To diversify today’s post, I made these curd delicacies in the form of balls. You can also call this dessert cottage cheese donuts. But a completely different article will be devoted to donuts. Probably, it’s just that whoever is used to it calls this sweet pastry that way. For me, cottage cheese donuts are the cousins ​​of donuts.

The ingredients are very simple and are always on hand, so frying this dessert is a pleasure. There is no need to invent and make a huge list of products.

We will need:

  • egg – 1 pc.
  • flour - approximately 1 tbsp.
  • cottage cheese - 150 g
  • sugar – 1 tbsp;
  • soda – 1 tsp (and vinegar to repay)
  • powdered sugar

Cooking method:

1. Take a special dish in which you knead the dough. Add cottage cheese, egg and sugar to it. Using a fork, mash the curd until it has an even consistency so that there are no lumps or balls.

2. Take baking soda and vinegar. Please note this is the first type in which we must quench the soda, because neither sour cream nor kefir is used here, which means that if the soda is not quenched in vinegar, the finished flour product will have an unpleasant taste and taste like soda. Quench the soda in vinegar.

3. Add slaked soda to the curd mixture. Add more flour and knead the dough. The dough should not stick to your hands. It should turn out soft and tender.

4. Make curd rings from the dough.

5. Fry cottage cheese rings in a hot frying pan with vegetable oil on both sides.

Recently, a friend of mine returned from St. Petersburg and boasted that she ate buns there that she had never tried anywhere else. As it turned out, she was in that very cafe on Pyshechnaya on Zhelubova Street, now it is actually called Bolshaya Konyushennaya Street.

Therefore, when I was writing this note for you, the idea came to me to publish Leningrad (St. Petersburg) buns in this article. I hope you don't mind?! This option will be GOST, i.e. according to GOST.

This option is simple, but it takes a certain period of time, because the dough is yeast, it must stand. So, how to prepare Leningrad pampushki at home?

We will need:

  • first grade flour - 270 g
  • yeast - 8 g
  • salt - 1 tsp
  • sugar - 3 tbsp
  • water -190 g (according to GOST, for our Russian flour, 155 g is required)
  • egg - 1 pc.
  • margarine – 15 g

Cooking method:

1. Add hot water (50 g) to the margarine and it will melt on its own. Add salt and sugar, stir.

2. Pour one packet of dry yeast into a glass and pour in warm water (140 g). Wait a little, about 10 minutes, so that they become a cap in the glass. Pour the resulting liquid into margarine.

3. Add an egg to the mixture. Stir.

4. Now add flour to all this, mix thoroughly. You will get a good elastic dough. Place the dough in a bowl in a warm place for 4 hours, do not forget to cover it with film or a towel.

5. After the time has passed, roll out the dough onto the table. Knead the dough well on the table. And then make little buns out of it. And leave these bells for another 20-30 minutes so that they rise.

6. Make any shape from kolobok-balls, for example in the form of rings.

7. Fry the buns in a frying pan with vegetable oil on both sides until brown. And then sprinkle the finished delicacies with powdered sugar.

Delicious sweet sour cream donuts can be prepared without adding eggs - this will not spoil the baked goods, but will help preserve their taste for a long time. Grind a glass of sugar and 4 yolks until white (you can use a blender), add a glass of corn or potato starch, 200 grams of softened butter, 4-5 full tablespoons of fat sour cream, add half a teaspoon of soda to it, so as not to use vinegar for slaking, then lightly add salt and stir. Knead the dough with two cups of sifted flour. Roll out a centimeter-thick layer on a floured table, cut out or cut out the cookies with a knife. Sprinkle with cinnamon sugar and chopped walnuts.   3. The resulting dough is rolled out into a layer 1 cm thick (less possible). We take any mold (star, circle, square) and cut out future donuts.
  4. Place dough pieces into a heated frying pan with oil. The donuts with sour cream are fried instantly. At the same time, they swell, acquiring volume. When the stars or circles of dough are covered with a golden brown crust on both sides, they should be transferred from the pan to paper towels. Excess fat will drain off. Making flavorful crumpets is easy.

  • 450 g flour;
  • 1 tbsp. fat kefir;
  • 1 tbsp. l. sour cream;
  • 1 egg;
  • 2 tbsp. l. vegetable oil;
  • 1 tsp. soda;
  • ½ tsp. salt;
  • 6 tbsp. l. Sahara;
  • vanillin;
  • lemon zest.

To make the recipe a success, prepare two containers for mixing the ingredients.

  1. In one bowl, mix kefir, sour cream and soda. Leave for 10 minutes.
  2. In another bowl, beat together the egg, sugar, salt and butter.
  3. Mix ingredients from two containers together.
  4. Gradually add flour pre-mixed with lemon zest. It is advisable to add it gradually, then you can avoid lumps. Do not knead the dough for a long time, it should turn out to be a liquid consistency - this will ensure airiness.
  5. You need to prepare the surface for forming products - oil not only the table, but also your hands. Then lightly dust the table with flour and place the dough in the shape of a ball - this will make it easier to roll out. The required thickness of the cake is up to 1 cm.
  6. Products are extruded using a mold.
  7. Fry the crumpets in a preheated frying pan over moderate heat until golden brown.

