Frozen seaweed (kelp), thanks to the freezing method, retains almost all the valuable properties of fresh seaweed. It contains a universal set of substances that can have a beneficial effect on many aspects of the human body, from digestion to the functioning of the brain. To ensure that it does not lose its beneficial qualities during heat treatment, before preparing frozen seaweed, it should first be boiled in cold water. Moreover, an important point is that as soon as the water boils, the cabbage must be immediately removed from the water. After this, rinse under running water and cook again in cold water until boiling. Then rinse again. At all stages of the process, it is necessary to maintain a low or medium level of fire, since cabbage produces strong foam during intensive cooking and can be overcooked. After this, the kelp is again boiled in cold water, but now, when the water boils, they add salt and continue to cook for about 20 minutes. This is done in order to clean the kelp leaves from mucus and sand. Some chefs suggest pre-rinsing frozen kelp in warm water, believing that after this, to be ready, it is enough to place it in cold water and bring the water to a boil. This method ensures better preservation of the beneficial properties of the algae. We offer recipes in which frozen seaweed plays an important role.
Casserole
To make this simple but tasty dish, you need to take:
- 500 g frozen kelp;
- Two chicken eggs;
- 80 g cow butter;
- Lemon;
- Salt.
Almost all recipes, speaking about frozen kelp, assume one way of pre-processing it, which is that the preparation begins with boiling the seaweed in three waters. We wrote about it above. Therefore, we will not describe it in detail every time. In order to make a casserole, we do this:
- Boil the kelp, let it cool thoroughly and fry it with some cow butter until it softens. At the same time, you need to make sure that it does not begin to creep apart. Overcooked cabbage largely loses its beneficial properties.
- Transfer the cabbage to a heatproof dish.
- Beat the chicken eggs and pour them over the kelp. Salt the contents of the form.
- Place the pan in the preheated oven and bake for 1/3 hour.
- Melt the rest of the butter, peel the lemon and separate it into slices.
- Then we take the casserole out of the oven, pour oil over it and place lemon slices on its surface.
Product Features
Sea kale is nothing more than a product obtained from a brown seaweed called kelp. This is one of the best sources of iodine. Its regular use can save the average person from taking various dietary supplements, which are offered in abundance by pharmacy chains today. Due to the method of freezing the product, it retains most of the beneficial substances in which it is so rich.
Kelp itself is low in calories and contains no carbohydrates. Its consumption as food is usually accompanied by a therapeutic effect. Sea kale rids the human body of harmful toxins and deposits that have accumulated in it over the years. It also has a beneficial effect on the functioning of the cardiovascular system.
However, the product also has contraindications. Therefore, it is impossible to say unequivocally that seaweed is useful for everyone without exception. An endocrinologist can determine the benefit or harm, because there are diseases for which eating iodine-containing products is strictly unacceptable. It is also important to understand that excess product can provoke negative processes in the body such as stomach pain, skin rashes, difficulty breathing and even baldness.
When fresh, the product does not store well, which is why it has to be heat treated (dried or frozen). To be fair, it is worth noting that fresh frozen cabbage is inferior in vitamins and microelements to its dried counterpart. In addition, before the cooking process, the product to be frozen must be soaked in water. It is impossible to eat such a product without heat treatment, so the cooking stage is required.
Fish dumplings
To prepare this dish, take:
- 500 g fish fillet;
- 300 g frozen kelp;
- ½ teaspoon black pepper;
- Two onions;
- Two chicken eggs;
- 500 g wheat flour;
- A tablespoon of corn or sunflower oil;
- Salt.
We will prepare dumplings in the following order:
- First we'll make the minced meat. Boil the cabbage, grind it in a meat grinder with fish fillet and onion, and add pepper and salt.
- Pour the eggs into the flour, add butter and salted water.
- After kneading the dough, roll it out to a thickness of 2 mm. We cut blanks from it, put the minced meat in them and roll the dumplings.
- Place the dumplings in boiling water. The dumplings should be cooked for 20 minutes.
- Each portion of the finished dish should be poured with melted butter.
You can also fry dumplings. It's also very tasty.
