  • Beetroot - 100-150 grams;
  • Cheese cheese - 20 grams;
  • Sugar - 1 teaspoon;

  • Carrots - 1 piece;
  • Kefir - 3 tbsp. spoons;
  • Egg - 1 piece;
  • Vegetable oil - 3 tbsp. spoons;
  • Garlic - 1-2 cloves;
  • Salt, spices - To taste.

How to cook “Pies with beets”

Boil the beets in salted water, peel and grate and place in a frying pan. Add butter, salt and sugar there. When the sugar is completely dissolved, remove the pan from the heat. Grind the cheese with your hands or a fork and add to the beets. Boil potatoes and carrots. Grate the vegetables, beat in the egg and mix. Add kefir, vegetable oil, flour, salt, sugar and soda to the vegetables with the egg. Knead into a homogeneous dough. Divide the resulting dough into 8-10 parts, spread each of them into a flat cake 0.5 cm thick. Place the beetroot filling in the middle of the flat cake, pinch the edges, forming a pie. Fry the pies in a frying pan heated with oil until cooked on both sides.

Thanks to the dough, which includes potatoes, the pies turn out crispy with a golden crust, which allows the filling to remain juicy.

Pie with berry and beet filling

Ingredients for “Pie with berry-beetroot filling”:

  • Yeast-free puff pastry - 1 pack;

Dough:

  • Sour cream - 2 tbsp. l.
  • Vegetable oil - 1 tbsp. l.

  • Baking powder - 1 tsp.
  • Wheat flour / Flour - 7 tbsp. l.
  • Salt (pinch).
  • Chicken egg - 1 pc.
  • Quail egg (for greasing) - 1 pc.

Filling:

  • Beetroot (this is one rather large beetroot) - 300 g.
  • Raisins - 100 g.
  • Sugar - 1 tbsp. l.
  • Sour cream - 2 tbsp. l.
  • Cardamom (pinch).

Recipe for “Sweet pies with beetroot filling”:

So, the filling. Boil the beets or, even better, bake until tender. Cool, peel, grate on a coarse grater.

Wash the raisins. I had a large red one, I cut it smaller.

Place the beets and raisins in a thick-bottomed saucepan or frying pan, sprinkle with sugar, add sour cream and simmer over low heat for 10-15 minutes. At the end of the stew I sprinkled more cardamom. The filling behaves perfectly and does not leak at all.

I decided to make the dough with sour cream, since the package of sour cream was already opened :). Grind sour cream, vegetable oil, egg with sugar.

Add flour mixed with salt and baking powder, knead into a soft dough. And put it in the refrigerator while the filling cools.

At the right time, heat the oven to 200 degrees. Divide the dough into small pieces.

Roll each into a circle, put in the filling, sparingly (about a tablespoon), pinch as you like, leaving a small hole.

I don't have any filling left, everything is calculated exactly :). There were 11 pieces of pie crusts.

They can be greased with an egg (I took a quail egg, a chicken egg would have been plenty, but a quail one was just right) or with milk. And place in the oven for 20-25 minutes until slightly browned.

For the filling you need beets and sugar to taste and a little vegetable oil.

I usually make the filling in the evening. Chop the beets on a medium grater or in a food processor.

Pour some vegetable oil into the pan and add beets and sugar.

Simmer for 20 minutes until soft.

For the test we will need these products.

Let's mix all the ingredients and knead the dough, I'm in the bread machine.

After 1.5 hours my dough is ready.

Pinch off small pieces of dough and knead the dough with your hands into flat cakes.

We spread the filling and pinch the edges of the pies.

Fry in hot oil, seam side down first.

You can also prepare a beetroot side dish (this is not very common here, but it’s still very tasty). For it you need to take one large beet, medium-sized carrot, one onion, a couple of tablespoons of ketchup, add salt and black pepper to taste, a bunch of herbs (to your taste), a couple of cloves of garlic, vegetable oil (for frying). Let's start cooking - finely chop the onion and fry it until golden brown in a preheated frying pan with oil. Add carrots to it and fry further. Then add grated beets. Take half a glass of water, add salt, pepper and ketchup, mix well and add to the pan, begin to simmer under the lid, stirring occasionally. Once cooked, sprinkle with finely chopped herbs and add garlic passed through a press. Our side dish is ready.

Filling for pies: what they are.

Thanks to the skills and efforts of the housewives, there are a huge variety of fillings. Let's look at the most delicious and unusual ones.

1. From raw meat (beef, pork...) - fry the meat minced in a frying pan, and then grind it through the meat grinder again. Separately, fry the onion, hard-boil the eggs and cut them. Mix everything, add salt and pepper;

4. From the liver with buckwheat porridge - rinse the liver (veal, lamb, pork) peeled from films in cold water, fry in oil along with onions. Then finely chop or mince, add salt and pepper. Add pre-boiled eggs and buckwheat porridge to the liver;

5. From fish – salt and pepper the fish pulp and fry in oil. Add fried onions and herbs (dill). You can add a boiled egg or boiled rice;

6. From rice with eggs - rinse the cooked rice, add chopped hard-boiled eggs, butter, salt, dill. This filling can also be made from buckwheat;

If the mushrooms are fresh, then they must first be boiled, then cut and fried with butter in a frying pan. Add sour cream, fried onions and simmer for 15 minutes. Then add finely chopped herbs and cool.

If the mushrooms are dried, then they also need to be boiled, then fry them for 3 minutes and mix with fried onions, chopped finely boiled egg and rice;

  • 3 cups pre-sifted flour,

  • 3 large eggs,

  • 220 grams of fresh carrots,

Soak raisins and cranberries in boiling water for 5 minutes. Drain, rinse and dry on a paper towel.

Knead into a smooth dough.

Wrap in cling film and refrigerate for 30 minutes.