It’s easy to prepare the products; the ingredients can always be found in the kitchen. And to make the donuts tastier, they are usually served with jam, cream, icing, caramel and fruit.

Fresh, on water and without adding eggs

This is the simplest of all possible ways to prepare crumpets at home:

  • 1 tbsp. flour;
  • 1 tbsp. water;
  • sunflower oil;

  • 1 egg;
  • 2 tbsp. spoons of refined sunflower oil;
  • 4 tbsp. spoons of sugar;
  • 1/5 teaspoon of soda;
  • 2-3 g salt.

To prepare airy crumpets in the oven, you need to mix all the ingredients in the correct order:

  1. In a container, mix the egg with salt and sugar.
  2. Add sour cream.
  3. Alternately add and mix soda and semolina - this will add softness and volume to the donuts during baking. You need to make sure that there are no lumps of semolina left in the dough.
  4. Before adding cottage cheese to the dough, you need to grind it through a sieve - this will make it airy and homogeneous.
  5. Add sunflower oil and stir.
  6. Add flour little by little. If the sour cream turns out to be liquid, more flour may be needed to obtain the required consistency. But you need to add little by little - this will help not make the dough “clogged.” You can understand its readiness if it stops sticking to your hand.
  7. Then roll out the dough with a rolling pin and squeeze out donuts with a mold. Spread parchment paper on a baking sheet and place them at 2 cm distances so that they have room to grow.
  8. Be sure to bake in a hot oven at 180 degrees for 20 minutes.

No yeast in the oven

The usual option for preparing sour cream donuts involves frying the dough pieces in a sufficient amount of hot oil, but donuts made with sour cream in the oven are no less tasty and fluffy. The dessert recipe is very simple: you only need a couple of eggs, a glass of sour cream, a little sugar, soda and flour - and you can enjoy fragrant fluffy cookies with an appetizing golden brown crust, but tender and soft inside.

Ingredients:

  • chicken eggs – 2 pcs.;
  • sour cream – 180 ml;
  • sugar – 6.5 tbsp;
  • soda – 2/3 tsp;
  • salt – 1 chip;
  • flour - 3 tbsp.

Cooking method:

  • Beat one egg and the white of the second into a deep bowl, leaving the yolk for greasing, add 5 tablespoons of sugar, salt, and shake with a fork.

Unleavened crumpets

So the kids and I set about making grandma’s donuts. Dad, naturally, didn’t know the recipe, but we asked my grandmother, who also bakes them sometimes, only in an electric oven.

I will disappoint those who like precise recipes: grandma’s crumpets are prepared almost “by eye.” We took a glass of flour, poured it into a cup in a heap, broke 2 eggs into it, poured a glass of sour cream, half a glass of sugar, chopped a third of a stick of butter (you could also use margarine). Baba Nastya, as it turned out, even added lard (!) or ghee instead of butter. You can do without fats entirely, but with them the crumpets will be more crumbly.

Knead all this thoroughly, and then add flour mixed with soda (you need soda “on the tip of a knife”) - enough to make a stiff dough. You can add sugar at this stage if it is not sweet enough.

This dough can be rolled out and cut into circles using a glass, but we did it according to grandma’s method - we made balls from pieces of dough and flattened them.

Then each cake needs to be poked with a fork or cut with a knife.

Place the donuts in an oven preheated to 200 degrees for 25 minutes. In the meantime, while they are preparing, here are a few more facts about the Russian stove that I personally did not know.

Donuts and crumpets are one of my family's favorite treats. I often cook crumpets and often experiment with recipes. I want to share a recipe for crumpets with sour cream dough...

Kneading the dough can be done by hand or using a bread machine. The donuts turn out very airy and tender. They remain soft for a long time and do not fall off after cooling. Such donuts will delight your family and friends. Try them and I'm sure you'll like them.

I kneaded the dough in a bread machine. To do this, you need to melt the butter and cool it slightly. Place sour cream in a bread machine bucket, add eggs and melted butter. Add sugar. If you like your donuts sweeter, you can increase the amount of sugar.

Then add flour, salt and yeast. Setting the “Kneading dough” mode takes me 1 hour 30 minutes.

If you prepare the dough by hand, you need to dilute the yeast with 50 ml of warm water and leave for 10 minutes until bubbles appear on the surface of the water. Place 300 g of sour cream in a deep bowl, add eggs, melted margarine, suitable yeast and sugar. Then add flour and knead into a soft and tender dough that does not stick to your hands.

Leave the dough in the bowl, cover with a towel. Place the bowl with the dough in a warm place for 1 hour 30 minutes.

The dough will increase in volume two to three times.

Place the finished dough on a silicone mat or table dusted with flour. Knead the dough well. Roll out the dough with a rolling pin into a layer, not thin, about 1-1.5 cm thick.

Give shape to our donuts. Here you can simply cut out circles, for example, with a glass or shot glass. You can make stars or flowers using cookie cutters.

