Cooking tips

To prepare the dish, you need to use long-grain rice, or even better, steamed cereal.

Advice! Rice with round grains will not make a tasty dish, since such grains will boil too much and instead of crumbly rice you will end up with something like porridge.

It is better to use farm or homemade eggs for cooking; it is important that the yolk of the egg is bright orange and not pale yellow.

To prepare the dish, a special frying pan is used - a wok, but you can also use a regular one.

Spices are used to add flavor: fennel, turmeric, cloves, cinnamon, star anise. In addition, soy sauce is often used.

Recipe No. 1: classic

Ingredients:

  • 1.5 cups rice
  • 3 cloves garlic
  • 2 eggs
  • small bunch of green onions
  • 3 tablespoons sesame oil
  • half a cup of canned green peas
  • 2 tablespoons soy sauce
  • salt pepper.

Preparation

  1. Boil the rice until tender for 10-15 minutes, depending on the variety.
  2. Finely chop the garlic and onion.
  3. Place a thick-bottomed pan on the burner, heat it, and break the eggs into it. Stir with a whisk until the mixture “sets” a little.
  4. In a deep frying pan: heat the oil in a wok or deep fryer. Place chopped garlic, onion, and peas in it and simmer for a few minutes.
  5. Add rice, fried eggs and soy sauce to this mixture. Season with pepper and stir. Keep it on the fire for no more than a minute, stirring constantly.
  6. The dish is served hot, as soon as we remove the pan from the heat. You can offer it with cheese, boiled pork, mushrooms and shrimp.

Classic Chinese rice with egg recipe

First, you should master the classic recipe for Chinese rice with egg.

  • 1.5 cups of rice, it is recommended to take Basmati or other long-grain variety;
  • 3 large eggs or 4 small ones;
  • 3 tablespoons vegetable oil;
  • 1-2 cloves of garlic;
  • 3 green onions;
  • 130 gr. green peas - fresh or frozen;
  • 1 tablespoon soy sauce;
  • salt, ground black pepper, spices to taste.

Wash the rice well and soak in cold water for 30 minutes. Then drain the water, pour 2.5 cups of water into a saucepan (it’s better to take thick-walled dishes), and add salt. Place the container on the stove and bring to a boil, then reduce the heat and cook for 12 minutes until the water is completely absorbed. Then remove the pan from the stove and let the rice cool completely.

Advice! It is better to prepare the rice for this dish the evening before, so that it can not only cool down, but also sit in the refrigerator for 10-12 hours. The rice should be crumbly, but in no case undercooked.

If you use frozen green peas, you need to remove them from the freezer in advance so that the peas have time to thaw. Peel the garlic, wash the green onions and dry. Cut the garlic into small cubes, cut the onion into rings about 0.5-0.7 cm wide.

In a deep bowl, beat eggs with salt and black pepper. Heat 2 tablespoons of vegetable oil in a frying pan. Place garlic in hot oil and heat for 1 minute. Then pour in the beaten eggs and fry, stirring constantly with a spatula. When the eggs have curled, add green peas and simmer for 2 minutes. Then remove the pan from the stove.

At the heart of thousands of years of Chinese cooking is the basic tenet (besides saturating a person with food): each dish must be balanced in texture, aroma and color. The ingredients of many dishes often have sacred meaning. For example, in rice with egg there are only two such symbolic components.

Rice, according to the Chinese, symbolizes wealth and prosperity. And the egg in the Taoist practice of Feng Shui, as in many other cultures, means fertility.

  • 1 cup boiled rice (cold, preferably cooked the day before);
  • 1 small carrot;
  • 1 small cucumber;
  • 2 eggs;
  • 1 small onion;
  • several green onions;
  • 0.5 cups soy sauce;
  • 2 teaspoons sugar;
  • 1 clove of garlic;
  • 1 cm ginger root;
  • salt, dry chili pepper flakes to taste;
  • vegetable oil for frying.

We clean the vegetables. Cut the onion, carrots and cucumber into small cubes. Peel the garlic and ginger and cut them into very small cubes. Wash the green onions and cut into thin rings.

Wash the eggs, break them into a bowl and beat them, adding salt. You can add other spices to taste.

Heat a frying pan with oil, pour in the egg mixture and fry until the eggs are ready, stirring constantly. Transfer the eggs to another bowl and add more oil to the pan. When it's hot, add the garlic and ginger. Warm up for about a minute, then add onions and carrots, fry everything together for 1.5 minutes. Then put cucumbers and green onions in the pan, stir, add fried eggs and rice. Stir thoroughly, the rice should be crumbly, without lumps.

