Good day, my dear cooks! Did you know that the history of the beloved juicy steak goes back to Ancient Rome? Yes, that’s when they started frying large pieces of meat on the fire. True, they did this not for food, but for sacrifice. Today, steak is a popular dish. But not everyone can cook it. There are so many subtleties and nuances here. But don't be alarmed. This can be learned. I'll tell you how to fry a pork steak in a frying pan.
Which meat is better to choose?
Until recently, steak was prepared exclusively from beef. But “progress,” as we know, affects all areas of life and cooking is no exception. That’s why today you can cook it from anyone, even from antelope. But today we will cook pork steak.
When purchasing pork, pay attention to its color. It should be pinkish, without rainbow tints. The darker the meat offered to you, the older the animal. Also pay attention to its marbling. This term refers to the uniform distribution of fat throughout the meat. But fat and marbling are not the same thing. For steak, try to choose pieces of pork with the optimal amount of fat, but not excessive.
Tenderloin steak is guaranteed to be the softest and juiciest. She has soft meat that is difficult to spoil
Just cut off the film from the meat first. It can be removed quite easily with a knife.
But choosing the pork is only part of the story. A perfect steak has 3 components:
- Remove it from the refrigerator 20 minutes before cooking. Otherwise you will get cold meat inside with a burnt crust.
- The piece of meat you are cooking should be thick. Not less than 2.5 cm, but not more than 4 cm.
- If you purchased uncut pork, you need to cut the steaks correctly. Remember that you only need to cut them across the grain!
How long to cook
How long to fry the meat depends on what kind of steak you want to get. If you like the delicacy “rawer”, this means that the fried piece can be thicker. Yes, and the meat provides different degrees of roasting:
Minimum doneness (very rare) - fry the meat on each side for no more than 1-2 minutes. The pork remains blue-pink when cut, and the texture is tender. Cooked meat is slightly warm inside.
Rare - cook for 2-3 minutes on each side. This will keep the texture of the meat soft and spongy. And when cut, the piece will have a red color.

Medium is the most common way to fry meat: it has a little blood on it. Fry for about 4 minutes on one side and then turn the piece over. And cook the second side for 3-4 minutes. As a result, the meat will have a springy texture and will retain a reddish color in the center.

Well done steak – cook each side for at least 3 minutes. In this case, the pork should be fried over high heat. After this, the meat is cooked over low heat for 6-8 minutes. The finished steak has a dense texture and a uniform brownish tint.

Step-by-step recipe with photos of pork steak with spices
A simple way to cook pork. By beating the pork, the meat is so tender and soft. And it is prepared with a minimum of oil.
- 2 pieces of pork;
- salt;
- pepper;
- Provencal herbs;
- hot paprika;
- olive oil.
Cut the meat up to 2 cm thick and beat well with a kitchen hammer. The best way to do this is to wrap the meat in cling film. This will soften the fibers and the meat will cook faster and be softer. Sprinkle herbs and spices on both sides.
Grease the grill pan with a thin layer of olive oil. Place the chopped pieces of pork. Fry on both sides until browned and with characteristic stripes from the furrows of the grill pan.
Serve with boiled potatoes, tomatoes and lightly salted cucumbers.
The nuances of working with food
- Don't be under the illusion that a stove can replace an open fire and fry the thickest pieces well. Therefore, when frying, always beat off the pieces and make them about one and a half centimeters. Otherwise, they will not be cooked well and will be raw (although lovers of rare steak will appreciate it).
- Perhaps you can remain calm only because of the thickness of the fish or chicken breast. These foods will still cook fairly quickly.
- Also cut the vegetables into thin pieces. And the potatoes (they will definitely be cooked) before placing them on the ribs.
- Add spices and herbs, especially fresh ones. When exposed to heat, they will impart a pleasant aroma to the dish. In general, you have a lot of room for creativity and imagination.

How to cook bone-in pork loin steak
To make the meat in a frying pan tasty, you must first marinate it in spices. In this recipe we will prepare a marinade from lemon zest, garlic and chili pepper.
- 2 pork loins on the bone (about 2 cm thick);
- 1 tsp red chili pepper;
- zest of 1/2 lemon;
- 2 large cloves of garlic;
- ground black pepper - to taste;
- 4 tbsp. l. olive oil;
- salt - to taste.
Rinse the meat and dry with a paper towel.
Finely chop the garlic and chili pepper. Pour olive oil into a bowl, add chopped garlic, chili pepper, and grated zest of half a lemon. If you have sage leaves, tear them into small pieces and add to the marinade. Stir the finished filling.
Dredge the meat in this marinade on all sides and set aside for at least 30 minutes. This way it will be better saturated with flavors.
Grill on each side until the meat is well cooked. At the end of cooking or on the plate, sprinkle salt to taste.
