“Cupids” dumplings cooked in pots are now prepared in restaurants in different cities of Russia, but this dish was originally made in the Far East. The name of the dish indicates its origin – the Amur region, but in its homeland the dish was originally called differently (“Ermak”, etc.).

It is not known for certain how this dish was invented, but on culinary forums there are 3 main versions:

  1. A dish in the form of dumplings in pots was included in the menu in the 70s. XX century in the restaurant "Central" in Khabarovsk.
  2. During the same period, the chefs of the Amur restaurant at the Trans-Baikal Railway invented and introduced the Irtysh dish into the menu.
  3. The “Ermak” dish began to be served in the station restaurant of Belogorsk in the late 50s. XX century. Dumplings according to that recipe are still served in the restaurant today.

Original recipe "Amur"

Dumplings “Amurs”, cooked in pots, are considered a culinary symbol of the Amur region. They started serving this dish in restaurants in the 60-70s. last century and today, dumplings prepared according to a special recipe are the main decoration of the festive table of Amur residents.

Over time, the classic recipe has been supplemented several times with new ingredients, but the key set of products remains unchanged: dumplings, liver, tomatoes, sour cream.

The dish is prepared according to the following recipe:

  1. The dumplings are cooked in the usual way until half cooked. To do this, look at the cooking time recommendation on the package and take 4-5 minutes.
  2. The liver is cut into thin pieces and fried in butter in a hot frying pan.

  3. Peel the onion, finely chop the head and fry in a separate frying pan in butter until golden brown.
  4. To make the sauce, mix flour, sour cream, tomato paste and beef broth in one container.
  5. The components are placed in a pot in layers: meat, onion frying, dumplings. Pour in the prepared sauce.
  6. Knead the cake and cover the neck of the pot with it. The top of the dough is coated with egg.
  7. Place the molds in the oven at 220° and cook until a golden brown crust forms on the flatbread.

What can I add?

“Amur” dumplings in pots in the classic version are made from a certain set of products that add a special rich taste to the dish.

If desired, some components can be replaced or new ones added for additional taste:

  • Beef liver can be replaced with any other. If they don't want to use liver, they can use poultry fillet or meat.
  • Beef broth is replaced with a bouillon cube.
  • Tomatoes are used instead of tomato paste.
  • To add a spicy taste, mustard is added to the sauce.
  • Add other ingredients to your taste: carrots, mushrooms, etc.

How to serve a dish

Traditionally, the dish is served in a pot, but even this serving has several options:

  • They take out the pot with the flatbread on top, just as they prepared the dish in the oven.


    During baking, Amura dumplings in pots are covered with dough, which serves as a lid.

  • The flatbread is served separately with the dish.
  • Add a spoonful of fresh sour cream to the top of the pot.
  • Sprinkle the finished dish with chopped herbs.
  • The pot is brought out along with a deep plate so that guests can transfer the hot dish and eat from a container that is convenient for them.
  • Use other ingredients as decoration (carrot slices, a bunch of greens, etc.).

Recently, during an online conversation in my live journal, I learned a very interesting recipe - Amur-style dumplings or Amur dumplings, Amur. I was highly advised to cook them, I was very impressed, although I was surprised by the composition of the dish...

The dumplings are baked in a rich liver gravy! My husband (very conservative when it comes to cooking) really liked the Amur dumplings and he, so to speak, added them to our menu permanently. It’s just a pity that none of the three children eat liver...))

The liver can be different, chicken is closer to my taste and ease of preparation, but if you like beef or pork, then take them. In some sources, dumplings are pre-boiled before placing them in pots, in others they write that dumplings are added raw. I prefer the option in which the dumplings are sent to the pots raw, because I often bake dumplings with all sorts of fillings and sauces.

Undoubtedly, the most delicious dumplings are homemade ones, prepared with your own hands, but among the store-bought ones there are also quite decent quality and taste.

To prepare Amur-style dumplings in pots, prepare the ingredients according to the list.

Chop onions and carrots, for example, into strips and fry in vegetable oil. Lightly salt.

Add the liver pieces and simmer all together for about five minutes while stirring.

Then add ketchup or tomato sauce and sour cream and stir.

Pour in hot water or broth and simmer until the liver is ready. Add salt to taste.

Pour the liver gravy into the bottom of the pots.

Next, add ten dumplings to each pot.

Add liver gravy on top again. Cover the pots with lids or dough. Bake in the oven or microwave until done.

Approximate cooking times for different options:

  • in the microwave - with raw dumplings for about ten minutes, with boiled dumplings - 3-4 minutes at MAX
  • in the oven - with raw - about 30 minutes, with boiled - 15 minutes at 200 degrees.

Cupid dumplings in pots are often supplemented with new ingredients for a richer taste. According to this version of cooking, fried mushrooms with onions are added to a pot and baked under a crust of grated cheese.

  2. The mushrooms are washed and placed in a frying pan greased with vegetable oil. Fry, stirring occasionally, for 5-10 minutes.

