The recipe for making “Rosochki” buns from yeast dough has been familiar to me since childhood, when my mother made them for me. The aroma of this baking spread throughout the house, and it looked very beautiful.
Buns with apples and whey
This is a version of small apple pies. A fresh apple goes very well with the dough. Also, roses prepared in this way look more like real flowers than others.
You will need:
- 125 ml whey;
- 300 g flour;
- 12 g fresh yeast;
- 1 egg;
- vanillin;
- 30 g butter;
- sugar.
Cooking method:
- Grind the yeast together with the sugar in a bowl. The easiest way to do this is with a fork. The mixture should stand for a few minutes.
- Mix sugar with egg, leave the mixture for a while until the sugar is completely dissolved.
- Add the yeast mixture to the warmed whey. Add some flour. Stir and set the mixture until it rises.
- Add eggs and sugar to the whey-based mixture. Gradually adding flour, you can begin to knead the dough. Let it sit for about half an hour.
- Roll out the dough into small strips of a few centimeters. Place apple slices overlapping the strip. One bun yields about five slices. The apple is only halfway on the dough. Then carefully fold the edge of the strip and roll the strip. You will get an apple rose.
- The resulting buns should stand for about fifteen minutes.
- Roses should be baked at a temperature no higher than 180 degrees for half an hour.
To make the dough rise faster, place it in a water bath.
Let's move on to the dessert preparation process.
Cut the apples into quarters, remove the core and cut into thin slices (about 2 mm). In a small saucepan, bring 200 ml of water to a boil. Add sugar and add apple slices. Cook them for a couple of minutes, then drain the water. Defrost the dough and roll it out thinly. Then we cut it into long (about 25-30 cm) strips 3-4 cm wide. Place five apple slices on each strip, slightly overlapping. Carefully wrap the dough into a tube, bend the bottom edge and place our future rose on a baking sheet. Preheat the oven to 200 degrees and bake our edible flowers for about half an hour. Cool the finished culinary products, sprinkle with powdered sugar and serve. As you can see, this recipe for dough roses is extremely easy to prepare. The finished dish is not only very beautiful, but also tasty.
Rose buns stuffed with cottage cheese
Buns and pies made with cottage cheese are classic homemade baked goods. Many housewives use cottage cheese in their kitchen. In roses, the filling will look original, and the taste of the baked goods will be incomparable.
You will need:
- a glass of milk;
- a glass of sugar;
- 3 eggs;
- 100 g margarine;
- 2 bags of vanillin;
- 700 g flour;
- 25 g yeast;
- raisin.
Cooking method:
- Soak the raisins in boiling water.
- Melt the margarine.
- Mix yeast with warm milk, adding 200 g of flour and 1 tbsp. l. Sahara. The mixture should sit for at least half an hour.
- Mix the cooled margarine with vanilla, as well as sugar and salt to taste. Add the risen yeast. Knead the dough, gradually pouring flour into it. Leave the dough to rise for an hour in a warm room.
- For the filling, mix raisins, a little vanilla and sugar, and an egg.
- Roll small balls from the risen dough. Roll them into flat cakes. Make three cuts on the mug and put the filling in the center.
- Shape the dough into a rose shape. To do this, you need to wrap the smallest piece of the filling. Next do the same. The third piece secures the rosette.
- Wait about fifteen minutes so that the buns do not fall apart.
- Bake the cottage cheese buns in the oven for forty minutes at 180 degrees.
Improvise with the filling. You can fill the roses with cream, cottage cheese or jam. Add a unique taste to the dough by adding some raisins or cinnamon.
French roses with butter
A classic recipe for rose buns. French buns require few ingredients and they are also prepared quite quickly.
You will need:
- a glass of warm milk;
- 30 g raw yeast;
- half a stick of butter;
- 3 eggs;
- 700 g flour;
- sugar.
Cooking method:
- Melt the butter and let it cool.
- Dissolve yeast in milk. Add 3 tbsp. l. sugar and the same amount of flour. Stir. The mixture should sit for at least 15 minutes.
