Omelette pancake for appetizer roll
Essentially, omelet pancakes are beaten eggs with the addition of a small amount of liquid, that is, they are the same omelet, only thin. For a snack dish, the egg mixture can be supplemented with chopped herbs, finely chopped vegetables, cheese and even ready-made minced meat. You can wrap anything in omelette pancakes or simply coat it with garlic mayonnaise and grated cheese. Our version is vegetable.
For one omelette pancake roll we will need:
- 2 chicken eggs
- 2 tbsp. spoons of milk
- A pinch of salt
- Additives: thinly sliced onions and pickled hot peppers, pieces of tomatoes without skin and seeds, spices.
- 1 tbsp vegetable oil (per frying pan)
Omelette preparation time: 5 min.
Cooking time for omelet pancake: 3 minutes.
Mix water, eggs and salt. Beat with a whisk or fork, add to the additive composition and mix. Bake the pancake in a well-heated frying pan in vegetable oil.
Note: Omelet pancakes are very tender, but additives make them heavier. Therefore, they should be turned over very carefully, using two wide spatulas. Better yet, move the pancake from the frying pan onto a flat plate and then turn it back onto the frying pan. 15-20 seconds and the pancake is ready.
Place the prepared roll base with the beautiful side down and spread out the filling. For us, these are slices of baked bell pepper, homemade cheese, strips of cucumber and carrots.
Roll up the roll and cut it with a sharp knife, without pressing. Place on a plate, lightly decorate with sauce and serve.

This hearty, low-calorie delicacy is ideal for anyone who is watching their weight and loves homemade pancakes. Protein pancakes are especially helpful at Maslenitsa, when everyone should respect the newborn sun with a portion of its ruddy symbols. A hot breakfast of egg pancakes will fill you with energy and good mood for the whole day.
For a serving of two pancakes we will need:
- Whites from 2 chicken eggs
- Wheat flour - 2 tbsp. spoons
- 50 ml. (glass) of water
- A pinch of salt
- Soda - 1/3 teaspoon
- Juice of a lemon wedge
- Vegetable oil - 1 tbsp.

Cooking time: 5 min.
Beat the whites until lightly foamy, add salt and add flour. Stir all the lumps and add water. To prepare soft and fluffy pancakes, add baking soda quenched with lemon juice; it will work as a leavening agent. Pour the oil into the dough itself and leave the pan dry. We bake the pancakes on both sides; when they are browned, they are ready.
Note: Don't expect egg white pancakes to be golden brown.
Increasing the baking time will only cause these pancakes to dry out and burn. They do not contain yolks that give color and there is no sugar, which caramelizes when exposed to temperature and gives the dish a golden color.

- Grate the cheese and cut the ham into thin strips.
- Place the dough onto the melted butter. It should set over high heat, then reduce it.
- Place the filling of mushrooms, ham and cheese on one half of the pancake, and cover the filling with the other half.
- Fry over low heat until fully cooked.

Step-by-step recommendations
The cooking process should begin by preparing the sauce for the filling. To do this, add a little chopped dill, chopped garlic and salt to 100 g of sour cream. The ingredients need to be mixed and the sauce is ready.
Prepared pickled cucumbers need to be cut into strips. Grind the chicken fillet using a meat grinder, adding salt and pepper. Then the minced meat must be divided into 3 equal pieces and rolled into a small ball from each. All pieces should be beaten so that they become denser and do not fall apart. After this, each ball must be placed between layers of cling film and kneaded into a flat cake with a diameter of up to 15 centimeters. They do this with a rolling pin and simply with their hands.
The next stage is baking brizoli from minced meat. To do this, add a tablespoon of milk and a little salt to each egg. Stir quickly to obtain a homogeneous mixture. After this, each of the beaten eggs must be poured into a container of suitable size. Then the prepared cake is carefully placed on top.
In a heated frying pan, set to low heat, you need to bake each brizol in turn from different sides. The fried pancake should be placed minced side up and coated first with the prepared sour cream sauce, and then filled with chopped pickled cucumbers. After this, the brizol is rolled up into a tube or envelope. Having placed the dish on the dish, it is decorated with a sprig of herbs, lettuce leaves or beautifully cut slices of fresh tomato.
