Shchi is a traditional Russian and Ukrainian dish. They are prepared in every family. Many housewives have their own special recipe, which is passed down from generation to generation. Here's how I prepare red cabbage soup.

What are the benefits of red cabbage?

Shchi (or borscht) from red cabbage is cooked in the same way as from regular white cabbage. In general, it doesn’t matter what kind of cabbage to add. The taste won't change much, but the color may scare you! Therefore, if you want light exotic, feel free to take on this recipe!

First, cook the broth. It's better if it's on beef bones. It must be cooked over low heat. Make sure that it does not boil with scale. It must be removed immediately, otherwise the broth will be cloudy. Do not cover with a lid.

Now we prepare the vegetables. We clean everything from peels and husks. We cut the beets into strips or three on a grater along with the carrots. We cut potatoes, onions and greens.

Now let's take a frying pan. In principle, you don’t need to fry vegetables if you have rich broth. This step is more necessary for lean cabbage soup. I fry vegetables only at the request of my household, they don’t like boiled onions. Throw beets, carrots and onions into a frying pan along with tomato paste and simmer for 10 minutes.

While the vegetables are stewing, the potatoes are boiled in the broth. I'll add the cabbage later. It cooks faster than potatoes. Some people cook them at the same time. But this way the cabbage is deprived of its nutrients. I add it about 10 minutes later, right before adding the stewed vegetables.

OK it's all over Now. All the vegetables are in the pan. Salt and pepper. By the way, red cabbage will give the cabbage soup a purple hue. This is the main highlight of this vegetable. From the moment the last vegetables are added, the soup is cooked for another 10 minutes. At the end, add the greens and cover with a lid. The soup should sit for about 15 minutes. Serve with sour cream!

Will need:

  • beef ribs – 800 g;
  • potatoes – 5 pcs.;
  • onions – 2 pcs.;
  • carrots – 1 pc.;
  • tomato – 3 pcs.;
  • tomato paste – 2 tbsp. l.;
  • garlic – 4 cloves;
  • fresh herbs, bay leaf, salt, pepper, seasonings to taste.

How to cook:

  1. Pour water into the pan until the ribs are completely covered. The pan should be two-thirds full. Put it on high heat. When the water boils, add the onion, bay leaf to the ribs, and then add salt to taste. When cooking, skim off the foam.
  2. Throw chopped potatoes and finely shredded red cabbage into the broth.
  3. Start frying the future cabbage soup: simmer chopped vegetables (onions, carrots, tomatoes) together until tender. At the end, season with tomato paste, add a few tablespoons of boiling broth and simmer for another 3 - 5 minutes.
  4. When the cabbage and potatoes are ready, add the roast and crushed garlic to the boiling cabbage soup. Sprinkle with herbs and leave for 5 minutes over low heat.

With meat

This recipe is suitable for people who like their soup to have a lot of meat from the broth.

Will need:

  • fresh beef or pork on the bone – 800 g;
  • red cabbage – 400 g;
  • potatoes – 4 pcs.;
  • onion – 1 pc.;
  • carrots – 1 pc.;
  • fresh tomatoes – 5 pcs.;
  • bay leaf – 2 pcs;
  • greens, salt, red and black pepper to taste.

How to cook:

  1. Cover the meat with water in a saucepan. Put on fire. Add salt to the broth and reduce heat until the broth is clear. After boiling, constantly skim off the foam. Cook the meat for an hour until done.
  2. Prepare the tomatoes: wash and soak in hot water for 10 minutes. Remove the skin from the tomato and grind the pulp to a puree in a blender.
  3. While the broth is cooking, chop the onion and potatoes. Shred the cabbage. Grate the carrots.
  4. When the meat is soft, take it out and add the prepared chopped onions, carrots and cabbage to the broth.
  5. Wait for the future cabbage soup to boil, and then add potatoes and chopped meat separated from the bone, as well as bay leaf. When the potatoes are cooked, add tomato puree and chopped fresh herbs (parsley, dill). Cook for another 3 minutes.
  6. Salt and season with your favorite spices. Remove from heat.

With celery

This recipe is unusual in the presence of not only celery, but also cucumber pickle. Such cabbage soup will surprise you with its pleasant sourness and interesting spice.

Will need:

  • beef on the bone or without – 500 g;
  • red cabbage – 400 g;
  • cucumber pickle – 1 tbsp;

  • celery – 100 g;

  4. Shred the cabbage. Remove the meat and add the cabbage to the broth.
  5. Add the fried cabbage to the broth. Cut the meat and throw it into the pan. Add a glass of brine.

With bell pepper

Cabbage soup with bell pepper is not suitable for everyone, as it has a special taste that many people do not like. However, lovers of bell peppers will definitely appreciate this dish.

