Will need

  • Tomato paste – 3 tbsp. spoons
  • Onion – 1 pc.
  • carrots – 1 pc.
  • any greens - 1 bunch
  • Bay leaf
  • water or broth - 0.5 liters
  • flour – 2–3 tbsp. spoons
  • vegetable oil – 2 tbsp. spoons
  • salt, ground pepper - to taste

You can cook with tomato paste or use tomato juice, then you should reduce the amount of broth or water. In addition, the juice can be salted, so you need to taste the sauce when preparing it so as not to oversalt it.

This gravy belongs to dietary dishes; it is allowed to be used in children's food, starting from the age of 3, and in geriatric nutrition. Contraindications include gastrointestinal diseases during exacerbation.

How to cook

How to cook meat balls

  1. This time we decided not to use pork and additional fat in the minced meat. We limited ourselves to beef pulp. Beef meat balls turn out very well and do not require the addition of a noticeable amount of binder in the form of bread crumbs or egg whites. To give the meatballs an aroma and spicy taste, hot pepper and garlic were included in the minced meat, as well as sweet paprika and aromatic dry herbs.
  2. Beef, by the way, is also suitable for veal, cleaned of bones and membranes. It is better to use the shoulder or the back of the meat. Using a meat grinder, grind the meat into minced meat. Then pass the minced meat through the meat grinder again. Pluck all the leaves from the parsley sprigs and chop them finely with a knife, and discard the stems. Hot peppers and garlic - quantity as desired, peel and finely chop with a knife. Add everything to the minced meat. Add a little salt and pepper, add 0.5 tsp. dry sweet paprika and a mixture of aromatic herbs: savory, oregano, basil.
  3. Mix the minced meat thoroughly so that all the spices are distributed evenly. To ensure that the meat balls keep their shape during baking, you need to add a little egg white or bread crumbs to the minced meat. I usually add 1 tbsp. l. grated and sifted dry French baguette. By the way, to keep the minced meat in shape, you can additionally grind it with an immersion blender. The thinner structure of the minced meat holds itself together during heat treatment, tested on steamed chicken cutlets.
  4. Mix the minced meat very thoroughly with your hands and, cover with a saucer, place in the refrigerator while the tomato is prepared and the oven is preheated. It takes a little time for the bread crumbs to soften. By the way, instead of salt, you can pour 1 tbsp into the minced meat. l. soy sauce - it is salty enough and improves the overall taste.
  5. You need to make tomato puree from the tomatoes. If you are used to it, you can scald the tomatoes with boiling water and remove the skin, remove the seeds, then grind the pulp with a blender. It's quicker and easier to cut the tomatoes, remove the white parts and grind the tomatoes into a puree along with the seeds and skin. Then rub the puree through a sieve or mesh colander. Season the peeled tomato puree with salt and pepper. If desired, you can add a little sugar so that the meatballs are baked in a sweet and sour tomato sauce.
  6. You will need a small ceramic or glass baking dish. Lightly grease the bottom and sides of the mold with vegetable oil. With wet hands, divide the minced meat into 10-12 parts and roll the meat balls, slightly compacting the minced meat with your hands. Place all the meatballs in the mold so that there is a gap between the products. Using a brush, brush the minced meat with vegetable oil.
  7. Place the pan with meat balls in an oven preheated to 200-210 degrees for 15 minutes. It is necessary that the meat balls heat up and the surface begins to fry. The oil film heats up quickly and signs of browning appear quickly.
  8. In a small saucepan, heat all the tomato puree until it starts to boil. Pour the tomato into the meat balls in the mold, making sure to fill all the gaps so that the level of the tomato almost reaches the top of the mince balls. In principle, you don’t have to heat the tomato, but then it will take more time to cook.
  9. Place the pan with the meatballs back in the oven and bake for about 30 minutes. During this time, the sauce will begin to boil away and its volume will decrease. Meat balls baked in tomato sauce are guaranteed to be ready. It is worth controlling the heat treatment so that the sauce does not start to burn.
  10. While the meatballs are baking, prepare the side dish, if desired. We steamed the couscous in boiling water, adding olive oil, salt and some hot spices. Place the finished couscous along the edge of the plate so that there is a depression in the center. Place meat balls in the cavity - the number per serving depends on their size. Garnish the dish with parsley sprigs.
  11. Serve the beef balls in tomato with couscous while they are hot. A complete second meat course with a side dish. If meatballs are prepared for a holiday table, they can be served directly in the form in which they were baked, and the side dish and sliced ​​vegetables can be served separately.

Sour cream sauce

It is prepared in the same way as tomato, but sour cream is added instead of tomatoes. This gravy can also be baked in the oven and used with meatballs in any form.

Prepared according to this recipe, the sauce is considered dietary. Approved in children's and geriatric nutrition.

But there is a sauce similar to sour cream, but the taste is very different. It is served in branded Swedish furniture stores all over the world - this is a feature of branded manufacturers, and it is equally delicious everywhere.

If desired, you can create a very unusual dish from the balls. Stuff them with mushrooms. And to enhance the aroma of the champignons and make the balls very tender, pour mushroom sauce over them.

Ingredients:

  • 500 gr. minced pork;
  • 2 onions;
  • 1 egg;
  • 300 gr. champignons;
  • 100 ml. cream;
  • 50 gr. butter;
  • 3 tbsp. flour;
  • 100 gr. cheese;
  • salt.

Preparation:

  1. Chop the onion into small cubes. Divide in half. Place one half with the minced meat.
  2. Mushrooms (not all, leave 4-5 mushrooms for the sauce) also cut into small cubes, fry along with the remaining onion.
  3. Add a raw egg to the minced meat. Add some salt.
  4. Finely chop the remaining mushrooms. Fry with the addition of cream and butter.
  5. Add flour to the sauce. Add a little salt. Once the sauce thickens, remove it from the heat.
  6. Pinch off equal pieces from the minced meat.
  7. Spread cling film. Place a piece of minced meat on it. Press down to form a flat cake. Place the mushroom filling in the center. Lift the edges of the film so that the minced meat closes. Roll it into a ball.
  8. Place these balls on a baking sheet. Pour over mushroom sauce and sprinkle grated cheese on top.
