When the dough begins to ferment, bubbles will appear on the surface. This is the beginning of the formation of a foam cap. This means that the yeast has begun to work actively. Cover the bowl with a towel and leave for now.
Sift the rest of the flour separately.

It is also suitable for you if you are excluding dairy products and eggs due to allergies or dietary reasons. This recipe produces small and rather thick pancakes, in the style of American “pancakes”. Both adults and children always eat them with pleasure. This recipe uses a standard vegan trick: ground flax seed as an egg substitute. If you fill it with water and let it stand for a while, a viscous mass is formed, which perfectly replaces eggs in recipes where they play a binding role. Instead of one egg, you need to take 1 tablespoon of flaxseed flour and 2.5 tablespoons of water. This substitute in baking can also be used for various vegetable “cutlets” during Lent. 1. In the evening, in a bowl (not metal), mix water with starter and flour. Leave the dough overnight to mature.
2. Pour water at room temperature into the prepared dough. Add sugar, salt and stir. Then add the sifted flour. Using a wooden spatula, stir the mixture well until smooth.
3. Cover the bowl with the dough and let stand for 1 hour. After this, stir the mixture, close it again and leave for the same time. This is necessary in order to develop gluten. Then the pancakes will be fluffy, porous and soft. Before frying, add vegetable oil and mix well. Add a mixture of different spices if desired.
4. Heat the pan until it is very hot. Grease the surface well with oil. Pour a ladle of dough and spread it across the diameter in a thin layer. Once the top becomes dull and full of holes, flip it over to the other side. Fry all the pancakes this way.
5. To prepare the sauce, pour the beans into the blender bowl. Add salt, mustard and start whisking. Pour warm water into the mixture little by little. When the mass becomes pasty and turns white, gradually pour in vegetable oil in a thin stream. After a minute, stop the blender and add lemon juice. Continue whisking for a few more minutes.

But this recipe uses a sponge method, which is convenient when you don’t know exactly what quality your yeast is. It should be mentioned that yeast in the recipe can be used not only dry, but also fresh pressed. It is also better to make dough for them.
When the dough begins to ferment, bubbles will appear on the surface. This is the beginning of the formation of a foam cap. This means that the yeast has begun to work actively. Cover the bowl with a towel and leave for now.

It is convenient to do this by slightly lifting it above the switched on stove. When the top surface of the first pancake is set, flip it over and bake on the other side. If you have heated the frying pan well, one pancake will take no more than a minute.