  3. Peel the onion, wash it and chop it with a knife. Place the onion in a frying pan with the mushrooms, add salt and pepper to your taste and fry for another 1-2 minutes until the onion becomes transparent.
  4. The cheese is grated on a coarse grater. The cilantro is washed and chopped with a knife.
  5. Place the dumplings into a pan of boiling salted water, wait until they float to the surface and cook, stirring, for 4-5 minutes.
  6. Place dumplings and fried mushrooms in pots and mix gently. Sprinkle cheese and herbs on top. Cover the pots with a lid and place in the oven, preheated to 180°, for 5-10 minutes.

  5. Place dumplings and fried vegetables in pots. Gently mix the contents.
  6. The broth with herbs and spices is filtered and the resulting liquid is poured into each pot. Add sour cream.

1. First of all, prepare the liver: peel it from the film, cut it into slices, then rinse it under running water.

2. Next, put the liver in a bowl and fill it with milk.

3. Now let's get to the vegetables. Finely chop the onion.

4. Then fry it in vegetable oil.

5. When the onion is fried until golden brown, put the liver in the pan. Salt, pepper, add spices. Simmer the liver with onions, stirring occasionally.

6. While the liver is stewing, prepare the dough. Mix hot water and flour, add salt. Knead until the dough thickens.

7. Place the resulting lump on a board with a small amount of flour on it and knead it with your hands.

8. Take a break from the dough and let the dumplings cook. Cook until half cooked!

9. Add tomato paste and sour cream to the liver in the frying pan. Mix.

10. Divide the previously prepared dough into 5 equal parts, after which we roll out each part using a rolling pin. The cakes should be round, their diameter should exceed the diameter of the opening of the pots.

11. Finely chop the greens.

12. It's time to put the ingredients into the pots! First, put the liver in pots, put half-finished dumplings on it, fill it with cubed broth and sprinkle everything with herbs.

“Amur” dumplings in pots are prepared according to a taiga recipe with the addition of beef liver and a large number of vegetables, which give additional aroma and taste to the dish. In the classic taiga recipe, goat liver is used, but in urban cooking conditions, beef liver is used. The calorie content of the finished dish is about 200 kcal per 100 g. Peel and finely chop the onion, place it in a frying pan heated with a small amount of vegetable oil.


Fry the onion, stirring occasionally, for 5 minutes over medium heat. Then add the peeled and coarsely grated carrots and fry for about 5 minutes. To prevent the vegetables from burning, do not forget to stir them periodically.


Rinse the liver under water and cut into pieces measuring 2 cm x 2 cm.


Add liver pieces to the fried vegetables, stir and fry for 1-2 minutes.


Then add sour cream, tomato paste (or ketchup) to the vegetables with liver and salt to taste.


Stir and simmer over low heat for 1-2 minutes, then remove the pan from the heat and let the liver and vegetables cool.


Place some of the vegetables with liver into the pots.


Then add some frozen (or freshly made) dumplings. Thus, alternating liver with vegetables and dumplings, fill the pots to the very top. The top layer should be vegetables with liver. I managed to fill 2 450 ml pots.


Pour 100 ml of water (or broth) into each pot. I used water at room temperature.


Cover the pots with lids and place in a preheated oven. Bake for 30 minutes at 200 degrees.


Very tasty, hearty dumplings cooked in pots with liver in Amur style, served hot.

  3. The greens are washed and chopped with a knife. Add to the pan with the mushrooms, stir and cook for another 1-2 minutes.
  4. An equal number of dumplings (about 10) are placed in the pots. 1-2 tbsp on top. l. mushroom frying.
  5. Separately, mix eggs and mayonnaise with a whisk or fork. Gradually add the cooled dumpling broth and continue mixing. The finished mass is poured into the pot.

Cupid dumplings cooked in pots can taste better, and some of the steps can be simplified if you follow a few simple tips.

It is also important to be able to choose the right key ingredients:

  • Beef liver is replaced with chicken liver, so the taste of the dish does not change much. It is not recommended to use pork liver due to the bitter taste.

  • It is recommended to add champignons or oyster mushrooms to the recipe, since these mushrooms do not require preliminary preparation. They are washed, cut and placed in molds.
  • Before the baking process in the oven, dumplings are not always boiled; they can also be fried in a frying pan in vegetable oil. The dish will finally reach readiness during the stewing process.
  • In addition to mushrooms, meat ingredients (chicken fillet, ham, smoked meats, etc.) are placed in the pots. With this set of components, all layers alternate with a layer of dumplings.

Step-by-step cooking recipe

Prepare the sauce:

Grate the carrots on a coarse grater, cut the onion into thin quarter rings, sauté with a small amount of oil.

Add tomato sauce, sauté for another 10 minutes over low heat. Add flour, calcined in a frying pan without oil until beige. Also add sour cream or cream (I used 45% fat, but this is optional), ready-made broth. If necessary, pepper and salt. Heat a little more and the sauce is ready.

According to the recipe, boil the dumplings in salted water until half cooked (2 minutes after boiling, or in the microwave with the addition of a small amount of water). I had small dumplings and decided not to boil them at all.

Cut the liver (can be chicken, beef, pork - the last two are better pre-soaked in milk), fry in a frying pan with vegetable oil (add a little salt at the end).

Place in portioned pots: dumplings, liver, add bay leaves, pour sauce over them. Cover with a lid or, if desired, with a flatbread made from unleavened or yeast dough.

Place in a cold oven, set to 200 C and simmer for 30 minutes.
