Flatbread according to grandma's recipes will come in handy for all occasions. Every person can say that he ate the most delicious dishes at his beloved grandmother's. She always tried to pamper her with something tasty, home-made. Flatbread, like grandma’s, is both an independent dish and the basis for sandwiches, a substitute for bread for soups.
Rye flatbreads according to grandma's recipe are prepared easily and quickly, the maximum cooking time is 1 hour. Does not require significant costs. But the whole family and guests will love their unsurpassed taste. To prepare them you need to take:
- 0.5 kg. rye flour;
- 1 tbsp. water;
- 1 chicken egg;
- 1 tsp each salt, soda, sugar;
- black pepper if desired.
First, you need to dissolve salt, sugar, and soda in a glass of warm water. Add the egg and beat well. To add an unusual taste, you can add ground black pepper.
Important: warm water will make the dough elastic and soft.
Add oatmeal in small portions, stirring continuously.
Tip: if you stir the dough for a long time, the finished baked goods will turn out hard.
Sprinkle the mixture with flour and leave to stand for 20 minutes. Roll out not very thinly and cut out circles with a mug. Place on a baking sheet with paper and place in a preheated oven at 200 degrees, keeping the plovers for about 15 minutes.
A little secret: before baking, pierce the pieces with a fork and cut the mesh with a knife.
Rye flatbreads in the oven according to grandma’s recipe can be eaten hot or cold, with cheese or sour cream.
Kefir flatbreads without filling (they turn out very fluffy)
I usually make these wonderful flatbreads instead of bread. They come out “fluffy”, porous, with an incredible crust on top. You can also serve them with sour cream or jam.
Ingredients for 7-8 pieces:
- wheat flour, premium – 1.5 cups;
- kefir of any fat content – 3/4 cup;
- chicken egg – 1 pc.;
- granulated sugar – 1 tsp;
- table salt, baking soda - half a teaspoon each;
- vinegar 9% – 0.5 tsp;
- Sunflower oil – 3 tbsp. l.
Step-by-step cooking method:
- Sift the flour. In a separate container, mix baking soda and vinegar.
- Pour kefir into the bowl for preparing the dough, break the egg, and mix. Add salt and sugar. Then pour a spoonful of oil and mix everything again.
- Add 3 tbsp. l. flour, pour in slaked soda. Continuing to mix, add the rest of the flour. The dough will come out soft, but quite tight. It needs to be allowed to stand for 10-15 minutes under the film.
- Sprinkle a little more flour on the table and on your hands and form the dough into a thick rope. Cut it into 7-8 pieces. Using a rolling pin, roll each piece into a thin cake. Prick all the pieces with a fork on one side.
- Pour 2 tbsp into a wide frying pan with a thick bottom. l. oil, heat up. Fry the tortillas over medium heat, placing them in 2-3 pieces. Fry the first side for a couple of minutes. Then turn it over to the other one. Cook for the same amount of time, covering with a lid.
Remove hot cakes from the pan immediately after cooking and brush with butter. This will make them even softer and tastier.
Option 5: Hearty potato cakes like grandma’s in the oven (with mushrooms and cheese)
Grandma will never lose anything. We have already tasted the brine flatbreads, but left a more complicated recipe for the “snack”. This time we are preparing flatbreads with filling, and using potatoes in the dough. This recipe will also work in case of planned cleaning of the refrigerator and other bins; the cheese may be dried out, the mashed potatoes may be yesterday’s, but grandma would always have mushrooms and mustard.
Ingredients:
- four potatoes;
- hard, salty cheese - one hundred grams or a little more;
- one raw and one boiled egg;
- 60 gr. mayonnaise;
- dried mushrooms – 50 gr.;
- 10 gr. Sahara;
- a spoonful of sour cream and the same amount of vegetable oil.
- a spoonful of mustard;
- baking powder;
- one and a half cups of flour.
How to cook
Boil the potatoes in salted water until tender. After straining the broth, mash the tubers into puree with a masher, without covering the bowl, and let the mixture cool.
Beat the egg in a small bowl with the addition of sugar and salt. Pour the mixture over the cooled potatoes. We also put a spoonful of mayonnaise, all the sour cream and mustard here. Add oil and stir until smooth.
Measure out the required amount of flour. After mixing with the ripper, knead the potato dough with your hands. Cover with cling film and leave the bowl on the table until desired time.
After sorting out the debris, soak the mushrooms in cool water for a quarter of an hour. After decanting the infusion, we replace it with fresh water, in which we place it on the switched-on burner. After boiling, skim off the foam and simmer over low heat until soft.
After straining the broth, let the mushrooms cool, cut into small slices and lightly fry in oil. Let cool.
