Lent began on Monday - a time when food becomes simpler and almost all animal products are excluded from the diet. Even if you don’t observe religious fasts, spring is a great time to detox your body, forgetting about butter and eggs at least for a while. At the same time, this will help you get rid of a couple of extra pounds gained over the winter. Especially for this purpose, we have collected sweet recipes for tea: they are all vegan (lenten), prepared from natural ingredients and, perhaps, not entirely dietary, but certainly healthy.
Chocolate blueberry cake

Vegetarian dessert recipes to prepare at home
There are several delicious recipes with step-by-step descriptions of preparation.
Chocolate brownie
To prepare it you need the simplest ingredients:
Wheat flour, cocoa, brown sugar, chopped walnuts, pitted dates, baking powder, salt, water, olive oil.
Take 1 cup of flour, mix with 4 tablespoons of sugar, add 1/3 cup of nuts and cocoa to the mixture, half a teaspoon of salt and baking powder.
To the resulting mass you need to add half a glass of water and 1/3 cup of oil. 5 dates, cut into large pieces, are also added here.
The resulting workpiece is distributed into pre-greased molds and placed in the oven for 40 minutes. (at a temperature of 180°)
You can serve dessert with ice cream or strawberries.
Banana ice cream
To prepare this sweetness, you need a minimum set of ingredients: bananas and peanut butter.
If you need to prepare a dessert for 2 servings, then take 2 ripe bananas, cut them into rings and put them in the freezer for several hours. You can leave it overnight.
Then, the frozen fruit is ground in a blender and mixed with half a tablespoon of peanut butter. The mixture can be served immediately or frozen further.
Almond truffles
There is also an excellent option for candy lovers, which also contains a lot of useful substances.
There are more ingredients here than in ice cream, but they are not difficult to get, namely: almonds, coconut flakes, agave or Jerusalem artichoke nectar, ginger, dates, lemon, cinnamon, olive oil and salt.
The preparation is quite simple:
100 grams of almonds and 12 dates must be ground in a blender, adding the juice of half a lemon, until smooth, then mixed with the rest of the ingredients (1 teaspoon each, a pinch of salt, nectar - 1 tablespoon). From the resulting mixture you need to form balls and roll them in coconut flakes. Leave the finished product in the refrigerator for some time.
Chia pudding with yogurt
A simple and convenient dessert, and most importantly, very healthy.
Ingredient: chia seeds, yogurt, coconut milk, cocoa powder, maple syrup, walnuts, strawberries, raspberries or currants.
To begin, you need to mix 1 cup of plain yogurt with 3 tablespoons of chia seeds (depending on the consistency of the yogurt). You need to sprinkle the seeds slowly to prevent them from forming into lumps.
Then you need to add 2 tablespoons of cocoa powder and 1 glass of milk, the mixture can be slightly warmed to obtain homogeneity. Add maple syrup (to taste) and chia seeds. Since milk is thinner than yogurt, you will need 5 tablespoons of seeds.
Afterwards, the blanks are covered with cling film and sent to the refrigerator for several hours. But it’s better to leave them there all night.
During the time spent in the refrigerator, the seeds will swell and increase in size by 10 times.
You need to make a puree from the berries. A blender is used for this. Those with a sweet tooth can add a sweetener (maple or grape syrup) to the resulting mixture.
Next, the pudding can be laid out in layers, alternating with berry puree.
Or, you can make it chocolate by sprinkling this product on top and decorating with nuts.
Apple pie
A dessert loved by many. It is he who brings back memories from childhood, and its aroma brings an atmosphere of comfort to every family.
Ingredients: rye and wheat flour, maple syrup, vegetable oil, bran, hot water, apples, walnuts, cinnamon.
So, first you need to mix one and a half glasses of rye and half a glass of wheat flour, add 2 tablespoons of maple syrup and 100 ml. vegetable oil, and mix well so that the oil is absorbed.
Then, you need to pour up to half a glass of hot water into the mixture, but this must be done gradually, looking at the consistency of the dough so that it does not turn out to be too liquid.
Knead the resulting thick dough with your hands, wrap in cling film and leave for 20 minutes.
While the dough is at rest, you need to wash, peel and cut the apples (3 pcs.) into thin slices, and also chop the nuts (100 g.) in any available way.
Grease a baking dish with butter and sprinkle with bran. Three teaspoons will be enough.
Sprinkle flour on the work surface and the dough itself. Roll out to a thickness of 1 cm. Make a slightly larger shape.