Fry everything together, making sure it doesn't burn. Season with chili pepper. Mix soy sauce with sugar and pour into rice. Taste and add salt if necessary. Fry for a couple more minutes. Serve hot, if desired, you can sprinkle the rice laid out on plates with fried sesame seeds.

Chinese fried rice in a frying pan

A quick way to feed a hungry family in 40 minutes. The dish includes products that are always in the kitchen. We suggest looking at the detailed recipe with photos to make sure of its simplicity.

Chop the garlic cloves into small cubes and fry for 1 des. spoon of vegetable oil.

Beat the egg with a fork. Salt and pepper it to taste.

Pour them into the garlic and fry in a frying pan for 1-2 minutes. Stir the egg periodically; it should not be fried until crisp, just slightly set.

Add green peas to the egg. Mix the ingredients and simmer for another 2 minutes.

You can add carrots to the dish or prepare a side dish with other seasonal vegetables.


Heat a little oil in a separate frying pan. Place the cooked rice in a bowl and fry it with constant stirring for 2-3 minutes.

Pour soy sauce into the porridge. Continue roasting.

Let's cook rice with vegetables and egg in Chinese. The vegetables in this dish should not be overcooked on the stove; they should remain slightly crispy. The recipe uses mini corn - miniature ears with kernels attached. If you don’t have this product on hand, you can prepare a dish with corn beans (frozen or canned).

  • 100 gr. rice;
  • 1 small onion;
  • 1 clove of garlic;
  • 6 pcs. mini cobs of corn;
  • 100 gr. green beans;
  • 1 pod of bell pepper, preferably red;
  • 1 stalk of petiole celery;
  • 2 eggs;
  • 1 cm ginger root;
  • 3 tablespoons soy sauce;
  • salt to taste;
  • 3 tablespoons vegetable oil;
  • 1 teaspoon ground sweet paprika;
  • 200 ml water;
  • ground hot red pepper to taste;
  • several sprigs of cilantro;
  • 0.5 lime fruit for serving;
  • 1 teaspoon ginger seeds, for serving.

Wash the rice and boil until half cooked, you need to cook for 10-12 minutes. Do not stir the rice during cooking; add salt at the very end of cooking. Place the rice in a colander and cool completely.

Advice! The assortment of vegetables in this recipe can be changed. You can use various frozen mixtures, for example, “Chinese mixture” is perfect.

We wash and peel the vegetables. Cut the onion into thin half rings, garlic and ginger into thin slices. Cut the green beans into pieces 2-3 cm long, chop the pepper into strips, cut the mini corn into 2-3 parts, and the stalk celery into strips.

  • 3 eggs;
  • 200 gr. mixed frozen vegetables. You can choose the mixture to your taste, preferably with corn, green peas and red bell pepper, but other options are possible;
  • 2 green onions;
  • 1 teaspoon oyster sauce;
  • 5 tablespoons of vegetable oil.

Boil the rice in advance and let it cool completely. It is very important not to overcook the rice; it should be crumbly and not resemble porridge. Remove frozen vegetables from the freezer in advance so that they have time to thaw.

Advice! If you don't have oyster sauce, you can season the dish with soy sauce to taste.

Break the eggs into a bowl and lightly beat them with salt. Wash the green onions, dry them and cut into thin rings. Clean the shrimp.

How to cook Chinese shrimp rice

Seafood lovers can make their own version of the Chinese dish with shrimp.

We take:

  • Rice, cooked – 200 gr.
  • Large boiled frozen shrimp – 10-15 pcs.
  • Mix of frozen vegetables – 200 gr.
  • Green onions - 2-3 feathers.
  • Oyster (or soy) sauce – 1-2 small spoons.
  • Vegetable oil – 5 tablespoons.

Choose a vegetable mixture that includes green peas, corn, and sweet peppers.

Fry:

  1. Remove frozen vegetables and shrimp from the freezer in advance so they have time to thaw.
  2. Boil the fluffy rice and cool.
  3. Break the eggs into a bowl, add a pinch of salt, stir until smooth.
  4. Chop the green onions into small cubes.
  5. Pour oil into a frying pan and heat it. Send the peeled shrimp to fry. Cook for a couple of minutes, then quickly remove and place in a bowl.
  6. Pour egg wash into the vacant space. Fry vigorously stirring the mixture to form egg flakes.
  7. Add the cooked rice and continue frying the ingredients together without reducing the heat.
  8. Add vegetable mixture and stir. Cook for 2-3 minutes.
  9. Pour in the oyster sauce and remove the fried shrimp from the bowl. Heat the dish for another 30 seconds, then turn off the burner. When serving, sprinkle with green onions.

