Starch-based pancakes
Pancakes made with potato starch, although tender, resemble thin waffles - they are a little fragile and brittle around the edges (especially when they cool), so they are not suitable for stuffing! These pancakes are best served piping hot, greasing each pancake with butter! Serve these pancakes with Caramel sauce.
Preparation of the dish according to the recipe “Starched pancakes”:
Step 1 To prepare starch pancakes, we need potato starch and wheat flour, milk, sugar, chicken egg, refined sunflower oil, vanillin, soda, sifted together.
Step 2 Combine sugar, vanillin and egg in one bowl. Whisk until a homogeneous mixture is obtained.
Step 3 Add half of the entire dry mixture of potato starch and wheat flour.
Step 4 Mix.
Step 5 Add milk. Mix with a whisk.
Step 6 Add the remaining mixture of potato starch and flour. Mix again.

It turns out that starchy pancakes are the most suitable pancakes for adding all kinds of fillings to them. Starchy pancakes turn out thin and very tasty. Starch pancakes are very elastic (which makes them suitable for serving with filling) and are amazingly easy to bake. Here are several recipes for pancakes with added starch - some more, some less. Some are lacy and crispy, others are very “firm” and great with filling.
PANCAKES WITHOUT FLOUR
Recipe from Anna:
I want to share with you two wonderful flourless pancake recipes. I use these recipes all the time!!! The pancakes turn out delicious and very tender!!!
Pancakes without flour (with kefir): 3 eggs; 0.5 l. kefir; 4-5 tbsp. l. potato starch; 0.5 tsp soda; 2 tbsp. l. vegetable oil; sugar and salt to taste. Knead the dough from all ingredients. (Just put all the ingredients in one bowl and beat with a mixer). Fry the pancakes in the usual way, pouring a thin layer of batter into the pan on both sides. The dough needs to be stirred constantly, because... the starch gradually settles to the bottom! Pancakes without flour (with milk): milk - 0.5 l; eggs - 3 pieces; potato starch - 6 tbsp. spoon; vegetable oil - 3 tbsp. spoons; sugar - 1-2 tbsp. spoons; a pinch of salt. Combine all ingredients and beat until smooth with a mixer. The dough turns out liquid. Bake as usual))) Stir the dough constantly, because... the starch gradually settles to the bottom! These are my favorite pancake recipes!!! They always work out, and you can choose depending on what you have at home - milk or kefir))) Help yourself to your health!!! PS: in the photo there are pancakes with kefir))))

Pancakes made with starch without flour and water - they turn out thin with holes
This recipe is a real find for those losing weight and connoisseurs of dietary nutrition. Instead of wheat flour, oatmeal and flax seeds are used. It turns out low in calories, but without sacrificing taste.
Ingredients:
- 20 g corn starch;
- 50 g oatmeal;
- 1 tbsp. flax seed;
- 1 tsp sugar or substitute;
- 250 ml sparkling water;
- 1 tsp baking powder;
- 1 pinch of salt;
- 1 tbsp. sunflower oil;
- vanilla to taste.
How to make pancakes:
1. Place flaxseed, oatmeal, sugar, starch, baking powder, vanilla and salt into a blender bowl.
2. Pour in the oil and sparkling water. Beat with a blender until smooth.
If you are preparing the dough by hand, first grind the flax seeds and oatmeal in a coffee grinder.
3. Pour the finished dough into a bowl and leave on the table at room temperature for 15 minutes.
4. Heat the frying pan as much as possible and grease it with vegetable oil. Pour a portion of the dough and spread it over the bottom. If the dough does not spread well over the surface, add 2 tablespoons of water to it.
Fry the pancakes on both sides, lightly greasing the pan with oil each time. You will see how holes appear during baking, and a fabulous vanilla aroma begins to soar throughout the kitchen.
