Required:
- Potatoes - 3 pcs.
- Onion - 1 pc.
- Carrots - 1 pc.

For the meatballs:
- Minced meat – 300 g
- Garlic - 3 cloves

Soup with vermicelli and meatballs and potatoes
1. Peel the onions and cut into cubes.
2. Grate the carrots on a coarse grater.

- sunflower oil;
- spices with salt.
Preparation progress:
- Peel and grate the carrots.
- Chop the pepper into cubes.
- Peel the tomatoes and cut them into small cubes.
- Heat the oil in a frying pan and fry the peppers and carrots in it for five minutes.
- Add the tomatoes and simmer for another six minutes.
- Grate the cheese.
- Add vegetables to boiling water, add salt and pepper.
- Add beans with liquid.
- Add pasta and cook for 10 minutes.
- Pour balsamic vinegar and add cheese.
- Stir the soup and remove from heat.

The dish turns out tasty and pleasant for easy saturation.
Required:
- Vermicelli – 50 g
- Potatoes - 120 g
- Onions - 60 g
- Carrots – 60 g
- Sweet pepper - 60 g
- Petiole celery – 60 g
- Vegeta seasoning - 2 tbsp. l.
- Vegetable oil - 2 tbsp. l.
- Water - 1.5 liters
How to make Lenten noodle soup
1. Cut the peeled vegetables into small cubes.
2. Place a stainless steel pan with a thick bottom on the fire. Pour in vegetable oil. Fry diced carrots, onions and celery in oil until soft.
3. Then pour 1.5 liters of water into the pan with the fried vegetables. Bring everything to a boil and add the diced potatoes.
4. Add 2 tbsp. l. Vegeta seasonings. Next, add the diced bell pepper. Let the soup simmer a little.
5. The last step is to add small vermicelli to the soup. Stir well to prevent the vermicelli from sticking to the bottom of the pan. Continue cooking the soup until the vermicelli is ready. Taste and add salt if necessary. Close the lid and let stand for 15 minutes.
6. Pour the finished soup into bowls and scatter the chopped green onions.
Step-by-step preparation
Prepare the necessary ingredients for the soup. Peel carrots, onions and potatoes.
Rinse the meat thoroughly with cold water. Pour 4 liters of water into a saucepan and put on fire. When the water boils, add the beef. Cook for about 1.5 hours. After this, add salt to the broth and cook for another 30 minutes.
Adviсe:
- for soup it is better to take meat with a bone, since with such beef the broth turns out tastier;
- For the broth to be clear, the heat should be below medium. When cooking, the lid of the pan should be closed. If you leave it open, some of the broth will evaporate. By adding water, you will already spoil the taste of the dish.
When the beef is completely cooked, remove it from the broth and place it in another bowl to cool.
Be sure to strain the broth from any small seeds that may be present.
When the meat has cooled, cut it into small pieces and put it aside, covering it with a plate on top.
Cut the peeled carrots into thin slices.
Cut the potatoes into strips.
Finely chop the onion.
Place the chopped vegetables in the broth and cook for 10 minutes.
Next, add the vermicelli to the boiling broth and stir immediately so that they do not stick together. Cook the vermicelli for no more than 5 minutes. Over a longer period of time they will simply be digested.
