Baked potatoes in wedges and golden-brown sausages are a hearty and high-calorie dinner that can be prepared with virtually no input from you. No need to stand at the stove after work. Place everything on a baking sheet and wait about an hour for it to bake.

It is best to use homemade sausages, although you can buy ready-made semi-finished products; any sausages will do: pork, beef or chicken, chilled, in natural casing. The exact baking time will depend on what they are stuffed with (chicken cooks faster) and on the thickness of the sausages (thin ones will be ready in 40 minutes). It is best to use potatoes for this recipe not young, but from an old harvest; the taste will be more intense, the slices will remain whole, crispy on the outside and crumbly on the inside.

People have come up with many ways to cook potatoes. There is no limit to the culinary imagination; one recipe is more appetizing than another. Even just reading a recipe for fried, boiled or baked potatoes makes me salivate. Although my favorite “dish” from childhood is baked potatoes in ash, today I intend to describe how to prepare a casserole of potatoes with sausage and cheese, seasoned with a delicious mayonnaise and ketchup sauce. I hope the result will satisfy your expectations. On the Internet and not only I have seen many recipes for preparing a dish called accordion potatoes, in which the whole tubers are used, but more on this dish later.

So, to prepare the casserole you will need a minimum of ingredients. Mostly those that are in your refrigerator. You have the right to replace the boiled sausage used in this recipe with salami or cervelat, or any other one you wish. The same applies to other components. For example, in the absence of ketchup and mayonnaise, I replaced them with sour cream and fresh diluted tomato paste, sometimes I exchanged sausage cheese for hard cheese. By this I want to say that changing the composition does not change the taste, and sometimes even improves. I present to you a recipe with a photo of how to cook potato casserole with cheese in the oven.

  • Potatoes - 1 kg.
  • Mayonnaise (sour cream) - 3 tablespoons.
  • Ketchup (tomato juice) - 2 tablespoons.
  • Boiled (smoked) sausage - 350-400 gr.
  • Sausage cheese - 300 gr.
  • Water (if using tomato paste) - a quarter cup.
  • Salt - to taste.
  • Universal seasoning - 1 tsp.
  • Onions - 2 medium pieces.
  • Vegetable oil (for frying onions and greasing the pan) - 3-4 tablespoons.

To begin, dice the onion and fry it over medium heat while stirring for 8-10 minutes.

Preparation

We wash the potatoes thoroughly so that the skins are clean, since we will bake them whole. Then cut into slices - into 6-8 parts. You can take the quantity of potatoes at your discretion, the main thing is that they fit on the baking sheet in one row. I indicated the amount of spices per 1 kg of potatoes.

Sprinkle the potatoes with salt, pepper, granulated garlic and dried herbs, add a little hot pepper to taste. Pour in the vegetable oil and mix everything so that the seasonings are distributed evenly.

Grease the sausage with vegetable oil (you can sprinkle it with dry herbs, I used basil and paprika). Place potato wedges side by side on a baking sheet - skin side down, at some distance from each other, in one layer. Pour the remaining oil over the sausage (it’s better not to pour it on the sausage; there is a lot of salt in the oil, so there is a risk that you will over-salt it).

How to cook “Potatoes with sausage in the oven” step by step with photos at home

For work we need potatoes, smoked sausage, sunflower oil, garlic, salt, ground black pepper, ground red pepper, dry basil, dried parsley.

Peel 500 grams of potatoes, rinse, cut into medium slices and place in a pan with cold water (approximately 1 liter of water). Bring to a boil over high heat and then simmer over low heat for exactly 2 minutes.

Place the potatoes in a colander, drain and leave for 5-6 minutes to dry the potatoes.

Meanwhile, combine 35 ml of sunflower oil, 5 grams of salt, 1 gram of ground black pepper and 2 grams of ground red pepper. Mix with a whisk.

In a deep bowl, combine the potatoes and the mixture with spices and oil. Stir and leave for 10 minutes. During this time, stir the potatoes 3-4 times.

Place the prepared potatoes, along with the remaining sauce, in a baking dish. Place 150 grams of smoked sausage on top, cut into thick slices. Bake at 180°C for 20 minutes.

Meanwhile, peel 2 cloves of garlic, pass through a press and mix with 15 ml of sunflower oil. Pour this mixture over the top of the baked potatoes and cook for another 5 minutes.

Potatoes baked whole in the oven and stuffed with hearty sausage filling turn out incredibly aromatic, crumbly and tasty. Potatoes baked in foil retain all their beneficial properties, acquiring a unique taste.

The dish will make an ordinary dinner festive. Potatoes with sausage will replace a full lunch, breakfast or dinner, as it contains both a side dish and a meat component. For lovers of garlic in dishes, we recommend crushing a clove into sour cream sauce. You can also add grated hard cheese at the end of cooking if desired.

1. Peel the potatoes, wash, dry and cut into 4 slices.

2. Cut the sausage into slices, cubes, slices or any other convenient shape. Cut the lard into thin slices or medium cubes.

3. Grate the cheese on a coarse grater.

4. Choose a convenient form for cooking and place the potatoes in it. Season it with salt, ground pepper and any herbs and spices.

Ingredients:

  • minced meat 200 gr.
  • butter 1 tbsp. l.
  • fresh dill 1 pc.
  • white onion 1 pc.
  • salt 5 g
  • ground allspice 3 pinches
  • egg 1 pc.

Sauce:

  • Flour 1 tbsp. l.
  • tomato juice 1 glass
  • sour cream 150 g
  • vegetable oil 1 tbsp. l.

Basic:

  • Potatoes 1 kg.
  • Salt 1 tsp.

General information:

  • Cooking time: 60 minutes;
  • Number of servings 4.

Cooking method:

  1. Potatoes should be the same size. Wash the potatoes and boil them in their skins in boiling salted water for 15 minutes (until half cooked).
  2. Drain the water, pour cold water over the potatoes and peel them. Make cuts on opposite sides of each potato (for stability) and remove part of the pulp from the middle.
  3. Prepare the filling. Cut the onion into small cubes and mix with meat, dill, raw egg and butter. Add salt and pepper (1/2 teaspoon each salt and 1/4 each black and red pepper) and mix well.
  4. Fill the potatoes with the prepared minced meat and place them on a greased baking sheet. Place a little sour cream on top (half a teaspoon).
  5. If there is minced meat left (like I had, since I initially took 300 g of minced meat) and there is some space left in the mold, then you can use potato centers (even without minced meat, if there is none left), add salt, pepper and place them in the middle in layers. Pour sour cream on top. Bake in the oven for 25–30 minutes at a temperature of 220–250 degrees.
  6. Prepare the sauce. Heat oil in a frying pan, add flour and lightly fry. Dilute with sour cream, add tomato paste. Boil, salt and pepper. Serve separately with potatoes.
  7. Instead of minced meat, you can use finely chopped fish in the filling. You can also stuff the potatoes with fried mushrooms or green onions with an egg.

Peel the potatoes and onions. We cut the onion into half rings, and the main vegetable into thin slices.

When buying “second bread”, pay attention to the tubers; they must be undamaged and clean.

Remove the skin from the smoked sausage and cut into strips. Grate the cheese on a fine grater. In a separate plate, mix sour cream with mayonnaise and add spices.