Detailed cooking technology
How to cook pak choi cabbage
Cooking kelp is a preliminary step in the preparation of many dishes. This is a process that takes a lot of time. To begin with, the product is removed from the briquette and defrosted. As a rule, this takes no more than half an hour.
After this, the seaweed is soaked. Firstly, this is necessary in order to reduce cooking time. Secondly, the cabbage itself will become softer, which will affect the taste of the finished dish. Thirdly, soaking will help to get rid of the unpleasant odor to some extent. After the cabbage is soaked, it must be rinsed with clean water to get rid of mucus.
Then the defrosted product is dipped into a container of clean water and brought to a boil. Soak the kelp for the first time for about 15 minutes. Cook for the first time just until it boils. This will allow you to preserve as many useful components as possible. However, the cooking process does not end there: it will have to be repeated twice, observing the time regime (10-20 minutes each)
It is important to use clean and cold water for soaking and cooking all three times.
Each time after cooking, the kelp is placed in a colander. You need to cook on low heat. You can add salt to the product during secondary cooking. If you boil the seaweed at least twice, this will allow you to achieve the best taste of the product. In addition, perfectly cooked cabbage differs from undercooked cabbage: it not only becomes softer, but is also easy to tear with your hands.
It is difficult to say unambiguously how long a product should be cooked, because every housewife has her own opinion on this matter. Often the cooking time is reduced by 10 minutes or more, considering that the duration of the heat treatment destroys the benefits of the finished dish. Some even believe that in order to properly prepare kelp, it is enough to simply rinse it in warm water. However, although this will allow you to retain more useful components, you will not eliminate the smell or dirt in this way, and you will not get rid of the hardness of the product. Secondary treatment will eliminate the remaining mucus and sand.
Dietary vegetable caviar
The dietary properties of kelp are reflected in numerous recipes with its participation. Usually these are recipes for soups and salads, but not only. Here is a recipe for vitamin caviar from frozen cabbage. For it we will need:
- Two pickled cucumbers;
- 400 g kelp;
- Bulb;
- Carrot;
- 1/3 cup vegetable oil;
- 100 g white bread;
- Salt.
Let's do the following:
- We defrost the kelp, wash it, chop it and put it in cold water to boil. Cook for 50 minutes over low heat.
- Then we take the kelp out of the broth and cool it.
- Sauté onions and carrots in oil.
- Peel the cucumbers, remove the seeds and squeeze.
- Soak and squeeze the bread.
- Mix the vegetables with kelp and bread, and grind twice in a meat grinder.
- Fry the mixture, add salt and pepper to your taste.
Sprinkle the finished caviar with chopped herbs.

Another dietary dish. To prepare it, take:
- 300 g frozen kelp;
- 300 g crab sticks;
- Can of corn;
- Big sour apple;
- 100 g green onions;
- Four chicken eggs;
- A bunch of parsley and dill;
- Mayonnaise.
We will prepare the salad in the following order:
- Defrost and boil the cabbage, and chop it finely.
- Grate the apple, chop the herbs and onion.
- Hard boil chicken eggs and cut them into small pieces.
- Mix all the ingredients and season the salad with mayonnaise.
Grapefruit salad
This light, dietary salad will require the following products for its preparation:
- 300 g frozen seaweed;
- Carrot;
- A bunch of young green onions;
- Half a medium-sized grapefruit;
- Corn or olive oil;
- Sesame seed.
The cooking process is not difficult. It consists of the following operations:
- Defrost the kelp, boil it, squeeze out the water and put it in a saucepan.
- We clean and boil the carrots, chop them with onions and add them to the cabbage.
- Mix the contents of the pan and fill it with oil.
Decorate the finished salad with grapefruit slices and sprinkle with sesame seeds.
What else to consider?
To start cooking, you need to make sure that the seaweed is completely defrosted. Typically, such a product will be covered with a lot of mucus. It is very difficult to wash it off, and therefore you will have to work in the kitchen as carefully as possible, because the kelp mucus will remain not only on it. It will end up on the dishes and on your hands.
If you can’t immediately wash away all the mucus using a large amount of water, don’t despair. Almost all of it will go away during cooking and rinsing between passes under running water. However, it is important to take into account the nuance that the number of brews may vary. This will depend on what kind of dish the hostess plans to prepare. For example, if the standard technology involves three rinses and three boils, then when the seaweed is made into soup, the last time it will be boiled in the seaweed itself. It is worth noting that seaweed makes an excellent addition to fish soups.