Recipe with bacon

Another option for preparing Chinese rice is with bacon.

  • 1 cup rice;
  • 150 gr. bacon;
  • 2 eggs;
  • 2 tablespoons soy sauce;
  • 2 cloves of garlic;
  • spices to taste.

Boil the rice until almost done, the grains should remain slightly hard in the center.

Fry the bacon strips in a frying pan until golden brown. There is no need to add oil, the fat that is rendered from the bacon will be enough. Transfer the bacon to a plate. Beat the eggs with salt, pour into the pan and fry, stirring.

As soon as the egg has curled, add rice and bacon, season the dish with soy sauce and garlic. Simmer on fire for about 1 minute. Serve hot.

With added beef

Another delicious and simple recipe is Chinese-style rice with vegetables and egg with the addition of beef.

Components:

  • fresh garlic – 4 cloves;
  • granulated sugar – 1/5 tsp;
  • cumin (cumin) – 5 grams;
  • ginger – 2 pieces;
  • wood mushroom – 2 pcs.;
  • chicken egg - 1;
  • onion – 1 pc.;
  • large carrots - 1 pc.;
  • lettuce leaves - 3 leaves;
  • beef meat – 100 grams;
  • long grain rice – 300 grams;
  • soy sauce – 2 tsp;
  • oyster sauce – 1 tsp;
  • rice wine – 1 tsp;
  • starch - 1/5 teaspoon.

Let's look at how to deliciously cook rice as a side dish. The recipe is simple. We cut the beef meat beautifully into bars, chop the garlic and ginger very finely, then put everything in a dish with the beef meat. Next, pour out 1/5 spoon of starch and add 2 tsp. soy sauce, cut carrots, onions, tree mushrooms, lettuce, Chinese cabbage into bars. Take an egg, break it and pour it into a frying pan heated with oil, fry for 30 seconds, stirring constantly. After frying, remove the egg to another plate and begin to fry the beef, then lay out the meat and begin to fry the vegetables, add sugar, egg, soy sauce, then rice and mix very carefully. At the end, you should add cumin (if translated into our language, this is caraway herb), fresh and washed lettuce leaves, oyster sauce and rice wine.

Chinese rice with egg in a slow cooker

It's easy to cook Chinese rice with eggs in a slow cooker. It is recommended to cook the rice in advance using the “cereal” program. By the time the dish is cooked, the rice should be completely cool.

  • 250 rub. cooked rice;
  • 250 gr. green peas (frozen);
  • 5 eggs;
  • 2 cloves of garlic;
  • 70 ml vegetable oil;
  • soy sauce to taste;
  • a few green onions for serving.

Peel and cut the garlic and ginger into thin slices. Beat the eggs with the addition of salt. Turn on the multicooker by selecting the “frying” program. If there is a “multi-cook” function, select a temperature of 190 degrees and set the time to 10 minutes.

Let the oil heat up for a minute, add garlic and ginger to the hot oil, fry for 1 minute. Then add rice and green peas, cook, stirring for 2-3 minutes. Season the dish with soy sauce. Pour in the beaten eggs and continue cooking, stirring vigorously so that the eggs do not become baked into the pancake. The dish should remain crumbly.

Rice with vegetables and red fish, Chinese style

Components:

  • red fish fillet - 500 g;
  • long grain rice - 1 cup;
  • onion - 1 piece;
  • large carrots;
  • small ginger root - 2 cm;
  • soy sauce -1 tsp;
  • natural tomato paste - 1 tbsp. l.;
  • vegetable oil - 1 tbsp. l.

Method of preparation: we cut the carrots and ginger into small pieces, we try to cut the onion into even half rings, and the fish into pieces. Pre-heat the frying pan and add oil, heat it up and add onion half rings, carrots, ginger, tomato paste and soy sauce. Simmer everything, then add pieces of fish and fry, pour 3 glasses of water and simmer until the dish is ready. Rice with vegetables and fish can be served as a separate dish.

The finished rice dish with vegetables can be served after garnishing it with herbs, onions, lettuce leaves, and basil leaves. These greens will add a delicious aroma to the dish.