- Beat the eggs. Mix them with diluted yeast and butter.
- Gradually adding flour to the mixture, make a yeast dough. Divide it into several parts.
- Roll out each piece of dough well. Grease it with butter and sprinkle with sugar.
- Make a roll from the dough. There is no need to make it too wide. Cut the roll into several pieces two to four centimeters wide, depending on what size buns you want. Then you need to make a small cone on one side, thereby giving the roll the appearance of a rose.
- Place the roses in the oven, setting the temperature to 180 degrees. The buns are baked for half an hour.
You can use margarine instead of butter.
Note to housewives
- Whatever recipe you choose for making buns, be sure to sift the flour through a sieve. This rule greatly affects the quality of baked goods. The difference will be visible to the naked eye.
- If the butter is not soft enough, gently heat it in the microwave on the lowest setting. Starting literally from a few tens of seconds. Otherwise, the oil may leak and in this state it will not be useful for baking.
- Proofing is a very important step in preparing dough for baking and is included in our recipe for good reason. During this process, active fermentation occurs and carbon dioxide is formed, which is almost completely released during the formation of buns. The moment we rolled it up, cut it into pieces and shaped it into a rosette, our dough became very dense. If you neglect proofing, the finished buns will be very tight. In order to avoid this, you need to place the workpieces in a warm and damp place and cover with a towel. Then the dough becomes fluffy and the roses increase in volume.
- If the bottom of your baked goods burns, place water in a metal bowl on the bottom rack. Then the buns will not be damaged and will be baked whole.
- This recipe assumes that the buns are not eaten all at once, since they make quite a large number even for a large company. You can extend the freshness of baked goods for several days by placing them in the refrigerator after they have completely cooled and wrapping them in paper or a cardboard bag. They can also be placed in a plastic bag, having previously released all the air from it. If the buns are still a little dry, just place them in the oven and heat them at 100 degrees.

Recipe for making sweet buns with sugar with step-by-step photographs. Today I decided to make buns with sugar from the remaining sweet butter dough. They are very easy to prepare; both children and adults enjoy eating such buns.
I decided to make rose-shaped buns, but buns can be made in any shape and any size. In addition to sugar, buns can be filled with cinnamon + sugar, poppy seeds, dried fruits (dried apricots, prunes...), various chopped nuts, make a layer of meringue (beaten egg whites with sugar), etc.
When you have rolled out the dough, you will need to grease it with soft butter or syrup, you can also use whipped egg white, and only then sprinkle with sugar.
If you use syrup, it may leak out a little from the roll, so for convenience it is better to use butter.
Recipe 4 Rose buns made from dough with sour cream and kefir
Yeast dough prepared with fermented milk products requires a lot of time to infuse. But can this be considered an obstacle to the goal, which is expressed in obtaining a whole dish of aromatic and airy pastries?
You should knead soft buns from: a glass of sour cream; 0.1 kg butter; half a glass of kefir; glasses of water; 0.5 kg flour; 1/3 pack of compressed yeast; Sahara; pinches of salt and ground cinnamon.
Step-by-step preparation:
- Warm the water to approximately 38 degrees.
- Crumble the yeast before adding it to the water.
- Stir the mixture with a spatula and leave for 20 minutes to give the yeast time to activate.
- Add sugar, a glass of flour and wait half an hour until the mass increases in volume.
- Pour in kefir, melted butter, kefir.
- Add the remaining flour, then leave the dough alone for another 30 minutes.
- Knead the mixture with your hands and place on a work surface.
- Roll out the layer to a thickness of 0.5-0.7 cm.
- Cut it into strips, then sprinkle with granulated sugar mixed with cinnamon.
- Roll the rolls, turn the “petals” outward (see photo), forming roses.
- Before placing the buns to bake, let them sit in a warm place, covered with a napkin.
- Beat the egg and apply with a brush to the surface of the buns, which have become fluffy and increased in volume.
Baked goods should be baked at 160 degrees until browned.

Roll the greased cake into a loose tube.
