Asparagus cabbage is becoming more and more popular in our country; people have already learned to cook so many dishes from it that they can fill the entire table.
A subspecies of Italian cauliflower, it can be cooked in many different ways: fried, steamed, boiled, cut into salads, but today we will try to figure out how to stew broccoli in a frying pan?
This activity does not belong to the category of complex culinary actions, however, cooking has its own characteristics, which we will consider in the recipes below.
Step-by-step recipe with photos
Take all the necessary ingredients to cook broccoli with sour cream in a frying pan. Peel the onion and garlic, wash together with the broccoli under running water.
Disassemble the broccoli into small florets, boil in slightly salted water for 3 minutes, rinse with ice water to preserve the bright color and all the vitamins, drain in a colander.
While the cabbage inflorescences are cooling in cold water, heat a little refined vegetable oil in a frying pan, fry the finely diced onion and chopped garlic in it until soft.
Add medium-fat sour cream, salt and pepper the sauce to taste, and bring to a boil.
Add broccoli florets to the sauce, mix thoroughly, and heat for a couple of minutes. If the sauce suddenly separates and becomes runny, you can add a little flour diluted in cold water to thicken it. Often at this stage a little lemon juice is added, but sour cream is already quite sour, so for me lemon juice is unnecessary.
Stir the broccoli into the sauce one last time and turn off the heat.

Cooking features
- Broccoli should be harvested before the florets turn yellow. Flowering cabbage is not suitable for consumption. Broccoli stems are dense, but you can eat them. Cabbage florets are usually cooked with a small portion of the stems.
- Broccoli is usually boiled before baking, otherwise it may remain too tough and crunchy.
- When preparing broccoli, they try to minimize the cooking time so that it retains maximum nutrients. When cooking, it must be immersed in already boiling water. Considering the fact that the cabbage will be baked, you only need to boil it until half cooked, which is enough for 5 minutes.
- You can bake not only fresh broccoli in sour cream, but also frozen. There is no need to defrost it before cooking.
- After boiling the broccoli, place it in cold water or rinse it under running ice water. Thanks to this, it will retain a bright shade.
- Broccoli goes well with garlic, onions, carrots, cauliflower, herbs, green peas and green beans. It can be baked in sour cream along with these products. It can also be supplemented with poultry and fish fillets.
- Dishes made from vegetables in sour cream with a cheese crust are especially tasty and appetizing. Also, sometimes cheese is mixed with sour cream, as a result of which it turns into a sauce that envelops the cabbage inflorescences and gives the dish an exquisite taste.
- You need to bake broccoli for 15-20 minutes at a temperature of 180-200 degrees. Sometimes it takes longer because snack foods sometimes require longer cooking times than broccoli. To obtain the expected result, it is advisable to follow the recommendations accompanying the specific recipe.
