Peel one kilogram of potatoes. Cut the tubers in half, place in a saucepan and add water until it covers the contents. Add salt and cook until done. Then drain the liquid and mash the potatoes into a puree. In this case, you need to gradually add milk. One glass will be enough for this amount of potatoes.

Then add a little butter and beat the mass with a blender or mixer to obtain a smooth, smooth consistency. Place fish cutlets with mashed potatoes on a plate. Before serving, sprinkle with chopped herbs.

  4. Carefully clean out the core to form barrels.

  • 200 grams of champignons (fresh or canned);

  • 1 onion;
  • 150 ml cream;
  • 3 tbsp. spoons of olive or vegetable oil;
  • 2 tbsp. spoons of tomato paste;
  • 100 grams of cheese;
  • 2.5 cups or 650 ml of cold water;
  • spices.

Step by step recipe:

  • Sort out the buckwheat, rinse well several times under cold water;
  • put it in a saucepan, fill it with water;
  • place the dishes over high heat, add tomato paste and salt to the pan;
  • bring the water to a boil, turn the heat down;
  • Keep an eye on the contents of the pan; as soon as the water has almost boiled away, turn off the stove;
  • cover the pan with a lid and let the porridge calmly absorb the remaining water;
  • wash the onion, cut into medium cubes;
  • rinse the carrots, cut in the same way;
  • Place the prepared vegetables in a heated frying pan, sprinkle them with oil;
  • fry vegetables until fully cooked;
  • rinse the mushrooms well, cut off the wormholes, cut into cubes;
  • take a baking dish (glass, ceramic);
  • grease its bottom with oil;
  • add buckwheat porridge;
  • place fried vegetables on top of it;
  • the very last layer is mushrooms (they can be used either fresh or fried);
  • fill the future casserole with cream, add spices;
  • grate the cheese, sprinkle the mold on top;
  • put it in the oven for 40-45 minutes at 180°.

Take the finished casserole out of the oven and surprise your loved ones with a delicious, healthy dish.


Buckwheat casserole can be eaten as an independent dish or as an unusual side dish.

Green bean side dish

Wash the green beans, remove the stems and cut into small pieces. Boil water and cook the beans in it until almost done. Remove from water and leave to drain.

At this time, heat a frying pan and mix a little vegetable oil and butter in it. Place 2-3 cloves of garlic in hot oil. You can first press the garlic with the flat side of a knife, so it will impart more flavor and aroma to the oil.

  • 3-4 pcs. cloves of garlic.

Preparation:

  1. Wash the lemon thoroughly with a brush and dry.
  2. Using a fine grater or vegetable peeler, separate the citrus zest and place it in a bowl.
  3. We wash the greens, dry them and finely chop them with a knife.
  4. Peel the garlic cloves and put them under pressure.
  5. Mix these three ingredients and set aside.
  6. Wash the zucchini thoroughly. We cut off the rounded edges.
  7. Shred the zucchini into equal circles approximately 5 mm thick.
  8. Break the chicken eggs and add salt.
  9. Using a whisk or blender, beat the eggs until a fluffy mass of homogeneous consistency is formed.
  10. Heat refined sunflower oil in a frying pan.
  11. Dip the zucchini pieces in the egg mixture and fry until golden brown.
  12. Spread the previously prepared marinade onto the hot zucchini.

Buckwheat

Boil 1 cup of buckwheat porridge in 2.5 cups of water. When the liquid has completely evaporated, turn off the porridge and let it brew a little.

Next, you need to peel and finely chop the onions, carrots and celery. Place the vegetables in the pan and saute them a little.

While the vegetables are cooking, you need to prepare the mushrooms: peel and chop them. Any will do, but forest ones will be more fragrant. Mushrooms can be sautéed separately or left raw.

Grease a baking dish with butter, layer buckwheat porridge, vegetables, then mushrooms. Season everything with spices. Pour cream (half a glass) and sprinkle with grated hard cheese.

Bake for 40 minutes at 180 degrees. This side dish for fish cutlets should be served hot.

Potato porridge with mushrooms

Ideal if you take fresh porcini mushrooms (or dry ones, but soak them in milk for 3-4 hours). But you can use any others - honey mushrooms, russula, oyster mushrooms, champignons. All mushrooms, except white ones, must first be boiled.

Ingredients:

  • 0.5 kg of potatoes.
  • 0.5 kg of fresh or 250 g of dried mushrooms.
  • 100 g pork lard.
  • 2 onions.
  • 0.5 cups broth or water.
  • 3 tbsp. sour cream.

Preparation:

  1. Boil potatoes in their skins.
  2. Finely chop the mushrooms or mince them.
  3. Finely chop the bacon and render off the fat. Do not remove the cracklings.
  4. Chop the onion as finely as possible and fry in fat until transparent.
  5. Add chopped mushrooms (boil whole and then chop), fry for 10-15 minutes. Add sour cream.
