How to cook “American pancakes”

1. Prepare ingredients for pancakes. I use 200 ml glasses.

2. Take a deep, convenient container for mixing products with a mixer. Pour milk into it, add vegetable oil, a pinch of salt, sugar and egg. Using a mixer at maximum speed, beat the mixture until foam forms, 5-7 minutes.

3. Add sifted flour and baking powder. Using a mixer, mix all ingredients until smooth, there should be no lumps.

4. The dough is ready; the consistency should not be as thick as for regular pancakes. Let's move on to frying.

5. Take a non-stick frying pan, heat it well and reduce the heat to low. Using a tablespoon, place the dough into a dry frying pan, forming circles. If you are confident in your frying pan, then grease it with a cotton swab dipped in oil or a piece of lard. This procedure needs to be done only before the first batch. As soon as large bubbles form on the surface, turn over and finish cooking on the other side. Pancakes are ready! Have fun!

Culinary battle: pancakes versus pancakes

About ten years ago, in the wake of fashion, pancakes appeared on the menu of Moscow establishments. Militant fighters for the purity of the Russian language were at first wary, and then began to make caustic and caustic remarks about the general fashion for meaningless Americanisms:

- What, the word “pancakes” no longer suits you? What other “pancakes”, what kind of disdainful attitude towards the Russian language?” – Dahl’s fans were indignant.

But they were wrong. I don’t deny the selfless love of Moscow restaurateurs for borrowed names, but pancakes and pancakes are still different dishes. And, to confuse you even more, I’ll add that both pancakes and pancakes are a completely different story with different recipes and methods of preparation.

Let's try to figure out exactly what variation of the well-known dish your family is used to preparing for breakfast. Who knows, maybe all your life you have been baking pancakes under the guise of pancakes?

It’s interesting that the history of the origin of, let’s say, pancakes can be traced back several centuries. This dish has been known in Rus', Ukraine and Belarus since around the sixteenth century. In the ancient Russian era, its name was also borrowed from the ancient Greek language: the word elaion, which translated into Russian means “oil” (and its derivative eladion - “in oil”) was only slightly changed. By the way, the modern recipe that we use today appeared only in the nineteenth century. Before this, pancakes could be made from semolina, and even from potatoes (yes, we understand and share your indignation). But the history of the appearance of the first pancakes in the United States is practically unknown. The only fact that has reached us is that the recipe was brought to the continent from the Old World by emigrants from Scotland and immediately took root in the new place. As for the name, pancake literally translates as “cake in a frying pan.”

Are you on a diet? Choose pancakes!

There are three main parameters, by comparing which you can easily distinguish American pancakes from Russian pancakes. – First of all, it’s thickness, size and consistency. Pancakes are smaller and thinner than pancakes, and the consistency of a pancake is more like a sponge cake, while pancakes are like a regular pancake.

– Secondly, this is the method of preparation. Pancakes are fried in a dry frying pan, and pancakes are fried using fat (oil). Therefore, pancakes, attention, girls! — they turn out to be less fatty and high in calories, and the pancakes will fit perfectly into the menu for those who want to purchase more appetizing forms.

In addition, thanks to the use of fat, the pancakes can be fried at a higher temperature. This is what makes the right pancakes slightly crispy, and their taste more caramel than neutral pancakes. – And finally, these are the features of preparing dough for each dish. The dough for pancakes should be yeast or with the addition of kefir, which gives them a slight sourness. The dough for pancakes is prepared without adding yeast, but whipped egg whites and baking powder are always added to it, thanks to which the pancakes turn out so fluffy, tender and denser, despite the fact that the consistency of the dough for them is thicker than for making pancakes.

Carefully take the dough from the edge with a spoon. Place in a frying pan and fry on both sides over medium heat. When bubbles begin to appear and burst on the surface, turn over to the other side and fry until cooked.

Pancakes are not just a diminutive name for pancakes. This is an independent dish that differs in recipe and even origin. The dough for it is kneaded with water or milk, it turns out liquid, and the pancakes themselves are thin and light. It is believed that this dish was invented by the French, and it is most suitable for dessert.

Truly French pancakes are called “crepes” - they have crispy edges, no holes, and melted butter and whipped egg whites are added to the dough. By the way, French chefs say that the dough for crepes must be kept in the refrigerator for at least 30 minutes - the better it cools, the tastier the crepes will be.

Pancakes are considered to be a Russian dish. The dough for them is kneaded with yeast, it turns out quite thick - about like sour cream. Real pancakes are considered a complete meal: they are high in calories, fluffy, plump and have a sour taste. It’s interesting that even baking pancakes and pancakes has different names: pancakes are fried, and pancakes are baked.

general information

The word is of English origin and literally means “cake baked in a frying pan” (English: “pan” - frying pan, “cake” - cake), a fluffy pancake that tastes like a sponge cake.
Pancakes are baked goods that are reminiscent of both pancakes and pancakes known in Russia: their size resembles pancakes, and their fluffiness resembles pancakes. Although they are still closer to pancakes: they are cooked in milk and baked in a completely dry frying pan.

It is unknown where and when this type of baking was invented. There is a version that the recipe was brought by Scottish emigrants from the Old World to Canada (at least in Canada, pancakes are the most popular and beloved recipe by many ).

Pancakes with lemonade

If everyone is used to dairy bases, then pancakes with lemonade are something new. They turn out airy, thin and with a very interesting aroma.

Required:

  • Milk – 1/2 cup;
  • Lemonade – 1/2 cup;
  • Flour – 1/2 cup;
  • Egg – 1 pc.;
  • Vegetable oil – 50 grams;
  • Sugar – 20 grams;
  • Salt – 1 pinch.

Beat the egg with sugar and salt until fluffy. Pour in milk and lemonade, add sifted flour. At the end, add vegetable oil to the dough and mix again. In a well-heated frying pan, fry thin pancakes on both sides until golden brown.

Ingredients

Pancake dough is often made with yeast or with the addition of baking powder or soda; it is usually made with fermented milk products - sour cream, kefir, yogurt, fermented baked milk. All ingredients are simply mixed and usually the dough is allowed to stand and rise in a warm place.

Classic pancakes are made with milk or water. Yeast and other additives for fluffiness are not required - they are replaced by whipped egg whites, which are carefully combined with the almost finished dough last. Having made the dough, they need to be baked immediately - if you leave them for a while, then you won’t be able to cook them so tasty and airy.

Additional ingredients for pancakes can include cottage cheese, sliced apples, and grated pumpkin. Their American version rarely has anything added to the dough. Popular exceptions include blueberries or blueberries, and banana puree.
