Pancakes are one of the very common US dishes, also called American pancakes. You can cook them with water, sour milk and, of course, kefir. In general, on everything that can be used to cook our Russian products. The difference between them and their Russian counterparts is that they are much more fluffy and small in size - slightly larger than our pancakes. That is, they are like big pancakes, but with a pancake taste.

The dough for their preparation is mainly pancake dough, only much thicker. Their shape is round, the diameter is 12-14 cm. The thickness reaches a centimeter or even more. This makes it easy and simple to turn them over and remove them from the pan, provided, of course, that the dough is mixed correctly.

You need to bake fluffy pancakes in a frying pan with a thick bottom, or you can use a pancake maker with low sides. In such dishes, the products will turn out not only lush, but also ruddy and beautiful. You should not add berries and fruits to the dough when kneading. In the absence of experience, the products may burn, which of course will not make anyone happy.

You can serve ready-made pancakes with various fruits, berries, syrup, condensed milk, jam and chocolate. This is a great option for a snack or breakfast.

Pancakes with milk - a classic step-by-step recipe

Many will probably agree that any pancakes are a delicious and complete breakfast. Of course, unlike omelettes or scrambled eggs, they are a little more difficult to prepare, but the family always welcomes them with great enthusiasm. And who ever bothered with diversity?

Let's look at the most classic recipe.

Ingredients:

  • egg 2 pcs.
  • sugar 2-3 tbsp. l.
  • milk 1 glass
  • premium flour 1.5 cup (possibly a little more)
  • salt a pinch
  • baking powder 1 tsp.
  • sunflower oil 2 tbsp.
  • vanillin on the tip of a knife

Cooking method:

Let's prepare all the necessary ingredients so that we have everything at hand and don't forget anything during the cooking process.

First, mix all the dry products. Sift the flour so that it is enriched with oxygen. This should always be done, and then the baked goods would always be fluffy, and most importantly, tender and tasty.

Then add salt, sugar, baking powder, vanillin and mix so that the ingredients combine with each other.

In a separate bowl, mix the liquid ingredients: eggs, butter and milk. In this case, milk should be added in small parts. It is advisable that it be slightly warmed, or at least at room temperature. By the way, it is also advisable to remove eggs from the refrigerator in advance.

Products at room temperature or slightly warm interact better with each other, and the dough becomes more flexible and tender.

This means that the finished products will turn out more tender and tasty.

The next step is to combine both mixtures and mix everything thoroughly. To do this, you can use either a whisk or a mixer. The dough should be homogeneous, without lumps. The consistency should be a little thinner than that of pancakes.

Let the dough sit for a while so that all the ingredients disperse and the flour becomes more sticky.

Prepare a non-stick frying pan and heat it well over the fire. Pour about half a ladle of mixed dough onto the heated surface and wait for bubbles to appear. We immediately set the desired size, remembering that these are small and fluffy pancakes.

As soon as the bubbles cover the entire product and there is no batter left on it, turn it over. Fry on the other side for about 20-30 seconds. Both sides should turn out rosy and appetizing.

Watch the fire and the product itself. It should bake well and still have a nice color. During the baking process, adjust the intensity of the burner.

The finished product should be no thinner than 5-6 mm. and look plump and appetizing.

Ingredients:

  • egg 2 pcs.
  • kefir 2 cups
  • sugar 3 tbsp. l.
  • vegetable oil 2 tbsp. l.
  • soda 1 tsp.
  • vanillin on the tip of a knife
  • premium flour 2 cups
  • salt a pinch

Cooking method:

We will prepare all the products at once so that you don’t forget anything later. Eggs should be removed from the refrigerator in advance so that they are not cold.

Kefir should also be slightly warmed, slightly warmer than room temperature. You can warm it up in a water bath.

Using a whisk or mixer, beat the eggs with sugar until a fluffy foam forms.

Add warm kefir, vegetable oil and vanillin, mix thoroughly.

Sift the flour into a separate bowl, preferably several times, for better fluffiness of our dish. Immediately add soda to it, which can also be sifted, and mix. Gradually add flour to the liquid component of the dough, while constantly stirring the mass.

Next, pour the required size into a well-heated frying pan. At the same time, you can shake it slightly so that the pancake evens out a little. Bake over moderate heat and wait for bubbles to appear.

When the bubbles have already covered the entire upper surface, then turn it over.

By analogy, we do exactly the same with each pancake. Delicious, tender kefir pancakes are ready! They turned out beautiful, tender and airy. Serve them immediately to the table along with chocolate sauce, jam or jam. It’s so simple, but at the same time tasty and satisfying!

Cooking method:

Prepare a mixing bowl or bowl. Break eggs into it, add salt and sugar and beat until foamy using a mixer. This will significantly save your time.

Bananas should also be crushed to a puree; you should get an even, homogeneous mass without lumps. Use a blender to blend.

