Recipe for “Swallow’s Nest Cutlets”:

Pour milk over the bread. Leave for 1-2 minutes. Meanwhile, chop the onion and cheese as desired. Squeeze out the bread. Grind the onion, cheese and bread (you can use a blender or through a meat grinder).

Add minced meat. Egg. salt, black pepper, paprika (sweet). Mix and beat the minced meat.

In the meantime, cut the bell pepper into circles 1-2 cm wide, 10 pieces (this is where the remains of the bell pepper appear, some will then be added to the minced meat, and some can be “thrown into the freezer, or directly into borscht, stew, rice with vegetables , rolls, salad, etc.). Cut the tomatoes into circles 2-3 mm wide - 10 pcs. Onion slices relatively thin - 10 pcs.

Now cut into cubes some of the “remaining pepper” and 1/2 a bunch of parsley. Add to the minced meat and mix.

Let’s start “assembling” the cutlets. Grease the baking dish with vegetable oil. Lay out the pepper rings. Now we compact the minced meat into each ring. Lubricate each cutlet with 0.5 teaspoon of ketchup.

Now add the onions. Lubricate 0.5 tsp. sour cream. Place tomatoes on top. Cover with foil. Place in an oven preheated to 180 degrees for 40 minutes (check your oven).

After 40 minutes, remove the foil and sprinkle with pre-grated cheese. Place in the oven for another 10 minutes.

The cutlets are ready! They turn out very tasty and juicy. And I wish you bon appetit, good mood and all the best!

How to prepare a dish step by step with photos at home

Ingredients: minced meat, dry bread, chicken egg, quail eggs, salt, sweet pepper, cheese, onion and garlic.

Chop the onion.

Combine the onion and minced meat, add salt, and let simmer for 30 minutes.

Fill the bun with water.

Cut the sweet pepper into strips. We use 1 medium pepper. It is more effective to decorate the “nests” with strips of pepper of different colors; the remains of pepper can always be added.

Beat 1 chicken egg into the minced meat and add the bun. We beat the minced meat and throw it into a bowl.

Form cutlets and place on a baking sheet lined with oiled parchment.

We form “nests”, conveniently with a spoon.

Bake the “nests” for 15 minutes at 240°C.

Cut the cheese into strips.

I recommend preparing eggs in advance, 2 per “nest”.

Remove the “nests” from the oven and quickly pour in the eggs.

We decorate, make a “rim” for the eggs, place cheese and pepper along the edge of the “nest”.

Bake for another 15 minutes at 220°C. Due to two-stage heating, the yolk will be preserved and the pepper will not burn.

Place the “nests” on a plate and decorate with herbs. Vegetable decoration on the “nest” is a ready-made side dish for cutlets.

Minced meat nests with eggs

INGREDIENTSQUANTITY
salttaste
garlic3 pieces
chicken fillet300 g
cream0.1 l
eggs6 pcs.
pork0.3 kg
ground black peppertaste
onion1 head
White bread50 g

How long is it - 1 hour and 15 minutes.

What is the calorie content - 184 calories.

How to cook:

  1. Wash the pork thoroughly with running water along with the chicken.
  2. Dry the meat, remove films and fat using a sharp knife.
  3. After that, cut it into small cubes.
  4. Heat the cream, pour it over the slices of bread, which are placed in a small container.
  5. Peel the garlic and cut into slices.
  6. Remove the skins from the onion, wash it and chop it coarsely.
  7. Mix meat, onion, bread (not squeezed), garlic and mince. If you have a powerful blender, you can use that too. The main thing is that you end up with a homogeneous mass.
  8. Add salt and black pepper to it, mix thoroughly.
  9. Grease a baking dish or baking tray with a small amount of oil using a brush.
  10. Form six balls from the minced meat and turn each of them into a nest. To do this, you need to make recesses in the center.
  11. Place a yolk in each “nest”, then add the amount of white that is needed. If you add the whole egg at once, it will run out the sides. If the holes are too small, you can use quail eggs instead of chicken eggs.
  12. Sprinkle the eggs with salt and pepper and place in the oven.
  13. Bake for about thirty minutes at 190 degrees.

Preparation of minced meat

Recipes for minced meat may involve the use of both a ready-made product and individual pieces of beef and pork. If you don’t like purchased minced meat, then fresh meat is thoroughly processed and twisted in a meat grinder. Then finely chopped garlic, medium-sized table salt and crushed pepper are added to it. After mixing all the ingredients with your hands, start adding other ingredients. They use the crumb of white bread, previously soaked in whole milk, raw chicken eggs and finely chopped dill.

Cooking features

Ready-made Swallow's Nest cutlets are most often served with a side dish: rice, buckwheat, mashed potatoes, pearl barley, and so on. But we suggest you be more original and serve them with chopped fresh vegetables or a salad with a refreshing dressing. And rich, and satisfying, and at the same time easy!

To make the cutlets truly unusual, you can add cubes of cheese to the minced meat (just imagine how delicious cheddar or mozzarella stretches), fresh tomatoes or sweet peppers. These can also be nuts, pre-roasted until golden brown. Strange? But incredibly tasty!

See the video recipe for making Swallow's Nest cutlets below:

Nest cutlets are not just meat balls. This is almost a complete dish, because to some extent they contain sauce, vegetables, and meat - the base. So the only thing missing is something light as a supplement.

