Green beans as a side dish - classic recipe

Frozen green beans are usually not defrosted before cooking; to make the beans softer, add a couple of tablespoons of lemon juice to the pan.

Ingredients:

  • Green beans – 400 grams
  • Onion – 1 head
  • Sweet red pepper – 2 pcs.
  • Vegetable oil – 30 ml.
  • Salt – 1 tsp.
  • Dried basil – 1 tsp.

Preparation:

Cut the onion and pepper into medium-sized cubes, pour oil into a preheated frying pan and add the vegetables, fry for 10 minutes, then reduce the heat and add green beans to the frying pan.

Add salt and mix. Fry vegetables for 10 minutes. Add basil 5 minutes before the end of cooking.

Cook frozen beans with the lid closed over moderate heat to make the dish more juicy.

Salad with green beans, mussels and soy dressing

Ingredients

  • 250 g boiled frozen mussel meat;
  • 400 g green beans;
  • salt - to taste;
  • 1 red onion;
  • 3 tablespoons olive oil;
  • 2 tablespoons soy sauce;
  • 2 tablespoons lemon juice;
  • 1 clove of garlic;
  • ground black pepper - to taste;
  • sesame seeds - for sprinkling.

Preparation

Thaw the mussel meat, rinse and drain in a colander. Boil the beans in boiling salted water for 5–7 minutes, then transfer to cold water or rinse under running water.

Cut the onion into rings. Heat 1 tablespoon of oil in a frying pan and lightly fry the onion. Add mussels and cook for another 3 minutes.

Mix the remaining oil, soy sauce, lemon juice and chopped garlic. Place beans and mussels with onions in a bowl, add dressing and pepper and stir. Sprinkle the salad with sesame seeds and leave to steep for half an hour.
