Prepare lean pancakes. This is a basic recipe that will definitely come in handy for a delicious breakfast during Lent. It is also suitable for you if you are excluding dairy products and eggs due to allergies or dietary reasons. This recipe produces small and rather thick pancakes, in the style of American “pancakes”. Both adults and children always eat them with pleasure. This recipe uses a standard vegan trick: ground flax seed as an egg substitute. If you fill it with water and let it stand for a while, a viscous mass is formed, which perfectly replaces eggs in recipes where they play a binding role. Instead of one egg, you need to take 1 tablespoon of flaxseed flour and 2.5 tablespoons of water. This substitute in baking can also be used for various vegetable “cutlets” during Lent. Flax seed or ready-made flaxseed meal can be purchased at a pharmacy or in the “health” section of a supermarket.

First we will make the “egg”. A tablespoon of flaxseed flour should be poured into 2.5 tbsp. l. cool water and let stand.

Mix soy milk and apple cider vinegar separately - this will give you a lean analogue of the fermented milk product. Acid is needed to react with soda and produce a more fluffy dough.


Then add the oil and the flaxseed “egg”.

Next you need to carefully knead the dough. Make a well in the center of the dry ingredients and pour the liquid ingredients into it. Stir slowly until the ingredients are combined. There may be a few lumps left, this is normal, the dough does not need to be kneaded for a long time until completely smooth, otherwise the pancakes will turn out hard and “rubbery”

To keep the pancakes warm, you can put the first batch in the oven, preheated to 75-100 Cº.

  • 1 tsp salt
  • 1-2 tbsp. lemon juice (or apple cider vinegar)

1. In the evening, in a bowl (not metal), mix water with starter and flour. Leave the dough overnight to mature.

2. Pour water at room temperature into the prepared dough. Add sugar, salt and stir. Then add the sifted flour. Using a wooden spatula, stir the mixture well until smooth.

3. Cover the bowl with the dough and let stand for 1 hour. After this, stir the mixture, close it again and leave for the same time. This is necessary in order to develop gluten. Then the pancakes will be fluffy, porous and soft. Before frying, add vegetable oil and mix well. Add a mixture of different spices if desired.

4. Heat the pan until it is very hot. Grease the surface well with oil. Pour a ladle of dough and spread it across the diameter in a thin layer. Once the top becomes dull and full of holes, flip it over to the other side. Fry all the pancakes this way.

5. To prepare the sauce, pour the beans into the blender bowl. Add salt, mustard and start whisking. Pour warm water into the mixture little by little. When the mass becomes pasty and turns white, gradually pour in vegetable oil in a thin stream. After a minute, stop the blender and add lemon juice. Continue whisking for a few more minutes.

Serve the finished sauce along with pancakes in a separate bowl. You can also simply spread it on a piece of bread, or dress a salad.

But this recipe uses a sponge method, which is convenient when you don’t know exactly what quality your yeast is. It should be mentioned that yeast in the recipe can be used not only dry, but also fresh pressed. It is also better to make dough for them.

When the dough begins to ferment, bubbles will appear on the surface. This is the beginning of the formation of a foam cap. This means that the yeast has begun to work actively. Cover the bowl with a towel and leave for now.

Sift the rest of the flour separately.

Add salt and sugar to flour.

Gradually stir the dry ingredients mixture into the yeast dough. There should be no lumps in the dough, so actively beat the mass with a whisk or even a mixer, using the first speed.

Mix the dough thoroughly and leave for a quarter of an hour so that the stickiness of the flour works.

Pour liquid oil into the dough and mix with a whisk. It is necessary to add oil, because there are no eggs in the dough, and the pancakes will not burn to the pan. Don't be alarmed if the dough turns out a bit thick - the foamy mass will be well distributed throughout the pan. Well, if you want to bake very thin pancakes, pour a little more warm water into the dough and stir well. And after a couple of minutes, proceed to the next step of preparation.

To start baking, be sure to warm up the pancake pan thoroughly. Pour some batter into a ladle and spread it throughout the pan. It is convenient to do this by slightly lifting it above the switched on stove. When the top surface of the first pancake is set, flip it over and bake on the other side. If you have heated the frying pan well, one pancake will take no more than a minute.

Such Lenten memorial pancakes are prepared not only from wheat flour alone, but also with the addition of buckwheat. Despite the fact that the pancakes are thin, they are very soft and are excellent for diet food.
