Is it possible to freeze berries
There is an opinion that frozen berries are not only tasty, but also not healthy at all. But no, we tell you. Scientists have found that when berries are sent into deep freezing, only ten percent of their beneficial qualities are lost. For comparison, when berries are cooked, the vitamins are completely lost, and when dried, only half remains. The conclusion is not difficult to draw. Deep freezing is the best way to store berries year-round.
In addition, frozen berries will not only provide indispensable help during colds and viral diseases, but will also help make the dishes on your table more tasty, colorful and varied.
Another nuance for those who are losing weight or simply watching their weight: frozen berries are low-calorie. In terms of calorie content, they are on par with fresh ones.
It is best to freeze the berries yourself, following all the rules. Then you will have a wonderful supply for winter times. You can, of course, buy berries in a supermarket, but who knows whether all the rules for storage and transportation were followed. And if the package is closed, then you don’t even know what kind of surprise awaits you. Therefore, do not be lazy, but carry out the freezing process yourself, if possible.
Does freezing spoil the taste of berries?
Freezing mainly affects the appearance: ice breaks the internal structure of the berry, it becomes flabby and watery.
And, especially if we are talking about fragile strawberries or raspberries, it will not be possible to make a whole and beautiful “berry again” out of them. The taste does not change so dramatically, especially if you are not going to eat the berries on their own, but boil them or put them in a cake. The exception is gooseberries; they retain their shape quite well if they were picked a little unripe, with a thick skin, but if you bite into it, there is a tasteless puddle inside. To make thawed gooseberries look “like alive,” you can cheat and marinate them for half an hour with mint, oregano or thyme, add sugar, lemon juice or vinegar, preferably balsamic. Such reconstructed gooseberries can be used not only in baking, but also as a bright accent in salads, served with fried fish or meat.
Frozen berry jelly
Before preparing jelly from frozen berries, any housewife needs to know a few basic rules:
- If the recipe does not require it, then the berries do not need to be thawed first.
- Start cooking by preparing a decoction.
- Starch should serve as a thickener. This is what determines how thick the jelly will be.
- Before adding starch to the broth, it must be diluted with liquid.
- And the last step is the introduction of starch into the broth, gradually.
Berries under the snow
For cooking you need the following products:
- 400 g frozen berries, assorted, of your choice;
- starch 90 g;
- sugar 120 g;
- water - a liter for decoction and a glass of water for starch.
Preparation:
- Mix the berries, add a liter of water and place on the fire. You need to let them boil for five minutes. Then you can strain them and squeeze them out, or leave them in the decoction.
- Add sugar to the hot broth and let it dissolve for a few minutes. You can speed up the process by stirring with a spoon.
- Dissolve the starch in a glass of water and carefully, stirring constantly with a spoon, add to the broth.
- Then bring the resulting jelly to a boil. Refrigerate.
Using this recipe, you will get a thin, but very tasty and healthy jelly.
For those who like to eat jelly exclusively with a spoon, cutting through the thickness, there is the following recipe:
- take your favorite frozen berries in the amount of 400 g;
- 150 g starch;
- water - a liter for decoction and a glass of water for starch;
- sugar 170 g.
Preparation:
- The berries should first be thawed and ground in a blender.
- Pour a liter of water into the resulting mixture, add sugar and place everything on the fire.
- As soon as the water starts to boil, start mixing the starch in a glass of water.
- Let the broth boil for a couple more minutes and pour in the starch.
- Now stir constantly and cook the jelly until completely thickened. But don't boil!

We bake a cake from the dough with the edges raised high, place it on a flat dish, and cool. Grease the pie with sweet butter (beat with a mixer or a blender a little butter with 2-3 teaspoons of powdered sugar). Cut the frozen strawberries in half and place tightly on the pie. It is better to serve the fruit drink chilled (you can add ice cubes to it).

You can make jelly from frozen berries

Prepared by Tatiana Krysyuk
Why do I love desserts using frozen berries? Simplicity and quick preparation at any time of the year, as well as the ability to change flavor combinations ad infinitum.
I suggest making a quick layered dessert using frozen strawberries in a glass.
The active cooking time takes literally 15-20 minutes, but you need to take the strawberries out of the freezer in advance so that they thaw a little and release the juice, which will then be useful for soaking the cookie layer. And cutting slightly thawed strawberries is much more convenient.
My cookies are strawberry flavored. But this dessert also goes well with cookies with a creamy taste or with the aroma of baked milk. And with chocolate cookies, the dessert will not only be tasty, but also more colorful.
Immediately mix the yogurt with powdered sugar. The amount of powder is to taste, depending on the sweetness of the cookies and berries.
Drain the juice from the thawed berries and mix it with cognac - this is an impregnation for cookies. We chop the berries themselves arbitrarily. Grind the cookies with a rolling pin or in a blender to the desired consistency. I left large pieces.
The dessert ingredients are ready and ready to serve. I suggest placing the dessert in portioned transparent glasses or bowls so that all layers are clearly visible.
Place 2 tbsp on the bottom of each glass. cookie crumbs, compact the layer a little and sprinkle with a small amount of strawberry juice and cognac (about 1/2 tsp of the mixture). Next, lay out a full tablespoon of berries and level them. Place 2 tbsp on the berries. yogurt mixed with sugar. We repeat the layers.
Place the desserts in the refrigerator to cool and soak. 1 hour is enough for the cookies to soak in juice.
Before serving, decorate desserts to your liking. You can decorate the frozen strawberry dessert with berries and mint or sprinkle with cookie crumbs.
Bon appetit!

Ingredients:
- 250 ml milk

- Cut the banana into arbitrary pieces.
- Place frozen berries, banana and milk in a blender and blend until smooth.
- Pour into a glass, garnish with a mint leaf and a few berries (optional).
Compote
In summer you need to drink a lot. What could be better than homemade compote? You can prepare it in just 5 minutes! The berry reserves will be used up quickly and profitably. Thanks to quick cooking, the drink will retain most of the vitamins that pass from the fruit into the water. Prepare compotes for children: they are gentler on the child’s stomach than juice, but no less healthy.
Ingredients:
- 100 g frozen cherries
- 100 g frozen blackcurrants
- 100 g frozen plums
- sugar - to taste