Using a fine grater, grate cheese and boiled egg onto the mushrooms. Add the remaining mayonnaise and stir thoroughly.
Roll the rested potato dough into a sausage and cut it into pieces. Having placed it on the cut, press it with your palm so that the cake comes out no thicker than one and a half centimeters. Having moved the pieces onto an oiled baking sheet, make a recess in the center of each with a small glass or goblet, lightly pressing the dough with the bottom of the container.
Fill the blanks with mushroom filling and place the baking sheet in a hot oven. Bake potato cakes for half an hour.
Product Set
- Milk – 300 ml;
- Sugar – 1 tablespoon;
- Cheese – 100 grams;
- Dry paprika – 1 tablespoon;
- Olive oil – 3 tablespoons;
- Kefir – 150 grams;
- Flour – 3.5 cups;
- Salt – 1 teaspoon;
- Dry yeast – 1 tablespoon;
- Provençal herbs – 1 tablespoon.

Flatbread with a surprise
This dish has the name “Khychiny”, and if you have tried them before, now is the time to cook them at home. The fillings are different, depending on the nationality, but they are all just small culinary masterpieces.
It is worth trying meat and cheese, as well as potato ones. They are juicy and smell very appetizing. You can eat a large number of them in one sitting.
And the components are simple, as always:
- three hundred grams of sour milk or kefir;
- a teaspoon of salt;
- three glasses of flour;
- a pack of butter (margarine);
- 3 grams of salt.
Preparation:
- Knead this simple dough, then roll it out and bake in a frying pan for a couple of minutes until it has a nice crust.
- Don’t forget to brush each of the shortbreads with butter, let it absorb and cool. Bon appetit.
Turkish Bazlama flatbreads made from yeast-kefir dough
These simple flatbreads are hollow inside. By cutting this “pocket”, you can place any filling inside. This sandwich is much easier to eat than a regular one. Baked goods are stored for a long time, remaining soft and tender.
Ingredients for 10 servings:
- flour – 0.5 kg;
- dry (instant) yeast – 2 tsp;
- granulated sugar, salt - 0.5 tsp each;
- kefir, water - 1 cup each. (200 ml);
- olive or sunflower oil (deodorized) – 3 tbsp. l.
Cooking step by step:
- Pour water heated to 40°C into a large bowl and dissolve the yeast granules and sugar in it. Place in a warm place for 10-15 minutes to activate the yeast.
- When the dough is covered with a layer of foam, add kefir at room temperature. Stir everything well.
- Pour the sifted flour and salt into the bowl with the yeast mixture and begin kneading the dough. It should turn out quite sticky, and this is normal - you should not add more flour.
- The last ingredient is oil, you need to coat the dough on all sides, cover the container with a napkin and put it in a warm place for 50-60 minutes so that it ripens well and fits.
- Knead the fluffy risen dough with oiled hands and transfer to a floured work surface. It is convenient to cut cakes on a silicone mat. Divide the lump of dough into 10-12 pieces, roll them into disks 8-10 mm thick.
- These cakes need to be baked in a dry frying pan, that is, there is no need to add oil. Place the first piece and fry it for no more than 10 seconds. Turn over and fry for the same amount of time. Flip again and continue cooking on both sides in 10-second cycles.
- Transfer the finished baslama to a dish and add the next flatbread to the frying pan.
The flatbread will deflate quickly, but the layers will remain like pita bread.
Lenten flatbreads
Fragrant shortbreads take many of us back to childhood. To make them fluffy, our grandmothers added baking soda to them, but today, you can do without it and get wonderful cakes. It will take about 40 minutes to cook.
You will need:
- 600-700 g wheat flour;
- partial cup of water;
- salt to taste.
How to do it?
- Take the sifted flour and pour one-half of the particles into a container, then make a hole in the center with your hand and pour salted water into it. Gradually, gently knead, adding the second half little by little. As a result, you should have an elastic dough in your hands.
- Leave the latter under cling film for about thirty minutes. Cut into equal four pieces and roll each of them into circles. Heat a frying pan and fry the shortbreads until golden brown, about half a minute on each side.
Step by step recipe
- Let's start cooking with the dough, it should turn out fragrant and tasty, so you need to cook it, like bread, with soul and love. Since our cakes are made with kefir, we take it and lightly heat it together with milk. Any other fermented milk product will work perfectly here; the dough will also work well with sour cream. Mix sugar, dry yeast and salt in warm kefir and milk. Mix all this thoroughly.
- Next, add olive oil to the resulting kefir or sour cream mixture. And mix everything again.
- Since we have butter cakes with cheese, don’t forget about it. Grate the cheese on, preferably, a coarse grater. Then add it to our kefir dough and mix. If the flatbreads are baked in the oven, then we do not add cheese anywhere yet, since we will not have it as the internal content of the dough.
