Pancakes made from flaxseed flour - 4 recipes for making flaxseed pancakes

Hello, dear readers of my blog! Today we have flaxseed flour pancakes on our agenda. This delicacy can be eaten even by those who are on a diet or adhere to PN. This flour, unlike wheat flour, does not contain gluten. This means that dishes made from it are easily digestible and do not disrupt the functioning of the digestive tract due to the absence of gluten in the product.

You can make thin, openwork ones, with many holes - just carefully turn them over in the frying pan. Or you can bake dense ones, these are even more convenient to stuff with different fillings. To prevent the dough from spreading when baking, add oatmeal or a little starch.

Pancakes made from ground flaxseed are simply delicious! Very tender, and the taste reminds me of cakes, although they don’t look very presentable. The treat is prepared quickly, and the dough can be made with water, milk or kefir. The calorie content of the dish is also pleasing. Depending on the recipe, of course, it changes, but even with the admixture of wheat flour it is only 135 kcal per 100 g. And if they are only made from ground flax and water, then they contain only 44.5 kcal.

How to make low calorie pancakes

How do diet pancakes differ from classic pancakes? During the baking process - nothing: they also need to be fried, but butter or fat cannot be used here, and the frying pan itself is not greased.

Professionals advise using non-stick models, or adding a little olive (odorless) oil directly into the dough. A dietary set of components for such baking will be - you can use healthy flour (i.e. not wheat), replace milk with another liquid, reduce the number of eggs and be sure to remove the main excess product - granulated sugar.

A couple of basic nuances of dietary pancakes:

  • In relation to baking, the word “dietary” is not synonymous with the word “harmless” - the calorie content of pancakes may be standard, but the degree of benefit to the body will increase due to changes in the quality of the ingredients.
  • Want to reduce the number of eggs without losing the elasticity of your pancake batter? Take a tablespoon of flaxseed and soak under boiling water for a quarter of an hour. The resulting jelly-like mass will replace beaten eggs.
  • The amount of sugar for diet pancakes should be minimal, since this is the most harmful component of the dough. An alternative is a spoonful of honey or a drop of stevia.
  • Diet products can be made if you take only the whites from eggs (this move is popular in fitness baking, i.e. without carbohydrates) - they have a low calorie content, are fat-free and are not dangerous for the figure.

When replacing milk with kefir, the structure of pancake dough changes towards increased density and some rubberiness. They turn out more fluffy than classic milk ones, but at the same time the taste becomes blander and may have a sour note.

In terms of calorie content, diet pancakes made with kefir are similar to dairy pancakes, and if you take a low-fat product, they are a little lighter. Similarly, you can cook with yogurt, fermented baked milk, snowball, bifidka, sourdough, drinking yogurt (meaning natural, without sweeteners), etc.

If classic pancakes scare you primarily because of fatty milk, you can replace them with water - pure or mineral. With the latter, they will become more airy and get a lot of bubbles when frying.

Pancakes made from flaxseed flour (the simplest recipes)

Especially necessary are those recipes that not only describe the process of preparing healthy food, but also do not require a lot of time.

Very often you want to please your household in the morning with something special and tasty. But there is not always a lot of free time for this. But a good breakfast is the key to a successful day.

One of the easiest ways to prepare pancakes, which definitely contain flaxseed flour, will take a little over an hour. But it does not include the continuous process of cooking, so you can devote time to other household chores.

Ingredients

  • 1 glass of curdled milk or kefir
  • One third of a small spoon of salt
  • 2 cups wheat flour
  • Be sure to flaxseed flour - half a glass
  • One third teaspoon of soda

Preparation

  1. Take a small container and pour a glass of yogurt or kefir into it. Then wheat and flaxseed flour are added, as well as salt and soda. All this is thoroughly mixed until smooth until you get a real dough. It must be left in a warm place for about an hour.
  2. When the dough has rested, divide it into parts and roll it into thin layers. Heat the frying pan thoroughly over low heat and add sunflower oil. Fry the finished round bases of future pancakes. As soon as they begin to brown on one side, immediately turn them over. The resulting dish will delight any gourmet with its unusual taste, and the breakfast will be unforgettable.

