As soon as I read it, I decided to try to cook such meat, which is what I did that same evening. My husband was pleasantly surprised by the attractive aroma as soon as he entered the apartment, and then it got better, he gobbled up the juicy pork with such appetite that I had to cook this dish the next evening too, he really asked me to. I also liked the meat, and for cooking I used homemade adjika, so it turned out very juicy and a little spicy, and the potato coat is an additional side dish. Step-by-step cooking recipe
1) Wash the loin well under running cold water, make a cut lengthwise, as shown in the video.
In a separate container, mix salt, pepper, garlic and olive oil.
Rub the loin well on the inside and outside.
Leave to marinate for 3-4 hours in a cool room.
2) For the filling, grate an apple, mix with horseradish, beets and finely chopped smoked bacon.
Place the prepared filling on the meat layer and spread in an even layer.
Roll the loin into a roll and tie with twine.
3) Pack the loin in foil, or preferably in a sleeve, and bake for 50 minutes at 180 C.
Then remove from the foil (sleeves) and place in the oven for another 20 minutes to form a beautiful crust.
