Ingredients:

  • several chicken breasts,

  • dried apricots (120 g).

To prepare the dish, it is more convenient to purchase chicken breasts. This will make it easier to cut up the chicken, remove bones and skin. We wash the fillet, dry it with napkins and wrap it in cling film. Next, we level each piece on the board and beat it with a kitchen hammer. The cling film helps to avoid splashes during the beating process. But you can do without it.

We lay out the prepared fillet, placing the pieces end-to-end (or overlapping) with each other. Next, pepper and salt the meat. Spread chopped dried apricots on top in an even layer (it must first be steamed in hot water). Now you can carefully roll the meat into a roll. We certainly wrap the workpiece with coarse threads. This is done so that it does not open during the cooking process. Next, you can prepare the fillet in several ways. You can put the chicken roll in the oven in foil. Or you can simply bake meat in a mold. The finished snack roll must cool, after which it is necessary to remove the threads from it. Next, cut the meat into medallions and serve.

Chicken roulade with garlic and herbs

There are quite a lot of recipes for snack rolls. By changing the filling, you can cook something new and interesting every time.

Garlic is a great addition to any meat dish. We suggest preparing a roll with herbs and garlic.

Ingredients:

  • head of garlic,
  • chicken fillet,
  • a mixture of Italian herbs,
  • ground pepper,
  • salt.

Wash the chicken fillet well and dry it with napkins. Next, we cut each piece crosswise so that the thickness of the layer is no more than 1.5 centimeters. Lightly beat each piece with a hammer.

Chop the garlic in any convenient way. Next, take some food foil, lay it out on the table surface and place pieces of meat on it, overlapping each other. Add pepper, salt and sprinkle the surface with aromatic herbs. And to top it off, spread the chopped garlic in a uniform layer. Next, roll the fillet into a roll, tucking one edge inward. We wrap the finished product in foil and put it in the oven. At a temperature of 190 degrees, the roll is cooked for about 35 minutes. You can unwrap the dish after it has cooled. Cut it into pieces and serve.

Mushroom roll

Mushroom rolls are very popular. Moreover, they are prepared in a variety of ways. In this recipe, mushrooms are used as a filling for chicken roll. The combination of chicken and mushrooms is a classic option that is always a hit with guests.

Ingredients:

  • fillet (1.4 kg),
  • onion,
  • champignons (0.6 kg),
  • salt,
  • pepper,
  • hard cheese (170 g).

We wash the fillet, dry it and cut it into layers no more than one centimeter thick. Next, carefully beat each piece on the board using a hammer. It is very convenient to use champignons for the roll. Cut the mushrooms into slices and the onions into half rings, then fry them together in a frying pan. Don't forget to add a little pepper and salt. Place the resulting mass in the center of each piece of fillet, and sprinkle the mixture with shredded cheese on top. Next, we roll the rolls, fastening them with threads. Place them in a greased baking dish and put them in the oven. The dish takes just over 30 minutes to prepare. After cooling, remove the threads from the rolls and cut them into medallions.

Cheese and meat roll

Products:

1. Hard cheese - 200 gr. 2. Eggs - 3 pcs. 3. Semolina - 3 tbsp. spoons 4. Mayonnaise - 100-150 gr.

Filling:

1. Minced meat - 500 gr. 2. Eggs - 2 pcs. 3. Onion - 1 pc. 4. Salt 5. Pepper

How to make cheese and meatloaf:

Grate the cheese on a coarse grater, mix with eggs, semolina and mayonnaise. Place the mixture on a baking sheet covered with parchment and place in the oven for 20 minutes at 180 degrees. Prepare the filling: add onion, 2 eggs, salt, and spices to taste to the minced meat. Take out the resulting cheese crust, cool slightly and spread the filling on it. Carefully roll up. Place in the oven for 40 minutes at 180 degrees.

Mushroom appetizer made from potato dough

Potato roll with mushrooms turns out very tasty.

Ingredients for making the dough:

  • egg,
  • two potatoes,
  • flour (230 g), salt.

For filling:

  • mushrooms (330 g),
  • cheese (65 g),
  • cream or sour cream (120 g),
  • flour (2 tbsp.),
  • pepper,
  • salt,
  • egg.

