To create this beauty on your homemade birthday cake, you will need to cut each strawberry into thin strips (3 mm), and then arrange the pieces on the cake in the shape of a flower.


An excellent and easiest way to decorate a cake with strawberries is to randomly cut the berries and fill the recess in the cake with them. Strawberries have a beautiful shape and bright color, which will give your homemade cake a summer mood and your guests an appetite.

Blueberry Cake

Before starting to prepare the cake, turn on the oven at 165-180 degrees. It is better to use a lower temperature - then the crust will turn out light and not baked. We take all the ingredients for the biscuit out of the refrigerator in advance so that they have time to warm up to room temperature.

Divide the buttermilk into two parts. Add vegetable oil to one of them and stir with a fork until it dissolves. Beat the eggs into a separate bowl, stir with a fork and pour into the second part of the buttermilk. Add the zest, juice and lemon extract there.

Sift the flour into a separate bowl, add salt, sugar, baking powder and soda. Mix all dry products with a fork and pour into a mixer bowl. Add softened butter in small pieces. We begin to beat the mixture at the lowest speed. Continue mixing until all the butter has been added and the mixture turns into crumbs.

To the crumbs of dry ingredients and butter, add some of the buttermilk mixed with vegetable oil. Combine with a blender and bring until smooth, beating for about 2 minutes.

Using a spatula, remove the dough from the sides of the bowl; it should all be inside, otherwise lumps will remain. In small portions, in three stages, begin to add a mixture of buttermilk and eggs. Beat each portion well with a mixer and remove the residue from the walls.

When finished, the dough is soft and has the consistency of pancakes. It is better to bake the cakes in two forms or one at a time so as not to cut the berries when dividing one cake into two parts. Grease the molds with butter so that the cakes come out easily. Pour the dough into the molds.

Wash and dry the blueberries. We divide the berries in half, 100 grams for each cake. Immediately pour half of it onto the surface and place in the oven for 15 minutes. Then pour in the rest of the berries and bake until done. This is necessary so that the blueberries are evenly distributed throughout the biscuit mass. Take the finished cakes out of the mold, wait 5 minutes and place on a cooling rack. The sponge cake can be assembled into a cake the same day or stored in the refrigerator, wrapped in cling film.

To prepare the buttercream, beat the softened butter until it turns white and increases in volume. Add cream cheese to it, beat until smooth. Then add powdered sugar and salt in small portions and continue beating the cream. Finally, add lemon extract, beat for a couple of minutes and the cream is ready. Place in the refrigerator to stabilize.

Once the cake layers and cream have cooled, you can begin assembling the cake. Place the cake on a dish, grease it with cream and cover with the second cake. Line the cake with cream on top and sides, decorate with lemon rings and blueberries.

Serve chilled.

Melt a few bars of your favorite chocolate in a metal saucepan or bowl. Then dip the washed and dried strawberries into the prepared chocolate glaze. Place the chocolate-covered strawberries on a large plate and then place them in the refrigerator until the chocolate hardens completely. If desired, ladybugs can be made not from whole berries, but from halves. In addition, to make them more attractive, insects can be placed on toothpicks, and their eyes can be made of cream with a drop of chocolate in the middle.

Preparation for registration

Fresh fruits need to be prepared:

  1. Rinse them under running water.
  2. Remove stems and leaves.
  3. Remove the seeds by cutting the fruit in half.
  4. It is necessary to remove the film from citrus fruits if possible. Divide the fruit into slices and, being careful not to damage their integrity, peel and remove the seeds.

Cutting:

  • apples and pears can be cut into slices: first, the fruit is cut in half, the half is placed on the board with the cut side down and thin slices are cut lengthwise;
  • Peaches can also be cut into slices or quarters;
  • apricots are cut along the line and laid out in halves;
  • the berries are most often left whole;
  • bananas are cut into slices.

Apples darken when exposed to air. After cutting, sprinkle them with lemon juice so that they retain their original appearance.

With cream

Cake with strawberries and cream is considered a classic combination of colors and flavors. In this case, the berry can be used in several ways:

  • carefully place on a surface coated with cream, strictly vertically and trying not to leave gaps;
  • place between the cake layers, for example, using cottage cheese or whipped cream to create a layer, and leave the sides undecorated;
  • squeeze out beautiful flowers or other figures from the cream on the surface, and put a whole berry or a berry cut in half on the top of each of them;
  • A flat decoration can be made by covering the dessert coated with whipped cream or cream (cottage cheese, soft cheese, butter cheese, etc.) with thin slices.

Actually, absolutely anyone can have a recipe for a cake with strawberries, since they go well with almost all products.

Cut a small slice from one edge of the strawberry - this is the base on which the strawberries will lie tightly on the cake. From the other edge, make 8–10 cuts along the berry. Then cut off the green crown. From the resulting cut parts, form the wings and back of a swan, carefully moving the slices with a knife.

Take the second berry and cut it into three parts. Set aside the outer two slices; only the core will be needed. Cut a semicircle from the base. Then separate another small piece from each side. Press the cloves into the strawberries. Place the berry on a toothpick and attach it to the main part of the swan figure.
