- Add wheat flour, a pinch of soda, a pinch of citric acid, salt, mix with a blender or mixer for two minutes, but at low speed. Thus, the lumpiness should disappear, the dough becomes homogeneous.

Sugar-free pancakes made from flaxseed flour
It turns out that not all recipes that describe such a traditional dish as pancakes contain sugar.
Do not be embarrassed; in the final result of preparing the dough, as well as baking, it will not in any way reduce the wonderful properties of the resulting product. But it will turn out not only tasty, but also healthy.
Ingredients
- Half a small spoon of salt
- 120 milliliters milk
- Egg
- Tablespoon of vegetable oil
- 180 milliliters kefir
- Half a small spoon of soda
- 100 grams of wheat flour
- And most importantly 2 tablespoons of flaxseed flour
Preparation
- In a small bowl, break the egg and mix it with kefir and milk. Then adding vegetable oil, bring the product to a homogeneous consistency by continuous stirring.
- In another container, wheat and flaxseed flour are mixed. Add salt and soda here.
- Carefully pour the resulting dry mixture into the liquid mixture. Mix thoroughly until smooth. You can use either a mixer or a whisk.
- Now you need to heat the frying pan well over medium heat, grease the surface with a small amount of oil and start baking pancakes. Fry as usual, on both sides, until fully cooked. The product turns out very fluffy and soft. You can serve it with either sour cream or condensed milk.
Diabetic

How to make low calorie pancakes
How do diet pancakes differ from classic pancakes? During the baking process - nothing: they also need to be fried, but butter or fat cannot be used here, and the frying pan itself is not greased.

- 200–250 ml of milk (almost a whole glass);

- 3 tbsp. l. sour cream (maximum fat content);
- 0.5 tbsp. l. sugar and soda.

The next stage is to fill it with milk, sour cream, add soda and flour (first flaxseed, then wheat). Mix the mixture thoroughly and place the frying pan on the fire.
The procedure for preparing pancakes is usual: pour the substance into a hot frying pan with a spoon, and after frying, turn it over to the other side. The pancakes are ready – you can serve them with tea!

- In a nearby container, mix 2 types of flour, add salt and soda, without oil.
- From one bowl, pour the flour into the milk mixture and beat using a mixer or whisk (by hand).
- Then heat the frying pan, spread a few drops of sunflower oil over the surface and fry like regular pancakes.
To add extra flavor to these fluffy flax pancakes, you can add condensed milk, jam or syrup.

- 250–300 g of wheat flour (1–1.5 cups);
- 50 g flaxseed (3 tbsp);
- 500 ml milk;
- 1 glass of warm boiled water;
- 2 chicken eggs;
- 0.5 tsp. dry yeast;
- 1 tbsp. l. Sahara;
- 0.5 tsp. salt;
- a few drops of sunflower oil in a frying pan;
- cooking time – 3-4 hours.
Cooking pancakes step by step:
- Mix flaxseed and wheat flour in one bowl. At first we only need half of this mass, so the second half is poured into a separate container.
- Yeast and sugar are added to the first part, warm water is poured in, and after thorough mixing, cover with a thick towel and set aside for 2-3 hours.
- After this time, the mixture will swell, the remaining mixture of flax and wheat flour is poured into it, milk and salt are added.
- In a separate bowl, beat the eggs and add them to a common “cauldron”, cover again with a cloth and leave on the windowsill (an ideal place in sunny weather) for 1 hour.
- The last stage of preparing pancakes is to pre-heat the frying pan, grease it with vegetable oil, pour in the mixture, stirring constantly.

Oatmeal and flaxseed flour can be obtained at home by grinding flaxseed and long-cooked oatmeal in a coffee grinder. At the same time, all the beneficial properties of the original products are preserved as much as possible.
Or you can buy ready-made flour at the store. When purchasing, pay attention to the shelf life indicated on the packaging. Be sure to make sure there are no pests, and also pay attention to the consistency of the flour - there should be no lumps in it, and it should not be too wet.
Step-by-step preparation
- Pour 250 milliliters of milk into a bowl. Add 2 eggs.
- Add 40 grams of flaxseed and oatmeal
. - Add 35 grams of whole grain wheat flour.
- Pour in 10 milliliters of olive oil.
- Add 5 grams of poppy seeds and a pinch of salt. Beat the dough with a mixer.
- Using a ladle, pour some dough onto a well-heated frying pan and distribute it evenly to make a pancake with a diameter of 15 centimeters.
- Fry it on both sides until golden brown.
- We prepare the rest of the pancakes in the same way. Serve them with honey.
- You can also serve pancakes with jam, marmalade, yogurt or sour cream, garnished with fruits, nuts or berries, sprinkled with chocolate or sprinkled with powdered sugar.

Cooking recommendations
- Since oatmeal and flaxseed flour absorb a lot of moisture, the dough must be allowed to thicken for 10-15 minutes before baking.
- If the dough is too thick, add 1-2 tablespoons of milk and stir.
- Instead of oatmeal, you can take 2-3 tablespoons of oatmeal left over from breakfast. In this case, you will need to take the same amount less milk.
- Instead of poppy seeds, you can add citrus zest or half a banana mashed with a fork to the dough.
- To fry pancakes, I recommend using a non-stick frying pan (it does not need to be greased with oil). If the dough still sticks, heat the pan well and brush it with a small amount of oil using a brush.

Step-by-step preparation
- Beat 2 eggs into a bowl. Add one and a half tablespoons of sugar. Beat everything with a mixer.
- Pour in 400 milliliters of milk and beat again. Add flour, constantly stirring vigorously - 40 grams of flaxseed and 150 grams of wheat. Add a teaspoon of olive (sunflower) oil. The dough turns out to be quite liquid, but after 10-15 minutes it becomes much thicker due to the absorption of liquid by the flaxseed flour.
- To fry pancakes, you can use a special culinary decorator with a thin hole, or you can pour the dough into a bottle and make a small hole in its cork. You can also use a regular tablespoon. In a dry frying pan, very well heated, fry small pancakes on both sides until golden brown.
- We stack the finished pancakes on top of each other.
- For the curd cream, pour 200 milliliters of yogurt without additives into the blender bowl.
- Add 100 grams of cottage cheese. Using an immersion blender, beat the mixture until smooth. Add 2 teaspoons of cocoa, a tablespoon of cinnamon and 1-2 tablespoons of powdered sugar. Pour in syrup from 100 grams of cherry jam (reserve the berries for decoration). Mix everything thoroughly again.
- Pour curd cream over the pancakes, decorate with cherries and serve. You can also use other fruits for decoration, such as apples and tangerines (oranges). The dish can be sprinkled with a small amount of powdered sugar.