To prepare the dough we need potatoes. Boil the peeled tubers until tender and let them cool. Meanwhile, fry the mushrooms and onions. For the filling you can use wild mushrooms or champignons. Fry them until the liquid evaporates, then add sour cream or cream and add a few tablespoons of flour, a little salt and pepper. Fry the mixture for a couple of minutes until thickened. After the filling has cooled slightly, add chopped hard cheese to it.

Grate the potatoes. Add the egg and flour to it, then knead the dough. It should be quite dense and not stick to your hands. The amount of flour can be different, it all depends on the size of the potatoes.

Roll out the dough into a rectangular layer. Place the filling on it, distributing it evenly over the surface. Roll up the roll, place it on baking parchment and put it in the oven. Before baking, you can brush its surface with egg. Cut the finished snack potato roll into pieces and serve with sour cream.

"Tiger" roll

“Tiger” appetizer roll with red fish is an excellent option for a festive feast.

Ingredients:

  • red fish (salted, 280 g),
  • mayonnaise (80 g),
  • butter (90 g),
  • olives (120 g),
  • four eggs,
  • flour (2 tbsp.),
  • starch (2 tbsp.),
  • greenery,
  • salt,
  • ground pepper.

Mix flour, starch, eggs, salt, pepper and mayonnaise in a container. Mix the dough. We put some of it in a separate bowl and mix it with chopped herbs. Cover a baking sheet with paper and place the dough without herbs on it. Next, carefully spoon out the second part of the dough (with herbs). Slice the olives and place them on top. Bake the dough for 7-8 minutes in the oven.

Next we transfer it to the table. Lubricate its surface with oil, pour in chopped cheese and lay out fish fillets. Sprinkle lemon juice on top. If desired, you can add caviar, then the appetizer will be even more beautiful when cut. Roll it up and put it in the refrigerator for several hours. Before serving, cut the tiger roll with red fish into portions.

Roll “Herring in a fur coat”

Herring in a fur coat can be served not just in layers on a plate, but in the form of a roll. We will give a new form to a traditional and beloved dish.

Products:

How to prepare the Herring in a Fur Coat roll:

1. Boil beets, carrots and potatoes. You can buy beets boiled in the store. 2. Cool the vegetables, peel and grate on a coarse grater. 3. Peel the onion, finely chop and fry over medium heat in oil in a frying pan until golden brown. 5. Pour gelatin with water and leave for 30 minutes until it swells. Then heat (but don't boil!). Cool. 6. Mix cooled gelatin with mayonnaise. 7. In separate bowls, mix carrots, potatoes, herring pieces and onions with mayonnaise. 8. The simplest filling option is cheese with herbs. The ease of preparing such a snack does not in any way affect the taste.

Ingredients:

  • lavash leaf,
  • a bunch of greenery,
  • cheese (you can use suluguni, 130 g),
  • ham (80 g),
  • vegetable oil,
  • one yolk,
  • garlic.

To prepare the appetizer, you can use absolutely any cheese: hard, soft, feta cheese and suluguni. Depending on this, the taste of the finished dish will also change.

Finely chop the greens and grate the suluguni. Mix them in a bowl, add chopped garlic. Lay out a sheet of pita bread on a work surface and pour the filling onto it. Next, cut the ham into thin slices and place it on top of the cheese. Now carefully roll up the roll and place it in a greased mold. Bake the appetizer in the oven. Absolutely any filling is suitable for preparing this dish. For convenience, you can use ready-made puff pastry purchased at the store. Having a base, the dish is easy to prepare in a matter of minutes.

We suggest making rolls with sausage and cheese.

Ingredients:

  • puff pastry packaging,
  • cheese (230 g),
  • sausage (280 g),
  • olives or black olives (80 g).

Products:

  • Herring fillet – 200 gr
  • Lavash 6 sheets - size 30x22cm.
  • Mayonnaise – 200 gr
  • Boiled carrots – 150 g
  • Boiled beets – 200 gr
  • Eggs – 3 pcs.
  • Boiled potatoes – 150 g
  • Pickled onion – 100 gr
  • Parsley - to taste
  • Salt to taste

Holiday roll

As a festive option, you can prepare a wonderful salmon roll for the table.

Ingredients:

  • flounder fillet (370 g),
  • two large salmon fillets,
  • green peas (320 g),
  • carrot,
  • white bread without crust (270 g),
  • milk (120 g),
  • one protein,
  • nutmeg,
  • salt,
  • olive oil,
  • pepper,
  • parsley.