Chinese delicacies: a nest with a secret | Bigasia.ru

Ancient Chinese legends say that a person who eats swallow’s nests will have excellent health almost until old age, as evidenced by “a beautiful complexion and hair like silk.” In Chinese medicine, dishes prepared from swallow's nests are also considered one of the best cosmetics. In a word, the Chinese are confident that those who consume this food regularly will begin to age much later than other people. Whether this is true or not is up to the conscience of the Chinese, but it still makes sense to talk about this famous delicacy of Chinese cuisine. Many of us have heard about it, but few have any idea what it’s actually about. What other swallows are there and what good are they?

For those who want to encroach on the swallow nests that the birds have built under their windows, we say right away: relax and sleep well - ordinary swallows, or rather their nests, are not suitable for preparing “a dish for old age.” The fact is that on some islands of the South China Sea - for example, in Hainan and Taiwan - there are high rocky caves and grottoes where one of the bird species lives, which is similar to swiftlets. They build their nests on approximately the same principle as ordinary swallows - they glue together the elements of the nests with instantly hardening saliva. The only peculiarity is that in the salangans' saliva there are thin, steel-thread-like, boneless fry of fish such as saury. Swallows also feed on sea eggs, which are found on seaweed and other algae near the islands. They use this “mixture” to glue their nests together. The “ingredients” for Chinese chefs who prepare the “Swallow’s Nest” dish are two types.

Preparing a swallow's nest dish is not so easy. Chinese chef. Photo: Khakimullin Aleksandr/TASS

One contains more extract of congealed bird saliva; there are practically no excess impurities, since these nests were removed before the chicks hatched in them. The other nest has a completely different color - it is not white like the first, but almost black, previously used by birds. It is more difficult to prepare a delicious dish from it, but it is still possible. It’s just that the cook has to work hard: first, he takes a long time and tediously to clear the nest of bird feathers, insects and twigs, and only then begins to prepare the food, for which many Chinese and guests of the Celestial Empire are ready to pay a tidy sum.

Indeed, swallow's nests have become one of the most expensive food products. The price is quite reasonable considering how much time you have to tinker with them before they finally get to the table. Firstly, nest collectors, climbing steep cliffs, greatly risk their lives to obtain them. Therefore, they take slightly more money for their work than a worker who, for example, collected a basket of bananas. Secondly, the cook also worked hard, demonstrating his highest culinary skills - not every owner of a white cap on his head can prepare the dish correctly, despite its apparent simplicity.

The dish is prepared as follows: first, bird's nests, which are actually a fish-vegetable semi-finished product, are thoroughly dried under the sun. The size of each nest, resembling half a bowl, is approximately 6-7 centimeters in diameter, and the product prepared for cooking may not spoil for years.

Immediately before cooking, the pieces of the nests are poured with boiling water - they are soaked for several hours so that all the fragments of the swallow's nest swell and their volume increases noticeably. It turns out that this volume increases 10-12 times. Who knows, maybe it was this effect that convinced some impressionable people to consider the Swallow’s Nest dish a powerful aphrodisiac?!

Let us return, however, to the process of preparing food. After “soaking” the nest, all that remains is to boil it in chicken broth, which is salted, seasoned with ginger infusion and rice vodka. Without dwelling in detail on the description of some of the individual culinary secrets of Chinese chefs, we can say that the spicy “erotic” soup as a whole can already be eaten. The swallow's nest itself is served separately on a small plate.

Chinese men firmly believe in the erotic power of all kinds of
food additives.
Photo: TASS The Chinese, especially men, firmly believe in the erotic power of a swallow's nest. In their opinion, a person who has tasted the food will definitely experience its positive specific effect on the body - with all, as they say, the consequences arising from this event. If you eat “swallow’s nest” regularly, the effect will be “long-lasting.” Some guests of China joke that the inhabitants of the Celestial Empire seem to have long ago figured out the beneficial effect of swallow’s nests on fertility - that’s why there are more of them in the world.

It turns out that anyone who has tried a Chinese delicacy at least once in his life begins to firmly believe in its miraculous power. Perhaps the key word here is “believe.” Sometimes this helps better than eating a ton of pills. Foreigners and many Chinese residents, without stinting, pay crazy amounts of money for “Swallow’s Nest”, maintaining their “shape”. A tiny portion of 3-4 grams of dried swallow's nests today sells for more than $100 - however, the price depends on many factors. Chinese chefs just throw up their hands in regret - alas, swift swallows do not reproduce as quickly as the Chinese; there are no longer enough nests for all the rich inhabitants of the Celestial Empire, of which there are more and more every year. Therefore, prices for the gourmet product are rising rapidly.

Recipe: Cuckoo's Nest Salad.

To prepare the Cuckoo's Nest salad, you must stock up on ingredients: four to five pods of boiled asparagus, five gherkins, three apples, one head of garlic, three tablespoons of cottage cheese, three boiled eggs, one large leaf of cabbage, some herbs and mayonnaise.

Finely chop all the ingredients and mix them. Add salt, season with mayonnaise and mix again. Scald the cabbage leaf with boiling water and place on a plate. On this cabbage leaf, we’ll sort of “owl” something similar to a nest and put the salad in its center. This salad looks great on portioned plates, topped with sprigs of herbs, simply chopped herbs or lemon slices. You can put a couple of pitted olives on top.
