  • spaghetti – 400 g;
  • smoked brisket – 150 g;

  • olive oil - to taste;
  • ground nutmeg, table salt.

Cooking steps

  1. Take the smoked brisket and cut into small squares or slices. Pour a tablespoon of olive or sunflower oil into a preheated frying pan and add the smoked meats. Fry them until golden brown.
  2. Peel the garlic clove and chop finely. Add to roasting brisket. It will absorb the garlic aroma. Chop the washed tomatoes here and simmer the meat in them for about 5 minutes.
  3. Now let's take on the sauce itself. In this recipe, the main ingredient is the egg. Mix two yolks with cream in a deep bowl, whisk the ingredients thoroughly. In this case, it is advisable not to replace the cream with anything, otherwise you will end up with a completely different sauce.
  4. Also grate 50 grams of hard cheese on a fine grater. Salt and pepper the filling to taste, mix thoroughly again.
  5. While the brisket is roasting, boil the pasta in lightly salted water for about 6 minutes until almost done. Then drain the liquid and place the pasta in a colander.
  6. Remove the pan with smoked meats and garlic from the heat. Add pasta to it and stir. After another minute, pour the creamy egg sauce into the pasta. Important: the contents of the pan at this time should still be hot enough, but not so hot that the yolks in the sauce can curdle.
  7. Stir the spaghetti into the filling, cover the pan with a lid and leave for 5 minutes so that the pasta absorbs all the flavor and aroma of the sauce and meat.

Tip: If you have mushrooms in the refrigerator, you can also chop them and add them to the brisket when frying. The taste of the dish will become even richer.

For the sauce, fry the flour in butter until light orange, pour in the milk, season with the spices indicated in the recipe and cook until it thickens.

How to make pasta with broccoli and smoked brisket:


Separate the broccoli into individual florets. Boil water, add 1 tsp. salt and 0.5 tsp. citric acid per 1.5 liters of liquid. Place broccoli in boiling water for 2-3 minutes. Then pull the inflorescences onto a sieve and place them in water with ice cubes. In this case, the cabbage will retain all its beneficial properties and beautiful green color. Boil the pasta according to the instructions with the addition of a small amount of oil. This simple secret will prevent the pasta from sticking together.

Tip: it is best to cook the pasta for this dish “al dente,” that is, to the point where it is no longer raw or hard, but also not overcooked. This is exactly the kind of pasta they prepare in Italy. Cut the bacon and smoked meats into cubes, lettuce peppers into long pieces. Heat olive oil in a deep frying pan. Add chopped bacon and simmer for a few minutes to render out excess fat.