- After this, we begin to add flour, do it gradually, carefully kneading. It is best to sift the flour in advance. When all the flour is with all the ingredients, we begin to knead the dough. We do this carefully, without sparing, as if we were making bread. The kneaded dough should be left for about an hour to allow it to rise.
- After the time has passed, we return to the dough, take it and divide it into four parts. We roll out all the parts, as the recipe indicates, so that we get charming flatbreads with cheese. They should not be thick, 5 mm is enough.
- We will fry in a frying pan with margarine or sunflower oil. Here the choice is yours. By the way, many housewives do not fry with margarine or any other oil, but simply in a dry frying pan. This option is also good, but we will still grease our frying pan a little.
- We need to fry each side so that the puff pastries turn out rosy and with a very appetizing golden crust.
- If you decide to bake our flatbreads, then the dough should be divided not into four, but into two parts, which we also roll out and place on a greased baking sheet.
- Don’t forget about the prepared seasonings, which we sprinkle on our flatbreads during frying, and maybe even after. If we put the flatbreads in the oven, then before that we sprinkle with all the seasonings and the cheese that has already been grated and waiting in the wings.
- Bake in the oven for about 20 minutes at 180 degrees.
- When our delicacy is fried, we put it on a dish and invite everyone to the table to try your new culinary creation.
The recipe for such flatbreads has a lot of variations. Let's start with the dough, it can be made with sour cream or kefir, some make it with cottage cheese. We made flatbreads with yeast, but this does not mean that we can’t do without them; unleavened flatbreads are also very tasty and aromatic, which are also an excellent substitute for bread. The filling may also differ, we just made it with cheese, but you can also make it with an internal filling, for example, with herbs, or make flatbreads with cheese and herbs, with mushrooms on sour cream or with bacon, then you get a simply indescribable taste. This dish is not only tasty and aromatic, but also very satisfying.
The process of frying in a frying pan is, of course, much faster than in the oven, but many, concerned about their health, believe that fried flatbreads in a frying pan are harmful, but those baked in the oven can replace bread. But you can still pamper yourself. Therefore, an option is being considered when the flatbreads are deep-fried, that is, in a large amount of sunflower oil, which must be very hot.
As for replacement, everyone knows that bread has vitamin properties that are difficult to find in other products, so you shouldn’t completely give it up, and don’t replace it completely with fried flatbreads, although tasty, just supplement your diet with them.
Some housewives believe that there is a much simpler recipe than this; this is when such flatbreads are prepared only with flour and water, and not even with sour cream.
The finished flatbread can be topped with any sauce, such as garlic.
Also, the preparation of such flatbreads has its own small, but very important secrets. For example, frying them in butter gives the flatbreads tenderness and aroma. And the dish will have a splendor if sifted flour is used, that is, it is enriched with oxygen, and the result is voluminous baked goods. But herbs and various aromatic and spicy seasonings, garlic and herbs can not only be used as external decoration, but can be safely added to the dough itself, then it will acquire an extraordinary smell and taste. As for the yeast, the dry yeast used is in no way superior to the usual fresh yeast we are used to in terms of taste, so you can safely use them too. It’s just that dry yeast is easier for many people to use and add. And if you made unleavened dough, then it needs to rest for about 15 minutes after cooking so that the future dish turns out fluffy and tender.
This seemingly simple recipe can have so many cooking options and different nuances. Therefore, try, cook and choose which version of flatbreads you and your family will like best.

Mix kefir with soda, if the kefir is sour enough, then do not quench the soda. Add egg and vegetable oil.
Sift the flour and add to the liquid, knead into a soft dough (you may need a little more flour), the dough may stick to your hands quite a bit. Sprinkle with flour and cover with a towel. Leave to rest for 10 minutes.
Roll the dough into a rope and cut into 8-9 pieces. Sprinkle the pieces with flour and roll out the cakes as thick as your little finger, then leave to rest again for 2-3 minutes.
While the dough is resting, heat the vegetable oil in a frying pan. Fry on both sides and, covering with a lid, steam for a couple of minutes. Melt the butter. Recipe No. 6 Homemade flatbreads with yogurt
- Yogurt – 250 ml
- Egg – 1 pc.
- Flour – 300 grams
- Granulated sugar – 2 tbsp
- Salt – 0.5 tsp
- Soda – 0.5 tsp
Mix yogurt (preferably with a neutral taste without additives) with egg, sugar, salt and soda. Stir and gradually add flour, which has previously been sifted through a sieve. Knead the dough into a viscous dough (it does not flow from the spoon, but stretches). Pour into a heated frying pan and fry on both sides.
