What kind of dishes are there?
Depending on the material used to produce such products, they can be divided into aluminum, cast iron, Teflon and ceramic. Each of the above varieties has certain advantages and disadvantages.
For example, a ceramic grill pan does not require special care, is easy to clean and does not contain any chemicals. However, it is short-lived, cannot withstand high temperatures and is not resistant to mechanical stress. Such utensils must be handled very carefully, as they may break if struck.
Non-stick Teflon pans are also not resistant to high temperatures. Their coating becomes thinner over time. Therefore, when purchasing, you need to be prepared for the fact that in three years you will have to replace it.
Heavy, strong, durable and budget-friendly cast iron cookware heats up well and fries meat perfectly. To avoid problems with food sticking, it must be periodically oiled and calcined. You can cook in a frying pan made from high-quality cast iron with virtually no fat.
Cookware made of cast aluminum is lightweight and durable. The only thing she is afraid of is scratches left by sharp objects. Therefore, products fried in such a frying pan must be turned over using a silicone or wooden spatula.
General cooking rules
To properly fry the product to avoid the above-described disadvantages, you need to use a minimum of oil, to open the dish, use a marinade in which to soak meat, fish, vegetables, and mushrooms in advance.
When the strips are fried, you need to cover the dish with a lid to avoid numerous greasy splashes, turn the meat, fish, and vegetables with special tongs, or use a silicone spatula.
If the product is not turned over so often, then the grill stripes may be more pronounced, and the dish will be beautiful and fragrant. In such a frying pan, everything cooks faster, and therefore it needs to be heated immediately, and after laying out the food, reduce the heat to minimum.
To cook a whole fish, 15 minutes will be enough, but if these are pre-marinated steaks, then 5 minutes will be enough. It is better to use wooden or plastic spatulas to extend the durability of the product.
Chicken fillet in mustard-sour cream marinade
This tender, juicy and moderately spicy dish will be an excellent addition to any vegetable side dish. It turns out very soft and unusually aromatic, but it is advisable to start preparing it several hours before the intended serving. This way the meat will have time to soak through the marinade and acquire a characteristic taste. To fry chicken on a grill pan you will need:
- 600 g poultry fillet.
- 100 g thick sour cream.
- 2 tbsp. l. mustard.
- Salt.
The washed and completely dried meat is cut into slices and rubbed with a mixture of salted sour cream and mustard. The fillet pieces processed in this way are placed in any suitable container and put in the refrigerator. No earlier than eight hours later, they are sent to a heated grill pan and fried for three minutes on each side.
How is it different from a regular frying pan?
The grill pan is one of the most successful inventions. A simple device combines several functions and allows you to make a barbecue without leaving your home. The peculiarity of the grill pan is its ribbed bottom. The bottom of the pan, imitating a grill grate, makes dishes juicy and non-greasy. Thanks to the corrugations, the food does not come into complete contact with the base and 50% of the dish is steamed. It turns out that the frying pan performs the functions of an oven.