  • beef on the bone or without – 500 g;
  • red cabbage – 400 g;
  • bell pepper – 3 pcs.;
  • potatoes – 4 pcs.;
  • onions – 1 pc.;
  • fresh tomatoes – 3 pcs.;
  • greens, bay leaf, salt and pepper to taste.

How to cook:

  1. Let the meat broth simmer. Remove the foam from time to time with a slotted spoon.
  2. When the broth is ready, remove the meat. Cool and cut.
  3. Place shredded red cabbage and potatoes, cut into strips or cubes, into the pan.
  4. Add salt to the cabbage soup and reduce heat after the water boils.
  5. Add bell peppers cut into half rings to the pan.
  6. Remove the skin from the tomatoes and puree them.

  • chicken breast – 500 g;
  • potatoes – 5 pcs.;
  • red cabbage – 400 g;
  • tomatoes – 5 pcs.;
  • carrots – 1 pc.;
  • onion – 1 large head;
  • garlic – 3 cloves;
  • salt, spices to taste.

How to cook:

  1. Cook chicken breast broth.
  2. Chop all the vegetables. First add the potatoes to the pan, and then, when they are half cooked, add the cabbage. Add salt after boiling.
  3. Make a fry of onions and carrots. Send to cabbage soup.
  4. Cut the tomatoes into cubes, fry in the same pan and add to the rest of the vegetables.
  5. Cook the first dish for another 10 minutes, then add the garlic. Turn off the heat and let the soup steep for at least 15 minutes.

  • a glass of milk;

  1. Beat the egg and mix with milk (1:1 ratio).
  2. Bake or boil potatoes, peel, chop in a blender or masher.
  3. Chop the cabbage (remember the 1:1 ratio).
  4. Grate the garlic until a paste forms.
  5. Stir with potatoes, add garlic, pour milk over egg.
  6. It's time to add salt and spices.
  7. Add flour to the resulting consistency.
  8. Place the dough into a baking pan. The dish should be in the oven for 20 minutes.
  9. Once the dish is ready, top it with parsley leaves.

Stewed as a side dish

Even if some people know how to make coleslaw, they still don't understand what can be made with purple cabbage other than cold appetizers. And like cabbage cabbage, it can be stewed. This lilac cabbage will turn out very sweet and aromatic. To give it a special taste, you can add vinegar, cane sugar or berry jelly. Cinnamon, dill seeds, nutmeg and many more are suitable as spices.

To create red stew, it is convenient to take 1 head of cabbage:

  • 1 apple and 1 red onion;
  • 50 g butter;
  • three tablespoons of cane sugar;
  • 150 ml balsamic vinegar;
  • cranberry jelly;
  • cinnamon, cloves and nutmeg.

Cut the vegetable at your discretion, cut the onion into narrow semicircles. Cut the apple into 4 parts, remove the core, then cut into cubes. Fry the onion in a deep frying pan in oil, add spices and fry everything together for another 2-3 minutes. The cabbage itself, pieces of apples, vinegar and sugar are added later.

Czech stew

The recipe is so popular and the dish is so famous that the Czechs specially came up with many variations in order to be at least a little different from their competitors. But the main ingredients are few.

  1. The onion should be peeled and cut into narrow rings, chop the vegetable (proportion: one head of cabbage, two onions).
  2. Fry onion rings. You can fry them in the pan right away because right after frying the cabbage should be there too. Frying time is determined depending on the volume of the mixture. There should be up to half the volume left.
  3. Add spices. And here everything depends only on the taste of the hostess. You can add cumin, chopped nuts, prunes, raisins, lemon juice or a wide variety of seasonings. A more standard recipe is when at this stage a grated apple sprinkled with sugar is added to the cabbage.
  4. After this, add water to the mixture and cook for another 10-15 minutes. The stew is served hot or cold.

Pour water into the pan to about 2/3 of its volume. Bring to a boil, place chicken legs in it and reduce heat to almost low. Cook the broth for 1-1.5 hours. periodically removing the foam. The broth does not have to be chicken broth - you can prepare, for example, beef. At this time, prepare the remaining ingredients. Shred the cabbage. Peel and cut 2 medium potatoes into cubes. Finely chop the onion and carrots (as you like) and fry in sunflower oil. And now a life hack: to prevent the cabbage soup from being blue, you need to add a tomato and tomato paste to the soup. Carrots and tomato ingredients will adjust the color of the dish to a more familiar color. When the broth is ready, remove the chicken from it, add the cabbage and potatoes and cook them in the broth for 15-20 minutes. After the previous ingredients are ready, add frying, return the shredded chicken, salt and pepper, throw in a bay leaf and finely chopped herbs. Serve with sour cream.
