What are breakfasts like? Abundant if they are after the holidays. Meager, if in a hurry. And also my mother’s, when it seems tasty, but usually and seemingly appetizing, but predictable. A separate type of classification for my grandchildren is grandma’s breakfast. It can be absolutely anything, because its main feature is freedom. It means that your parents allowed you to go to the village, that the holidays or just a weekend have arrived, that there is a whole day of adventure and communication with friends ahead.

My main task in all this pleasant confusion is to set the right mood in the morning. Today the grandchildren will have macaroni with eggs and cheese on their table. This dish is traditional in my house in the morning, although it changes over time. It all started with boiled “spider web”, after a while grated eggs were added to it. Then began a period of experimentation with cheese and pasta.

Now we are in the era of fusilli and parmesan. Of course, I don’t pretend to cook traditional Italian pasta and I don’t spin it around knitting needles at night, as was the case a couple of centuries ago. My grandchildren bring spirals from the city, and my role is to serve them, cooked, to the table.

Boil pasta in salted boiling water. The cooking time is indicated on the package. Following another Italian tradition, plates with slightly undercooked pasta are placed on the tablecloth, which is called “by the tooth.” The granddaughter is watching this closely. The fact is that in the digested state, starch is transformed into an easily digestible form. But such a product is not a gift for those who control their waist and hips.

Parmesan is one of the hardest Italian cheeses. Of course, it seems to us that the domestic product is far from the original. Perhaps that is why the grandchildren are happy when their father, my son-in-law, is sent on a business trip to Spain. Children don't wait for dad to come home from work without cheese.

So, grate the Parmesan on a coarse grater. Although culinary specialists and aesthetes prefer to crumble it on the smallest notches of a grater, this approach has not caught on with us. Here, as in the old days, the mouth rejoices at a large piece.

Of course, I understand that washing hard spirals is a thing of the century before last. But I still rinse spaghetti, pasta and noodles. I wash off the excess and cool them: the grandchildren are already waiting at the table.

The eggs go into the pasta first. After stirring, the pasta takes on a fluffy and sunny appearance. The cheese is poured on top when the food is laid out on the plates.

A simple yet delicious pasta casserole with egg mixture is a hearty dish that's perfect as a full breakfast or a side dish. Baked pasta in an egg mixture holds its shape well. You can take the casserole with you for a snack and even eat it with your hands. You can use any pasta; this recipe uses regular pasta horns. The casserole can be prepared from standing pasta, thereby giving it a “second life.”

Ingredients:

  • pasta – 400 g;
  • butter – 50 g;
  • breadcrumbs – 30 g;
  • eggs – 7 pcs.;
  • salt - to taste.

Cooking method:

  1. Boil the pasta until half cooked in salted water.
  2. Beat the egg mixture with salt with a whisk or using a blender.
  3. Rinse the pasta, add a piece of butter, about 15 g.
  4. Place the pasta into the egg mixture and mix well.
  5. Grease a baking dish with 15 g of butter and sprinkle with a tablespoon of breadcrumbs.
  6. Place the dough in the mold, spread the remaining butter on top in small pieces, and sprinkle with the remaining breadcrumbs.
  7. Bake at 200°C for 20 minutes until golden brown.

Sometimes simple pasta can be made with a twist. For example, make a casserole in a frying pan. If the walls of the frying pan are thick enough, for example, it is made of cast iron, then cooking is a simple matter. The recipe is very simple and quick to prepare, so the housewives will love it.

Ingredients:

  • Pasta – 300 g
  • Cheese – 120 g
  • Egg – 1 pc.
  • Mayonnaise (sour cream) – 2-3 tbsp.
  • Salt, pepper - to taste

Cut the cheese into small pieces and grind in a blender.

Add egg, mayonnaise, salt and pepper. And we grind and beat everything well.

You should get a sauce with grains of cheese. If the cheese remains in large pieces, no problem. And this option is acceptable.

At this time, place a large deep frying pan on the fire. Pour 600 ml of water, add salt. When it heats up (does not boil, although this is not important) add 2 tbsp. vegetable oil and add pasta. Stir and cover the pan with a lid.

You can also cook them in a saucepan.

When there is almost no water left, pour in the cheese sauce. Stir and cover with a lid.

When the mass thickens, there is no need to stir. Just cover with a lid and let stand for another 5 minutes on low heat.

That's it, you can serve the hot casserole on the table. Or, wait until it cools down a little.