The carrots must be peeled and boiled in lightly salted water. Then let it cool a little and cut into cubes. Wash and chop the parsley. We peel fresh white bread from the crust, after which we soak the pulp in water. To prepare the dish we need flounder fillet. We turn it into puree using a blender. Next, add soaked bread, pepper, nutmeg, salt, and protein to the resulting mass. Mix the filling, add parsley, carrots and peas to it, mix everything again. Place the mixture in the refrigerator.

Now that our filling is ready, we can move on to preparing the fish. Take the fillet and cut off the excess layer of meat on one side. As a result, we should have a layer of approximately the same thickness. The second fillet must be cut in approximately the same way. As a result, we will get three pieces, two of which are slightly larger and one smaller. Place the filling in the middle of the largest one, and cover the top and sides with the remaining two parts of the fish. To hold the roll together, you can use toothpicks. Grease the top of the roll with oil and wrap it in foil. Bake the dish in the oven preheated to 200 degrees. Then take out the roll and leave it to cool. Before serving, remove the foil and cut our appetizer into portions.

Chicken roll “Peacock eye”

Festive roll made from chicken meat and minced meat with eggs and spinach. Looks beautiful in cross-section.

Bake the roll in a cake pan. Depending on the size of the form, the quantity of products will be different.

Products:

1. Chicken fillet - 3 large or 4 smaller (1 - 1.2 kg) 2. Minced chicken - 1 kg. 3. Eggs – 9 pcs. 4. White bread or “yesterday’s” loaf – 3 slices 5. Milk – 100 ml. 6. Fresh spinach – 1 bunch 7. Onion – 1 onion 8. Butter – 2 tbsp. spoons 9. Salt 10. Ground black pepper 11. Seasoning for chicken

How to make Peacock Eye chicken roll:

1. Hard boil 8 eggs, cool them and peel them. Wash the spinach and tear off the leaves. Place the leaves in boiling water for 1 minute to soften. Since we then need even leaves, so as not to waste time straightening them, stack the leaves in a slotted spoon, press the stack down with a spoon and lower it into boiling water. Once the leaves are limp, remove the slotted spoon and rinse the leaves with cold water. Place on a plate. 2. Prepare regular minced meat, as for chicken cutlets. To do this, add finely chopped onion, crustless bread soaked in warm milk, an egg, salt, ground black pepper and chicken seasoning to the minced chicken. Mix everything well and beat it. Even if we end up with extra minced meat later, we can make several delicious cutlets from it. 3. Cut the fillet into pieces and pound very thinly through the film. Let's add salt and pepper. For me, this part turned out to be the most time-consuming. 7 boiled eggs should be wrapped in spinach leaves. You can use at least several layers - the leaves stick and hold on well. 4. Now let’s assemble the roll. Line the greased pan with chicken chops. Leave a few pieces to cover the top of the roll. 5. Lay out some of the minced meat and smooth it out with a damp hand. Place eggs in spinach on top of the minced meat. 6. Place minced meat on top of the eggs again and cover everything with chops. Grease the roll with butter. To prevent it from baking prematurely, cover the top with foil. Place the pan with the roll in the oven, preheated to 180 degrees. I baked my almost 2 kilogram roll for 1 hour and 45 minutes. 1 hour with foil and 45 minutes without foil. If you have a smaller roll, the baking time will decrease accordingly. 7. Let the finished roll cool well. Decorate with grated boiled egg: first, three whites, then the yolk. To make the egg stick better to the roll, you can grease it with melted butter. You can use your imagination and decorate as you wish. 8. Cold roll is well cut into thin slices with an egg “eye” in the middle. ​

Minced chicken roll

When discussing the topic of how to prepare appetizer rolls with meat, it is worth remembering another wonderful recipe. To prepare it we need minced chicken. Meatloaf stuffed with whole eggs is a great option for the holiday table. Cooking such a dish is a real art.

Ingredients:

  • seven eggs,
  • minced meat (950 g),
  • two onions,
  • two slices of white bread,
  • garlic,
  • carrot,
  • milk (40 g),
  • a mixture of peppers and salt.