It should also be mentioned that it is undesirable to overcook seaweed in the process of preparing it for further processing. The rule “the more the better” is inappropriate here. If seaweed is overcooked, it is not only tasteless, but also turns into a shapeless mass. Few people will like this dish.

Salad with shrimp
Salad recipes are not limited to dietary dishes. This shrimp salad is not only delicious, but also extremely nutritious. It can charge an adult with energy for the whole day. To prepare it, we take the following set of products:
- 200 g frozen kelp;
- 200 g large shrimp;
- 100 g pitted olives;
- ¼ cup olive oil;
- Large lemon;
- Seasonings, salt and pepper.
When preparing the salad, we will adhere to the following course of action:
- We defrost the kelp, boil it, put it in a weak vinegar solution for several hours, then squeeze and chop it.
- Mix salt and olive oil in one container. Squeeze the lemon in there and add seasonings to taste. Our gas station is ready.
- How to cook shrimp: Place the shrimp in boiling water for three minutes, clean and sauté in oil.
- Mix kelp, shrimp and olives in one container, fill the mixture with dressing and mix again.
The finished salad can be sprinkled with herbs or flavored with sour cream if desired.
Chicken soup with seaweed
For chicken soup you need:
- Four chicken legs;
- Two liters of chicken broth;
- ¼ cup rice;
- Three potatoes;
- Carrot;
- Two onions;
- 300 g frozen kelp;
- Vegetable oil for sautéing;
- A few black peppercorns;
- Bay leaf, salt and pepper.
Let's break down the soup recipe point by point:
- Boil the chicken and, cutting it into pieces, fry over moderate heat.
- Defrost and boil the cabbage. Then squeeze it out and transfer it to a separate bowl.
- Cut the washed and peeled onions and carrots into thin strips and sauté in oil.
- Wash the rice.
- Peel the potatoes, cut them into cubes and put them together with the rice in a pan with chicken broth.
- When the broth boils, cook for another 8 minutes, then add the carrots and onions and continue cooking until the broth boils again.
- Pour kelp, seasonings and pepper into it, and continue cooking for another minute.
- After this, place the tightly closed pan in a warm place for a couple of hours so that the soup is properly infused.
- Add chicken pieces to each serving of soup.
Layered pie with ham and potatoes
For this unusual dish, let's take:
- Four potatoes;
- 200 g kelp;
- The same amount of ham;
- Four chicken eggs;
- Mayonnaise.
To prepare the pie we need to do the following:
- Defrost the kelp and, after boiling it, finely chop it.
- Peel and boil the potatoes. Boil the eggs.
- Grate eggs and boiled potatoes on a fine grater.
- Place a layer of potatoes and a layer of cabbage on top of it. Place another layer of potatoes, a layer of ham and a layer of grated eggs on top of the cabbage. We coat each layer with mayonnaise.
- Sprinkle the finished pie with herbs.
Pie with cheese and quail eggs
To prepare this pie, we will need the following ingredients:
- Half a kilo of kelp;
- 200 g cheese;
- Five quail eggs;
- Half a glass of vegetable oil, olive or corn;
- Two salted tomatoes;
- A tablespoon of fresh yeast;
- A teaspoon each of coriander and turmeric;
- A tablespoon of sweet paprika;
- 400 g wheat flour;
- Dense cheese;
- Dried basil;
- Sugar.
We will divide the process of preparing the pie into successive stages:
- First, let's prepare the dough. To do this, dilute the yeast and sugar with salt in a glass of slightly warmed water.
- When the yeast swells, add vegetable oil, ground coriander with turmeric (it will give the dough a pleasant yellow color) and flour.
- After kneading the dough, throw a towel over the pan and transfer it to a cool place for half an hour.
- After this, transfer the dough into a heat-resistant form, level it, brush it with oil and sprinkle the top with sweet paprika.
- Now let's start preparing the filling. Boil the defrosted kelp, wash and chop it.
- Boil the potatoes in their skins, peel them, cut them into circles and place them in a mold on top of the dough.
