How to melt chocolate for a chocolate fountain

If you plan to melt chocolate for a chocolate fountain, there are special guidelines to follow.

Choosing chocolate

Special chocolate for fountains is best. It has a lower melting point, good fluidity, and shine, which ensures a high cocoa butter content in the composition. Also, the cocoa beans are finely ground, thanks to which you will significantly reduce the likelihood of the fountain breaking.

If you want to buy confectionery chocolate, you will need to dilute it with cocoa butter in a ratio of 1:10 (butter-chocolate).

Tile types. It is not advisable to use slab chocolate for a fountain, especially with fillers. It can lead to breakdown of the device, besides, it is much more difficult to work with, and many people cannot bring the mass to the desired consistency. It is not recommended to dilute the chocolate mixture with sunflower oil; it negatively affects the taste and appearance.

Chocolate mass. Now in stores you can find chocolate mass for fountains, which already contains oil (often sunflower). This option will not be fluid enough, which will affect the appearance of the fountain.

You can melt chocolate in the following ways:

Water bath. Prepare the water bath so that the top bowl does not come into contact with the water. Divide the chocolate into pieces and wait for approximately 80% of all particles to dissolve. Stir the mixture constantly throughout the entire process. When almost all the chocolate has melted, remove it from the heater and continue stirring until all particles are completely dissolved.

Microwave. Place the broken chocolate in a suitable bowl and place in the microwave for 1-2 minutes. Once every half a minute it is necessary to open the oven and stir the product well.

Devices specifically designed for melting. Basically, such devices are used for large volumes in professional fountains.

Fountain base. It is not recommended to use this method for small home fountains, as the load on the engine increases significantly, which can lead to failure of the mechanism.

Recipe from Elizaveta Glinskaya

This is a recipe for preparing a famous dish from the award-winning pastry chef Lisa Glinskaya. She performed with these cooking instructions on the Master Chef show.

Components:

  • Five eggs;
  • Sugar and flour - 70 g each;
  • Butter – 150 g;
  • Dark chocolate – 170 g.

Cooking instructions:

Melt chocolate and butter in a steam bath. Do not confuse this with a water bath - the container with chocolate should not touch boiling water. Leave the mixture to cool to 36 degrees; Mix the eggs with the sugar and beat thoroughly until the sugar is completely dissolved; Next, mix the chocolate and egg mixture

Important: eggs should be poured into chocolate, and not vice versa; Add sifted flour in several additions; The secret shared by Lisa Glinskaya. If you can’t get a liquid center, then put the dough into small molds (rectangular or square candy molds are good) and put them in the freezer for an hour; Grease the molds in which the delicacy will be baked with melted butter and sprinkle with cocoa (flour is undesirable, it will cause white spots on the dessert), lay out the dough and place a cube of frozen filling in each mold

During this time, the top of the cake will set, the filling will melt and you will get a chocolate fondant with a liquid center, which is baked for 15 minutes; You can make one cupcake without frozen dough. In 10 minutes it will also turn out with a liquid center; Place the molds in a preheated oven at 200 degrees and bake for 10 minutes. The edge of the cake should be set and the center should be jiggly, depending on your oven. If it is “weak”, then bake for 15 minutes.

This completes the recipe from Lisa Glinskaya. Place the cupcakes on a plate, sprinkle with powdered sugar, add a scoop of ice cream if desired, and enjoy the taste.
