  1. I take the butter out of the freezer and leave it in the kitchen to soften.
  2. Wash the flounder thoroughly. I take the carcass without the head. After rinsing, I let the water drain and gently wipe with towels.
  3. I put it on the kitchen board so that the yellow skin is on top. Using a kitchen knife, I make several cuts diagonally, as for frying in a frying pan.
  4. I remove the fins. I sprinkle salt on all sides. I place it on a baking sheet that has been previously coated with vegetable oil.
  5. I turn on the oven. I heat it up to 220 degrees. I'm sending you to get ready.

  • Flounder – 1 medium-sized piece.

  • Onion – 2 heads.
  • Lemon – 1 piece.
  • Greens (dill) – 1 bunch.

Whole flounder baked in the oven - recipe

Garlic always adds piquancy and a pleasant aroma. It can also be used on fish. To soak it, make a garlic-lemon sauce based on olive oil. If you don’t have olive oil, take any other odorless vegetable.

You can also remove the lemon if you wish if its taste seems too sour. We prefer to cook this way.

Let's take:

  • 2 flounders,
  • 3 garlic cloves,
  • 2-3 tbsp. vegetable oil,
  • 0.5 tsp coriander,
  • juice of 0.5 lemon,
  • 1/3 tsp. dried rosemary (you can use fresh)
  • salt and pepper to taste.

Step 1. First, you need to prepare the carcass. Remove the frozen product from the bag and leave it at room temperature. This way it will defrost correctly and evenly.

If you have a whole fish, then you need to decapitate and gut it. Use scissors to trim the fins and tail. Then rinse thoroughly from the inside.

There should be no dark film left in the belly; it must be removed, otherwise the meat will become bitter.

If your fish was sold without a head, then just cut off the fins and tail and wash.

The prepared carcasses need to be dried on a paper towel and we make cuts along the entire length of the flounder, both along the back and belly. The cuts can be straight, diagonal or diamond-shaped. This is optional.

Step 2. Next you need to prepare aromatic oil for soaking the fish. To do this, pour 2 tablespoons of olive oil (sunflower) into a bowl. Squeeze the garlic cloves into it. Add ground pepper and juice of half a lemon.

For aroma, add dried rosemary and grind the coriander in a mortar. Mix the filling.

Step 3. Take a flat baking sheet. We lay a silicone mat on it. It will prevent food from sticking to the surface of the mold.

We place the carcasses at a short distance from each other. Pour the prepared aromatic oil filling into the slots. We try to get inside the slots. Rub the sauce over the entire surface of the fish from the back and belly. Then salt evenly.

Important! When defrosting, the fish loses a lot of moisture, the already lean meat becomes drier. Therefore, it is important to coat it with something greasy. For example, vegetable oil or butter. Preheat the oven at 180 degrees and insert the mold for 20-25 minutes. This time is enough. If the meat is not covered with foil and left for a longer time, it will dry out and lose its juiciness.

  6. I grate a piece of hard cheese on a coarse grater. I add it to the bowl with chopped vegetables. I stir.

  1. I wash the fish fillets under running water. Dry to remove excess liquid.
  2. I peel the onions, wash them and pour boiling water over them to get rid of the bitter taste. I cut it into half rings. I transfer it to a separate bowl, add sour cream and mix.
  3. I take a baking dish and pour in vegetable oil. I place the fish. I put salt and a mixture of fish spices on top (to your taste and discretion).
  4. I spread the onion-sour cream mixture on top of the fillet. I spread it evenly over the surface of the fish.
