ABOUT
Very often on Sunday mornings I cook royal gingerbread for breakfast. The cooking recipe is very simple, and it will take no more than an hour for a tasty and very healthy real royal dish to appear on your table. You only need to take care in advance about the availability of fresh cottage cheese, from which the filling of the gingerbread is prepared. During the cooking process, you can show your imagination by adding lemon or orange zest to the filling; whichever flavor you like best, take that fruit, or you can just limit yourself to vanilla.
E
If you have fresh berries: strawberries, raspberries, currants, then they can also be added to the gingerbread filling. Freshly prepared coffee and aromatic gingerbread - what could be better on a Sunday morning!
What is cottage cheese for humans?
These are calcium, minerals, and healthy vitamins! So why, to strengthen the human skeletal system with vitamins, do many consumers throw away huge amounts of money, instead of saving and getting calcium naturally from cottage cheese? “It’s tasteless, vitamins are tasteless” is a common answer for a modern person. Of course, they are tasteless because they contain chemicals and additives. In this regard, women are more far-sighted than men and are more sensitive to the issue of health. And when a happy lady becomes married, and in addition to her husband she receives children who need constant care and attention, then the thought comes to mind that you won’t be satisfied with vitamins alone! How to feed cottage cheese to the reluctant head of the family and young offspring? Of course, “mom’s tricks” come into play here. Any housewife knows how to serve this or that healthy product so that it is not only healthy, but also tasty. An alternative to sour and tasteless cottage cheese is royal cheesecake with cottage cheese! Absolutely everyone will be delighted with its taste!
Baking ingredients
In order for the honey-curd gingerbread to please the hostess with a truly royal taste and aroma, you need to worry about the necessary components of the dish in advance.
For the filling you will need:
- curd mass – 500 grams;
- granulated sugar – 100 grams;
- eggs – 3 pieces;
- a little vanilla sugar.
For the test you need to take:
- wheat flour – 400 grams;
- granulated sugar – 50 grams;
- butter – 100 grams;
- honey - a tablespoon;
- soda - a quarter of a teaspoon.
These are just the basic, basic ingredients of the royal gingerbread. According to your taste and imagination, you can add other ingredients to the filling: lemon or orange zest, strawberry or raspberry berries (fresh or frozen).
The dish will not turn out really tasty and melt in your mouth if you use old cottage cheese. The fermented milk product must be fresh and crumbly.
But you can take any bee nectar, even candied, since it still has to be heated in a water bath. The type of honey does not play a big role; a lot depends on your preference. However, housewives who have tried this royal cake advise adding buckwheat or chestnut honey to the dough.

How is curd gingerbread prepared?
If you want to bake honey-curd gingerbread without any problems, you need to prepare all the required ingredients in advance and study the exact recipe for preparing the dish. The process of preparing gingerbread dessert consists of several sequential steps.
- First of all, melt butter or margarine over low heat. Leave it for a while so that this ingredient cools down a little. Otherwise, there is a risk that the hot oil will cause the eggs to curdle.
- Sift wheat flour (half the portion can be replaced with corn flour) several times and mix with baking powder. The latter can be replaced with soda powder, but it is not necessary to extinguish it with acetic or citric acid. It is believed that honey can effectively cope with this task.
- Beat chicken eggs with a blender or mixer with granulated sugar, add liquid bee nectar (the recipe also involves adding candied honey, but in this case it is better to melt it first).
- Whisking continuously, add milk and cooled melted butter to the sweet mixture. Then add the curd mass. To avoid lumps, you can rub it through a sieve in advance. Such an operation, by the way, will allow you to achieve a more fluffy dough.
- Without ceasing to knead the mixture, add flour to it. We achieve the optimal consistency - honey-curd dough ideally resembles thick sour cream.
- Grease the mold with sunflower oil, pour the dough into it and place it in an oven preheated to 180-190 degrees. Approximate baking time is 40-50 minutes. We check the readiness of the gingerbread delicacy with a toothpick.

You just need to know what to add or change in the recipe. And I will help you with this. Read about how to cook royal gingerbread with cottage cheese. But don’t be afraid, everything is done quite simply, because this is the main feature of this baking. It can be served for tea at a holiday, decorated a little at your discretion.
Step-by-step preparation
- For work we need cottage cheese, flour, eggs, butter, raisins, vanilla sugar.
- In the bowl of a food processor (metal blade attachment), combine flour (1 cup) and butter (150 g).
- Grind until crumbs form. You should not turn on the combine for a long time - only until crumbs form. This happens very quickly. If the food processor runs a little longer, the whole mass will come together into a soft dough, but we don’t want that.
- Spread half the crumbs into the bottom of a baking dish (diameter 22cm).
- For the filling, in the same bowl of a food processor, combine cottage cheese (500 g), 3 eggs, 4 tbsp. l. sugar, 20 g vanilla sugar, 2 tbsp. l. flour and grind until a homogeneous, tender mass is formed.
- Add washed raisins (6 tbsp) and mix everything (do not chop).
- Place the filling on the crumbs. Spread the rest of the dough crumbs evenly on top.
- Bake in a preheated oven at 180°C until golden brown (approximately 40 minutes).
Required Products
There are many options for cottage cheese gingerbread dough. For example, the royal gingerbread with cottage cheese is very popular, which has three layers - in the middle there is a filling made from this fermented milk product.
We offer a recipe for a very simple gingerbread, but in no way inferior in taste. To prepare a fragrant dessert you need to take:
- honey – 50 grams (the type of bee nectar does not matter);
- homemade cottage cheese – 400 grams;
- flour – 400 grams;
- milk – 150 milliliters;
- chicken eggs – 3 pieces;
- granulated sugar – 200 grams;
- baking powder – 15 grams;
- butter – 130 grams.
This recipe can be conditionally classified as basic. At his own request, the cook can add various spices (vanilla sugar, cinnamon or ginger powder, etc.), lemon zest, strawberries, raspberries or apple slices.
It is important to ensure that the curd component is as fresh as possible, otherwise the baked goods will not rise well, and the finished dish itself will have a pronounced bitter taste. Honey, as noted above, can be taken of any type and “age”. Even a crystallized waste product of bees will do.
