Then add the butter, place over low heat and stirring constantly, bring to a boil. Then pour in the baking soda, remove from heat and let cool to room temperature.
When the mixture becomes warm, gradually add flour into it in small portions and knead until the dough acquires a uniform consistency and is not sticky. Collect it into a ball, wrap it in cling film and put it in the refrigerator for 2 hours. But, if time permits, you can leave it overnight.

- hazelnuts – 95 g;
- sugar – 95 g.
Preparation:
- Dry the nuts for 10 minutes in the oven at 150 degrees, then remove the thin skin.
- Preparing praline. Caramelize the sugar in a thick-bottomed container.
- Add nuts, mix, heat, put the mixture on parchment paper, which we grease with vegetable oil.
- Divide the warm mass into small portions and leave to cool.
- As soon as the caramel hardens, grind the nuts into caramel using a blender, you should get crumbs. Continue beating until it becomes a paste.
- To prepare the base of the cream mousse, soak 15 ml of gelatin in cool water.
- Mix 220 ml cream with starch, boil, cook for 30 seconds.
- Remove from heat, add chocolate, praline, swollen gelatin mixture, salt, stir until smooth.
- Cool, cover with film, and put in the refrigerator for 5 hours.
- We are preparing a biscuit. Melt the butter.
- Grind the hazelnuts with the addition of a third of sugar and flour.
- Beat the whites with salt and sugar, also use a third part, you should get a fluffy mass.
- Mix the remaining sugar with the yolks.
- Here we add the whites, the nut-flour mixture one by one, and pour in the butter, which we melt in advance.
- Place the biscuit dough in a pan lined with parchment and bake in the oven at 175 degrees for 12 minutes.