Benefits of flax flour

This product is obtained by grinding flax seeds.

The main advantage of flour over butter is the preservation of fiber in its composition. Plant fibers improve the functioning of the stomach, promote the removal of toxins, and cleanse the intestines. The use of flaxseed flour in pancakes can reduce cholesterol and insulin levels in the blood, normalizing blood pressure. In addition, flaxseed flour is lower in calories than wheat flour.

The rich vitamin composition (A, E, group B, F, PP) restores vitality after strength training in the gym or hard work. Calcium, magnesium, zinc, potassium, manganese, phosphorus and selenium improve the condition of hair, nails, facial skin and body.

The pancakes come out with a slightly specific taste; for some, it gives off nutty “notes.”

Like oil, flax flour should be introduced into the diet gradually, starting with minimal doses. The fact is that an overdose of flaxseed products can cause nausea, vomiting and diarrhea. In addition, dishes made from seeds, flour or with the addition of oil are prohibited in case of gallstone disease, since the laxative effect can cause the movement of stones and blockage of the bladder.

Contraindications also include problems with the liver and kidneys, a tendency to allergic reactions and chronic pancreatitis. Taking flaxseed pancakes during pregnancy and lactation should be under the supervision of a doctor.

Important! Such pancakes do not mean a complete rejection of wheat flour, but only a reduction in its amount in favor of flaxseed.

About the benefits of such pancakes

In general, what is the essence and charm of all these flax pancakes, pancakes and flatbreads, why are they so popular lately, and are they as tasty as they endlessly trumpet in all the magazines dedicated to a healthy lifestyle and proper nutrition?

Everyone knows about flaxseed oil, which contains a huge concentration of omega 3 fatty acids. These unsaturated fatty acids are good for the heart and blood vessels, for the brain, and even help you lose weight more effectively. I will not list all the beneficial functions that omega 3 performs. I will also add that these fats are not synthesized in our body, and they are also in constant competition with omega 6 acids (sunflower oil, for example).

Well, flaxseed and flour are also rich in omega 3 fatty acids (especially in poorly refined flour). But I still advise choosing finely ground flaxseed flour that is as free from oil as possible. The fact is that flaxseed oil oxidizes very quickly, acquires a rancid taste, and subsequently brings not so much benefit as potential harm due to the huge amount of free radicals.

Now let's move on to the flaxseed flour itself. It is also useful because it contains a lot of protein (25 to 30%), fiber, minerals and B vitamins.

  • When mixed with liquids, flaxseed meal becomes very sticky and sticky. Therefore, it is often used as an egg substitute when kneading dough. Maybe someone is allergic to eggs.
  • Flax flour, unlike wheat flour, does not contain gluten (wheat protein, to which some people are allergic), and it also contains fewer carbohydrates (about 9%), which again makes it popular in all kinds of weight loss diets.

What can we say about the taste of baked goods made with flax? It’s all an acquired taste. For example, I am not a fan of flax, but others, on the contrary, like this specific aroma and unusual taste. I advise you to try it yourself and draw your own conclusions.

To quickly and without much hassle prepare delicious oat-flax pancakes, I recommend watching this video.

Cooking recommendations

  • Since oatmeal and flaxseed flour absorb a lot of moisture, the dough must be allowed to thicken for 10-15 minutes before baking.
  • If the dough is too thick, add 1-2 tablespoons of milk and stir.
  • Instead of oatmeal, you can take 2-3 tablespoons of oatmeal left over from breakfast. In this case, you will need to take the same amount less milk.
  • Instead of poppy seeds, you can add citrus zest or half a banana mashed with a fork to the dough.
  • To fry pancakes, I recommend using a non-stick frying pan (it does not need to be greased with oil). If the dough still sticks, heat the pan well and brush it with a small amount of oil using a brush.