- Place cabbage, boiled quail eggs and salted tomatoes cut into circles on top of the potato layer.
- Sprinkle thickly with grated cheese and dried basil. Add salt and pepper to your taste.
- Preheat the oven to 180 degrees and, placing the cake pan in it, bake for 40 minutes.
The finished pie with cheese and quail eggs is served warm.
How to cook next?
Once the kelp is cooked, you can prepare various dishes from it. For example, it is an excellent base for salads and casseroles. It is also added to dumplings. Let's look at some interesting recipes.
Egg salad
Preparing this dish will require chicken eggs (3 pcs.), sunflower oil (2 tbsp), green onions (to taste) and seaweed (300 g). This salad is usually prepared by those who set a goal to lose weight. The dish is prepared quickly: boil the eggs, chop the onion, and add everything to the seaweed. After this, season the salad with oil, salt if necessary and serve.
With grapefruit
This dish is also considered a dietary dish. For a tasty and healthy snack, you need to prepare one carrot, a small bunch of onions, 0.3 kg of freshly frozen seaweed, a little olive oil and sesame seeds, as well as half a grapefruit. The seaweed is boiled and squeezed. The carrots are peeled, boiled, cut into small pieces, and added to the container with the seaweed along with the chopped onion. Mix everything and season with oil. After this, the dish is laid out on plates and decorated with grapefruit, sprinkled with sesame seeds on top.
Casserole
This is a simple recipe that takes very little time to prepare. To do this, you should take half a kilogram of frozen product in briquettes, a couple of chicken eggs, salt, lemon and a little butter. After cooking and removing excess moisture, the seaweed is transferred to a frying pan. Take eggs and beat them. The seaweed is poured over the egg mixture, salted on top and placed in the oven for baking for about 15 minutes.
While the pan is in the oven, melt the butter, peel the lemon and cut it into thin slices. When the time is up, take out the casserole, pour in oil, decorate with lemon slices and serve.
Fish dumplings
To enjoy fish dumplings, you should make sure you have half a kilogram of prepared fillet, two medium-sized onions, two chicken eggs, and 0.3 kg of freshly frozen seaweed. In addition, you will need flour, black pepper, vegetable oil and salt. To achieve a piquant taste, minced meat is prepared by twisting the fish together with boiled seaweed. Add pepper and salt to the mixture and mix everything.
After this, knead the dough by pouring the eggs into the flour, adding butter and a little salted water. After kneading the dough, it is rolled out into a thin layer, cut into molds and dumplings are made, supplying them with minced fish and algae. In general, the technology does not differ from the usual one, only the cooking time is about 15 minutes from the moment of boiling. After the dumplings are ready, take them out and pour oil over them.
Among the mass of various recipes, one can highlight an interesting version of a dietary dish with pickles. Adhering to standard technology, prepare a couple of medium-sized cucumbers, 0.4 kg of seaweed, an onion, 1 carrot, a third of a glass of sunflower oil, some white bread and salt (to taste). The beginning of the process does not differ from the usual technology, in which the seaweed is boiled and drained in a colander. After this, it must be cooled.
Carrots and onions are chopped and fried in oil, achieving a ruddy color for the vegetables. Remove the skin and seeds from the cucumbers. The bread is soaked and excess moisture is squeezed out. After this, all the ingredients of the future dish are ground in a meat grinder twice. Then the resulting mass is fried in a frying pan, salted and pepper if desired.
Pie
Frozen kelp can also be used for baking. For example, it can complement ham and potato pie. To do this, you should prepare 4-5 medium-sized potatoes, 0.2 kg of seaweed, 0.2 kg of fresh ham, 4 eggs and mayonnaise. To enjoy a delicious dish, follow the sequence of steps starting with cooking the seaweed.
When the cabbage is cooked and cooled, chop it finely. The potatoes are peeled and boiled. Chicken eggs are also boiled. After peeling the eggs, they are grated along with the potatoes. Then, first a layer of potatoes is placed on the dish, then a layer of cabbage, then potatoes again, then a layer of ham, and after that a layer of grated boiled eggs. To prevent the layers from crumbling, they are lubricated with mayonnaise. The pie is decorated with chopped herbs.
