How to prepare “Razbornik with jam”

Prepare your ingredients.

Add sugar, salt, yeast to warm milk, pour in 2 tbsp. spoons of vegetable oil. Stir until smooth.

Sift the flour, knead the dough and leave it to proof for 1 hour.

Divide the finished dough into equal pieces, for example, into 20 pieces of 30 grams each.

Roll out the dough into a small flat cake and place jam in the center.

Gather the ends of the dough into a knot.

Dip into a mixture of melted butter and vegetable oil.

Place the pieces in a baking dish, pour the remaining oil on top of the dough. Let the dough rise for 10-15 minutes, during which time preheat the oven.

Bake the razbornik at 180 degrees for 35-40 minutes, check readiness, as everyone’s oven is different.

To serve, turn the spreader over onto a plate and sprinkle with powdered sugar if desired.

Step 1 – Preparing the filling

First soak dry raisins in water for 10-15 minutes. Then drain the water and dry the berries with a paper napkin. Add a little flour (one or two pinches) to the raisins and mix.

Pour boiling water (½ cup) over poppy seeds and simmer over low heat for about a minute. After this, leave the poppy mixture to infuse for another 10 minutes. After this, strain the mass. Step 2 – Kneading the dough

Pour a teaspoon of sugar into slightly warmed milk and stir until dissolved. Add the entire portion of yeast to the sweet liquid. We give the dough time to rise like a cap.

In a saucepan or large bowl, mix vegetable oil (according to the recipe - 3 tablespoons), pre-melted butter, sugar (including vanilla), salt, egg. Pour the yeast mixture with milk into it, add half the flour and mix everything.

Add brewed poppy seeds and prepared raisins to the dough and mix everything well again. This method of adding filling is used when preparing monolithic biscuits or, for example, in the cake layers of the same Natasha cake. When buns with jam are baked, the filling is, of course, wrapped in a “flatbread” in a certain shape. But poppy seeds and raisins can be used in any way.

After the filling is mixed, add the rest of the sifted flour and finally knead the mass. If you wish, you can do this the old fashioned way - by hand or the modern way - in a blender. Cover the pan with a lid or towel and leave the dough to rise.

Step 3 – Baking the crumpets

After the yeast dough has risen, knead it with your hand and shape the buns into balls. The specified quantity of products yields approximately 10 pieces. But you can change this amount at your discretion depending on whether you like big or small donuts.

We bake buns as an Easter “disassembly”. That is, we place all the dough donuts next to each other in a baking dish. The form for the buns can be a regular baking sheet with high sides or a frying pan. We pre-lubricate it with vegetable oil or line it with parchment paper.

Let the pieces stand for another 15-20 minutes so that they rise. To make the baked goods even more beautiful and tasty, grease the surface of the semi-finished product with egg (it was not in the ingredients) and sprinkle with sugar. Place the baking sheet with the spreader in an oven preheated to 200 degrees and bake until an appetizing golden brown crust.

3. Place the dough for fermentation, when it has doubled in size, knead it, under no circumstances beat it or prick it, but place it on the table, turning it, folding the edges, pressing the dough on top. And again we wait for the dough to rise.

Preheat the oven to 180′. Grease the pan with oil and bake for 30 minutes.
