All ingredients are mixed and placed in a mold. Baking time depends on the thickness of the layer. You can check readiness with a toothpick. You just need to stick it into the dough. If it sticks, it means the culinary product is raw inside. When the toothpick comes out dry and clean, the dessert is ready.

Quick desserts with condensed milk
