Ingredients

  • 1 small eggplant (300–350 g);
  • 900 g melon;
  • ¼ cup olive oil;
  • 2 tablespoons soy sauce;
  • 2 tablespoons apple cider vinegar;
  • 2 tablespoons cane sugar;
  • 2 teaspoons salt;
  • 2 teaspoons smoked paprika;
  • 1½ teaspoons cumin;
  • toothpicks or skewers.

Preparation

Cut the eggplant into thin strips. Marinate them for 10 minutes in a mixture of olive oil, soy sauce, apple cider vinegar, cane sugar, salt, cumin and smoked paprika.

Smoked paprika is dried and smoked red pepper that has been ground into powder. Its difference from the usual one is that, in addition to spiciness, it has a bright aroma of smoked meats. If you don't have this seasoning at home, you can use regular ground red pepper.