The bread must be cut into pieces and placed in milk to soften them. Chop the onion and garlic, and grate the carrots. In a container, combine minced chicken, chopped vegetables, bread and add two eggs. The mixture must be salted and a mixture of peppers added to it. Stir the minced meat until smooth, then beat it. This simple procedure will allow you to form a roll later.

Boil five eggs hard, cool and peel. Next we need a form. Place foil on the bottom and grease it with oil. Place half of the minced meat on top, level its surface and place boiled eggs in a row in the middle. Cover them with the second part of the minced meat. Roll the roll using foil. Bake it in the oven for about 45 minutes. You can cut the snack into portions after it has cooled completely.

Onions - 300 gr. 10. Ghee - 2 tbsp. spoons 11. White wine and broth - 250 g each. 12. Leeks - 2 stalks 13. Root celery - 250 gr. 14. Carrots - 300 gr. 15. Flour - 3 tbsp. spoons 16. Sour cream - 130 gr.

How to make Geneva meatloaf:

Peel the carrots and chop into thin strips. Crush two cloves of garlic in a mortar with a pinch of salt. Coat pork schnitzels with table mustard and garlic. Place a strip of bacon on each schnitzel. In a bowl, combine minced meat and one raw egg, mix. Place the meat filling on top of the bacon slices. Sprinkle everything with carrot sticks. Roll the rolls and secure them with wooden toothpicks. In a Dutch oven, fry the rolls and onion cubes in melted butter. Add white wine and broth to the Dutch oven. Simmer the meat and onions under the lid for fifty minutes. Cut leeks, celery root and carrots (300 grams) into small pieces. Place the prepared vegetables in boiling salted water for three minutes. Remove the rolls from the roasting pan. Add flour, sour cream and blanched vegetables to the sauce in the pan. Stir. Simmer for five minutes. Serve meat rolls with vegetables and white sour cream sauce.

Salmon rolls

It’s hard to imagine a holiday table without salmon. Any dish based on fish is a definite success. Salmon can be used to prepare a wide variety of dishes. It is especially good as a snack. Salmon rolls with cheese and cucumber are prepared very quickly. And the taste of the dish will not disappoint you. For preparation, we also need soft cheese and sandwich cheese.

Ingredients:

  • hard cheese (four slices),
  • salmon (4 slices),
  • cucumber,
  • sesame,
  • dill,
  • soft cheese (you can use Philadelphia cheese, 4 tbsp.).

Place pieces of fish fillet on a cutting board. Place slices of hard cheese in a single layer on top. Now let's start preparing the filling for the rolls. In a container, mix any soft cheese (mascarpone or Philadelphia) with chopped herbs. Add salt and pepper.

We spread the filling on the cheese, and place thin slices of cucumbers on top (you can use both fresh and pickled cucumbers). Next, carefully roll the products into a roll. It is convenient to do this if you initially put cling film or foil under the fish. Place the finished roll in the refrigerator for an hour. Before serving, cut it into portions. Sprinkle the top of the dish with sesame seeds.

Boiled liver roll with spicy creamy filling

Today I want to offer you a very healthy and tasty boiled liver roll.

Products:

1. Beef liver - 1200 gr. 2. Milk - 200 gr. 3. Onions - 2 pcs. 4. Carrots - 2 pcs. 5. Butter - 150-200 gr. 6. Red pepper - 1 pc. 7. Salt, pepper, ground bay leaf bay leaf 8. Garlic - 3 cloves 9. Dill 10. Vegetable oil - 2 tbsp. spoons

How to prepare a boiled liver roll with a spicy creamy filling:

Ingredients: smoked chicken (or boiled fillet, 180 g), processed cheese (120 g), thin pita bread (2 pcs.), Korean carrots (120 g).

First, let's prepare the filling. Cut the smoked chicken fillet into pieces and grate the cheese. We also need Korean carrots. You can prepare it yourself or buy it ready-made in the store.

For further preparation, take two sheets of thin pita bread. Lubricate one with mayonnaise. And put shredded cheese on top. Cover it all with a second sheet. We press our palms on the two layers so that they stick together tightly and turn into a single whole. We also grease the surface of the second pita bread with mayonnaise and place Korean carrots and pieces of chicken fillet on it. Next we roll the roll. If you plan to serve the appetizer immediately, then you should cut it into pieces. Otherwise, you can put the roll in the refrigerator, wrapping it in film.