Let the dough stand for 15 minutes, then pour in the prepared vegetable oil. Using a whisk, beat the mixture until the oil circles disappear.

Let's start cooking. Pour the dough into a well-heated frying pan. Cook the pancakes over low heat until golden brown. Be sure to wait until the entire surface of our fluffy pancake is covered with bubbles.

Then turn it over and cook on the other side until done.

We do the same with the rest of the dough. Serve the finished pancakes with Nutella and fresh tea. Or with the product that you like most. And it happens that this product may be different for all family members.

Recipe for making fluffy little pancakes with sour cream

For breakfast, as a sweet snack or just with tea, pancakes are an ideal option. And the main thing is that there are so many cooking recipes that there is always plenty to choose from that is exactly the one you like most. I bring to your attention a recipe with sour cream.

Ingredients:

  • eggs 2 pcs.
  • sugar 3 tbsp. l.
  • sour cream 200 gr.
  • premium flour 200 gr.
  • butter 25 gr.
  • soda 0.5 tsp.
  • vanillin on the tip of a knife
  • salt a pinch

Cooking method:

In a deep bowl, mix all the bulk ingredients, namely flour, sugar and soda.

Add sour cream to the resulting mixture. Gently mix with a spoon, you should get a thick mass. Add a pinch of salt and stir as long as possible.

Beat the eggs together with vanilla using a mixer in a separate container.

Add the well-beaten product to the thick dough and mix gently with a whisk. Add a small piece of butter to the resulting mass. It is advisable that it be melted in advance.

The dough is ready, you can bake pancakes!

Place the required portion of dough on a preheated frying pan and wait for the bottom side to brown. Bubbles appear on top. When the entire product is covered with bubbles, it’s time to turn it over.

On the other hand, bake for a little less time. Grease the finished pancake with melted butter.

Prepare the remaining pancakes in the same order.

This recipe for sour milk is very easy to prepare, just like all the others. But the taste of the finished product is still slightly different.

Ingredients:

  • egg 2 pcs.
  • sugar 2 tbsp. l.
  • milk 200 ml.
  • premium flour 10 tbsp. l.
  • baking powder 1 tsp.
  • vanillin on the tip of a knife
  • vegetable oil 2 tbsp. l.

Cooking method:

So let's get started! First, combine eggs and sugar in a bowl. Using a mixer at high speed, beat the mixture. It should lighten and thicken a little.

Then pour sour milk and vegetable oil into the resulting mixture. Also beat with a mixer at medium speed until fluffy.

Sift the flour into a separate bowl and mix it with baking powder. Then add the dry ingredients to the liquid mixture and mix everything with a mixer at low speed.

Next, we gradually increase the speed and bring our dough to a homogeneous state. That's the whole process of preparing pancake dough with sour milk. As you can see, it mixes quickly and easily.

Let's start baking. Heat a frying pan over medium heat. When it is completely hot, turn down the heat. It should be about below average. Then pour in the dough and form neat products of the desired size.

Bake until golden brown. When you have achieved the desired blush, use a spatula to turn the pancake over to the other side. By analogy, we do the same with the rest of the dough.

How to cook American fluffy pancakes on water

As we already understood from today’s topic, there are many recipes for preparing this dish. But we did not consider one more recipe, namely pancakes made from dough in water. They taste completely different!

You have to try it to compare! There are many opinions that baked goods can only be tasty with kefir or milk. This is what those who have not eaten wonderful Lenten confectionery say. Let's start cooking.

Ingredients:

  • eggs 2 pcs.
  • premium flour 260 gr.
  • water 250 ml.
  • sunflower oil 2 tbsp. l.
  • baking powder 1 tsp.
  • sugar 2-3 tbsp.

Cooking method:

First of all, separate the yolks from the whites. Let's put the latter in the refrigerator for now to keep them chilled, then they will be easier to whip. Add water to the yolks; it should be at room temperature. Beat the water with the yolks with a regular whisk.

In a separate bowl, add baking powder to the flour and sift it all, preferably several times, so that our baked goods are airy. Then add flour to the yolks and mix with a spoon. Carefully, as if from the bottom up.

Add sunflower oil. Stir the dough thoroughly again; there is no need to beat it.

Which oil to use – refined or not, you choose for yourself, who likes which one better.

Take the chilled egg whites out of the refrigerator and beat until stiff peaks form. After 2-3 minutes. After whipping, add sugar and salt, and just mix with a whisk. Carefully fold the whipped whites into the dough. Gently fold them into the dough using a spoon. Everything is ready, let's start cooking.

Place 1 tbsp on a preheated, dry frying pan. spoonful of dough with a heap, level it into a thin flat cake. The fire should be moderate.

When the bottom surface is browned and the top is covered with bubbles, it’s time to turn it over! Prepare the remaining pancakes in the same order.
