To make sherbet with peanuts at home you will need:

  • cream (fat content 33%) – 330 g
  • sugar – 450 g
  • peanuts (raw) – 250 g
  • butter – 50 g

First of all, let's prepare the peanuts. Pour it onto a baking sheet and place it in an oven preheated to 170 C for 10 minutes. During this time, take out the baking sheet 2-3 times and mix the nuts thoroughly.

Dry/fry the peanuts until lightly browned, do not fry too much, as in this case the peanuts can give our sorbet a bitter taste. Optionally, if you don’t really want to bother with the oven, you can fry the peanuts on the stove in a dry frying pan. Only in this case, the nuts need to be stirred more often so that they do not burn.

Let the roasted nuts cool slightly and peel them. This is done very simply, just rub a handful of nuts between your palms. Place the peeled peanuts into a suitable container and set aside for now.

Let's prepare the sherbet itself. Pour the heavy cream into a deep saucepan or a small saucepan with high walls and add 350 g of sugar to it. Mix. Place the saucepan over low heat and, stirring occasionally, bring the mixture to a boil.

While the cream and sugar are warming up, pour the remaining 100 g of sugar into a dry frying pan.

And over medium/high heat, melt the sugar until it becomes an amber caramel.

At this stage we act carefully, it is important not to over-expose the caramel, as it can become bitter! So let's not get distracted!

Once the caramel is ready, carefully pour it into the cream and sugar mixture.

We proceed with caution! The mixture will begin to foam! By the way, the caramel will turn into a lump, this is how it should be, then this lump will dissolve

Under the saucepan, turn on the heat a little more than medium and begin to simmer the mixture. Cook the sorbet for 30-40 minutes, stirring it constantly (especially at the very end of cooking, do not be distracted for a minute). Cook the sherbet until it reaches the consistency of thick caramel sauce or slightly undercooked condensed milk.

Remove the saucepan from the heat and add soft butter. Mix thoroughly until a homogeneous and smooth mass is obtained.

Line a 13x24 cm mold with parchment and lightly grease it with vegetable oil (by the way, prepare the mold in advance).

  2. The recipe uses strawberries, raspberries, bananas and peach. The technique for preparing for freezing is somewhat different. The peach should be washed and pitted, and then cut into slices. Just wash the strawberries and raspberries (very gently and carefully). Peel the banana and cut into slices. The freezing temperature should be -18°C or lower. Therefore, make room in advance in the freezer with the lowest temperature (usually they have a “quick freeze” section).

Preparing strawberry + basil sorbet

  1. Measure out 60 g (50 ml) condensed milk.
  2. Measure out 300 g of frozen strawberries. We leave a couple of pieces for decoration. Wash and dry 4 basil leaves.
  3. Pour strawberries into a blender bowl, throw in basil and fill it all with condensed milk.
  4. Turn on the blender at the highest speed and beat until you get a perfectly homogeneous mixture. If you have an immersion blender, then you need to give the strawberries 5 minutes to thaw a little.
  5. Place the resulting mixture in a freezer form. This could be a plastic bowl, a paper cup, a silicone mold - in general, anything that can be put in the freezer.

Preparing sorbet “banana + cocoa + mint”

  1. Measure out 300 g of frozen bananas. Wash and dry the mint sprig (4 leaves).
  2. Add 4 tablespoons of cocoa powder. It is better to sift through a strainer.
  3. Pour all the listed products into a blender bowl and pour in 60 g of condensed milk.
  4. Beat at high speed until smooth.
  5. Pour it (it turns out to be a rather liquid mass compared to the previous sorbet) into a container for freezing and decorate with bananas and mint.
  6. Place in the freezer for 5-6 hours.

Preparing raspberry sorbet

  1. We measure out 300 g of frozen raspberries and 60 g of condensed milk.
  2. Beat the ingredients in a mixer.
  3. Place in a container to freeze.
  4. Decorate with raspberries. Let it stand in the freezer until completely frozen, 5-6 hours.

Preparing peach + lime sorbet

  1. Measure out 300 g of frozen peaches.
  2. Measure out 60 g of condensed milk.
  3. Finely grate the zest of 1 lime (green part only). In the bowl of a blender, beat together all the listed ingredients until smooth.

  • 120 milliliters unsweetened yoghurt.
  • 70 grams of powdered sugar.

  • 30 grams of sugar.

  1. The juice is poured into a saucepan and sent to the stove. As soon as it is heated, add sugar and wait until the grains are completely dissolved. The resulting syrup is divided in half. Add crushed strawberries to one part and kiwi puree to the other.

  • 560 milliliters of water.
  • 250 grams of sugar.
  • A couple of tablespoons of starch.

The washed berries are poured with half a glass of water and crushed using a blender. The resulting puree is placed in a small saucepan and placed on the stove. Syrup made from two hundred milliliters of water and sugar is poured there. Bring all this to a boil and reduce the heat. Starch dissolved in 60 milliliters of water is added to the bubbling liquid in a thin stream. The resulting mass is covered with food-grade polyethylene, cooled, transferred to a container and sent for freezing. In about twelve hours you will have delicious and healthy fruit ice.
