Haddock is a very large fish, its average length is 70 cm, and its weight is 3 kg. But sometimes fishermen catch individuals that reach a length of 1 m and their weight is 17-19 kg!

The body of the haddock is slightly flattened laterally and tall. The color is silver, the belly is milky white, the sides are also light, but the back is dark gray with a lilac tint. A little below the back, along the entire body, the haddock has a black horizontal line, and near the head on each side there is a dark oval spot. It is this spot that is the main difference between fish of this species. By it, individuals recognize each other and gather in large flocks. This way of life allows them to notice seals, large fish and other predators earlier. Another difference between haddocks is that they have 3 dorsal and 2 anal fins.

In grocery stores, this fish is sold fresh, smoked and dried, but most are sold frozen. Haddock meat, white, not fatty, with a delicate taste, is a dietary product. It is compatible with hot spicy sauces, various vegetables and seasonings.

The appetizing appearance and beneficial properties of this fish, as well as the elasticity of the meat, are preserved after any cooking method. If you boil or steam haddock, its fillet will contain virtually no fat, which allows it to be included in the diet of those people who are on a diet. Compound:

  • You need to prepare the ingredients: four or five fish, 150 milliliters of soy sauce, six tablespoons of tomato paste, 200 milliliters of low-fat sour cream, 200 grams of mayonnaise, five bay leaves, salt, pepper and garlic.
  • When the carcass is defrosted, it will need to be cleaned outside and inside, rinsed, divided into small pieces, and then dried using napkins.
  • Soy sauce is mixed with chopped garlic, and the haddock remains in the resulting marinade for 15-20 minutes.
  • The baking tray is oiled and a little water is poured onto it. The fish is placed on the surface, and bay leaf, garlic and ground pepper are placed on top of it.
  • The oven is heated to 180 degrees, the fish is cooked for about half an hour.

  • The marinade in this case is prepared from four tablespoons of vegetable oil, a couple of tablespoons of raspberry vinegar, a tablespoon of soy sauce, two cloves of garlic, a teaspoon of seasoning mixture and a pinch of salt. In addition, you will need 500 grams of fish, one bay leaf and three peppercorns.
  • Salt, seasoning, chopped garlic, soy sauce, raspberry vinegar and sunflower oil are poured alternately into a deep container. Everything is mixed well, after which the fish, divided into six pieces, is soaked in the solution.
  • The container is closed with a lid, and the haddock is marinated in the refrigerator for twenty minutes. Then the pieces need to be turned over and left to cool and soak for the same amount of time.
  • At the next stage, the pieces are transferred to a baking dish, filled with marinade and supplemented with peppercorns and bay leaves.

In cream with cheese

A very appetizing dish is obtained if you cook haddock in cream and cheese.

  • For a kilogram of fish you will need a glass of grated cheese, three tablespoons of flour, three tablespoons of vegetable oil, one and a half tablespoons of cream, one onion, paprika, a teaspoon of salt and a teaspoon of mustard powder.

With mushrooms

  • To prepare baked haddock with mushrooms, you need to take 700 grams of fish fillet, 500 grams of mushrooms, 300 grams of hard cheese, four onions, 150 milliliters of mayonnaise, 50 milliliters of lemon juice, salt, spices and vegetable oil.
  • The fillet is defrosted, washed and dried. It is necessary to divide it into two equal parts.
  • The onion is peeled and chopped into rings, and the mushrooms are washed and finely chopped. Mushrooms and onions are fried in a frying pan, and when cool, sprinkled with grated cheese.
  • The fish is salted, peppered and lightly sprinkled with lemon juice. One part is covered with the mushroom mixture, and the second is placed on top of it. Everything is coated with mayonnaise and then baked in a sleeve for twenty-five to thirty minutes. The oven should be preheated to 180-200 degrees.

  • The list of ingredients includes two fish, two tomatoes, two medium-sized eggplants, a couple of onions, 150 grams of hard cheese, 50 milliliters of lemon juice, six tablespoons of olive oil, salt, spices and dill.
  • Properly prepared haddock is sprinkled with salt, spices and lemon juice. While it is marinating for twenty minutes, the dill should be finely chopped and then placed inside the belly of the fish.
  • Vegetables are cut into small pieces. First, the onion is fried in vegetable oil until it acquires a golden color, after which the rest of the vegetables are sent there, and everything is stewed together for a quarter of an hour.
  • Using prepared vegetables in a baking dish, you need to form a bottom layer and place the fish on it.
  • The oven is heated to 200 degrees, the timer is set for forty minutes.

Cooking features

Even a novice housewife can bake haddock in the oven, especially since this fish is usually sold gutted without a head. However, to get the best results, the cook needs to know and take into account several important points.

  • You can buy haddock frozen in the form of gutted carcasses without heads, steaks, fillets with or without skin. Cutting haddock into steaks or fillets is not a difficult task, so unless you're in a big hurry, there's no point in paying extra. To fillet the fish, you need to let it thaw, then run a sharp knife along the spinal bone, dividing the carcass into halves, and remove the spinal bone. All you have to do is pull out the remaining bones from the fillet with tweezers and remove it from the skin. Before cutting into steaks, the haddock is cleared of scales, then cut with a sharp knife into pieces 2-3 cm thick.
  • When purchasing haddock, it is important not to purchase a product that has been lying around for a long time or has been stored incorrectly. The presence of spots on the carcass, too dry and broken fins indicate that the fish is not fresh. If snow or water is found in the package, this indicates that the product was not stored correctly: most likely, it was defrosted and re-frozen several times. Such fish may be unsafe for health, even if its expiration date, according to the information on the packaging, has not yet expired.
  • Haddock meat is not fatty, so when defrosting this product it is especially important not to let it lose its juiciness. It is best to allow the fish to thaw at a temperature of about 5 degrees. There is no point in speeding up the cooking process using a microwave or warm water, as this will cause the haddock to lose a lot of moisture and become completely dry.
  • Haddock is baked in the form of steaks or fillets. To prevent it from losing its juiciness during cooking in the oven, sour cream or mayonnaise and juicy vegetables are often used. Using foil or even a cooking sleeve gives good results. When baking in foil or a sleeve some time before readiness, it is recommended to tear them apart to give the appetizer a chance to brown.

  • Haddock – 1 kg
  • Milk – 1 tbsp.
  • Hard cheese – 50 g
  • Vegetable oil – 1 tbsp.
  • Mayonnaise – 5 tbsp.