I cut out circles with a thin glass, and then used a plastic bottle cap to cut out the core. Leave the donuts on the table for 30-40 minutes, covering them with a towel.

Pour vegetable oil into a frying container and heat well. You can fry crumpets in a deep frying pan or saucepan, and, of course, in a deep fryer. Carefully lower the dough into the hot oil.

Fry until golden brown. Carefully remove the finished crumpets with a slotted spoon and place on a paper towel to remove excess oil.

Delicious tender crumpets with sour cream are ready. When serving, sprinkle with powdered sugar. Delight your family and friends with fresh baked goods.

With sugar and sour cream

  • salt – 2/3 tsp;
  • sugar – 135 g;
  • sour cream – 115 g;
  • vegetable oil – 2.5 tbsp;
  • flour - 3 tbsp.

Cooking method:

  • Heat the milk to a temperature of 40 degrees, dissolve the yeast in it.
  • Add salt, sugar, egg, vegetable oil.
  • Add flour little by little and knead into a soft dough.
  • Cover with a towel and place in a warm place until it increases in volume by 2.5-3 times.
  • Divide the dough ball into balls, roll each into a flat cake.
  • Heat vegetable oil in a deep frying pan, lower the pieces, and fry until golden brown on both sides.
  • Place the hot flatbreads on a plate, pour over sour cream and sprinkle generously with sugar.

Recipes for making sour cream donuts

If you want to try crumpets with sour cream fried in a frying pan (recipe with photo) like grandma’s, then you will need the following ingredients for the dish:

  • - 2 chicken eggs;
  • - 260 ml kefir;
  • - 1 tbsp. l. sour cream;
  • - 470 g wheat flour;
  • - 1 tsp. baking soda;
  • - 6–10 tbsp. l. (to taste) granulated sugar;
  • - 2 tbsp. l. lemon zest and vegetable oil (about 150 g of it will be additionally needed for frying);
  • - a pinch of salt and vanillin.

First, kefir, soda and sour cream are mixed. Then beat the eggs separately with granulated sugar, salt and vanilla. Both resulting masses are mixed in one container. Flour and zest are added to it. Everything is thoroughly mixed. The resulting dough is rolled into small balls and kneaded into a thick layer. Then small circles are squeezed out with a glass or saucer.

The rest of the dough is removed, rolled into a ball and layer again, and the preparation procedure continues. When this process is completed, the edges of the dough circles can be slightly cut or decorated in the form of drawings. 100 ml of vegetable oil is heated in a frying pan and a batch of preparations is laid out. The donuts are fried over low heat, 2 minutes on each side, until a beautiful blush appears. To rid them of excess fat, lay them out on a towel or paper.

Cheese and sour cream donuts

The donuts turn out even more tasty and satisfying if you use only yolks from eggs, and add cheese in addition to the classic set of ingredients. It is selected from any durum varieties.

To prepare you will need:

  • - 100 g. sour cream;
  • - 2 egg yolks;
  • - 450 g flour;
  • - 250 g margarine;
  • - 100 g coarsely grated cheese;
  • - 10 g yeast;
  • - salt to taste.

All components are combined in one container and mixed thoroughly. Then the dough is rolled out into a layer. The rest of the cooking process is the same as in the above recipe.

Donuts “for adults”

Donuts can be prepared even with a small amount of alcoholic beverages. However, this dish can only be consumed by adults.

It will require:

  • - 2 chicken eggs;
  • - 5 tbsp. l. sour cream;
  • - 2 tsp. vanilla;
  • - 1 tbsp. l. cognac (brandy, liqueur);
  • - 4 tbsp. l. granulated sugar;
  • - 350 g flour;
  • - a pinch of soda and 0.5 tsp. baking soda.

First, eggs and salt are beaten with sugar and vanilla. Cognac, sour cream and soda are mixed separately. Then both masses are mixed, flour is added to the container and the dough is kneaded. A thick layer is rolled out and the blanks are squeezed out with an inverted glass. Oil is poured into the frying pan and crumpets are laid out. Fry on both sides until golden brown (about 2-3 minutes).

You can prepare fried crumpets with sour cream according to different recipes.

Cottage cheese, baking powder, cinnamon, raisins, and nuts are added to the above ingredients. You can even make donuts from potatoes. The dough is made lean or yeast - all depending on individual preferences. Finished products are usually sprinkled with powdered sugar. The method of cooking in a frying pan remains the same in any recipe.

Sour cream and brine crumpets

  5. The dough needs to be divided into small balls - future donuts. Each ball must be rolled out with a rolling pin so that the thickness of the dough is about 1 - 2.5 cm.
  6. Preparing the dish in a frying pan is very simple - fry the crumpet on each side in heated oil until golden brown, then remove excess oil with paper towels.

  7. You need to bake the donuts on baking paper or a silicone sheet at a temperature of 180 - 200 °C. First you need to make several holes in the dough so that the donut “breathes”. You need to bake the dish for about 20 minutes. - time depends on oven power. To give the finished dish a more aesthetic appearance, you can brush the dough with whipped yolks before baking.