Then spread the dough into the mold, place apples tightly on top, add nuts, sprinkle with cinnamon and add 3 tablespoons of maple syrup.
Trim the excess edges of the dough, form stripes and decorate the top of the pie with a braided pattern.
Then the dessert is sent to the oven, preheated to 200 degrees, and baked for half an hour. After the readiness should be checked and, if necessary, left in the oven for some more time.
Crazy Cake
A chocolate cake that has an unsurpassed taste, despite the fact that it is prepared without milk and without eggs.
Ingredients: flour, sugar, cocoa powder, soda, vinegar, salt, vanilla sugar, water, vegetable oil, banana.
To begin, you need to mix half a glass of flour, 1 glass of sugar, 4 tablespoons of cocoa powder, 2 teaspoons of vanilla sugar, a pinch of salt and 1 teaspoon of soda.
Add 4 tablespoons of oil and 1 teaspoon of vinegar to the resulting mixture and mix. Then, pour in 1 glass of water and stir everything again until the lumps dissolve.
Pour the finished dough into a baking dish and place in a preheated oven at 180° until ready, about 40 minutes.
The cream is prepared from a ripe banana and half a teaspoon of cocoa. To do this, you just need to beat the ingredients in a blender.
After the pie has cooled, cut it into layers and coat each with banana cream.
The finished cake can be served immediately, or you can put it in the refrigerator for a while so that the cakes are well soaked.
Pumpkin dessert
This dessert is not suitable for vegans, as sour cream and honey are used to prepare it. But vegetarians will like it.
Ingredients: pumpkin, sour cream, sugar, honey, cinnamon, vegetable oil.
Take 300 grams of pumpkin, peel and cut into slices, then lay out on foil, sprinkle with sugar and put in the oven for 20 minutes.
Afterwards, the pumpkin must be chopped in a blender.
To serve, take bowls.
The dessert is laid out in layers: pumpkin puree, sour cream (100 g), puree, pour honey on top, to taste and sprinkle with cinnamon.
Oat cookies
This dessert is significantly different from preparing regular cookies. At least because it is made without flour and without sugar.
Ingredients: oatmeal, dates, walnuts, sunflower oil, warm water, maple syrup, soda, lemon juice, vanillin.
You need to cut 150 grams of dates into small pieces, chop 100 grams of walnuts and mix these products with oatmeal (250 grams).
Mix 50 ml in a separate container. sunflower oil, maple syrup, warm water, and vanillin for flavor. Soda is also added here (at the tip of a knife) and quenched with lemon juice.
Afterwards, the products can be combined and the dough can be kneaded; it can be left for a while (so that the oatmeal swells).
While the oven is preheating to 180 degrees, you need to form the dough into balls, and from them into flat cookies. Next, the product goes into the oven for 15 minutes.
Marmalade on agar-agar
This recipe is the answer to the question, “is it possible to make marmalade without gelatin?”
Agar-agar is an excellent substitute for gelatin, and is much healthier because it is a natural thickener and does not contain preservatives.
So, for preparation you need to mix one and a half tablespoons of agar-agar with 150 ml. water.
Pour 2 cups of fruit or berries with water to make a total of 500 ml. and using a blender turn them into juice - puree.
Afterwards, put the resulting mixture on the stove, bring to a boil and mix with agar-agar. Stir until smooth and bring to a boil again. Cook for another 3-4 minutes, remove from heat and wait until the mixture cools, then pour it into molds. The marmalade hardens at room temperature, but it is better to put it in the refrigerator.
Before serving, you can roll the marmalade in sugar.
For people who simply don’t have time to prepare desserts, ready-made sweets have been created.
Candies with coconut caramel
While working in the office, many people like to take a break for tea or coffee and treat themselves to something sweet. Or they just always keep a box of goodies near their work place. These natural candies can be a useful alternative to store-bought ones for such people if you prepare them in advance, for example on the weekend, and take them with you to work. What do vegans eat?
In order to correctly create a vegan diet, you need to know exactly what products adherents of this food system and lifestyle consume. Unlike vegetarians, those who practice veganism, in addition to meat and fish, also do not consume eggs and milk. Their way of life is based on the assertion that the rights of animals must be protected in the same way as the rights of people. Therefore, vegans do not use leather, fur, wool, silk, etc.
However, the fact that a vegan diet is very limited and inevitably provokes the development of health problems is actually not true. True, veganism includes several stricter movements. In particular, raw foodists do not process food thermally, consuming only the gifts of nature in the form in which they are found in the natural environment. And fruitarians eat exclusively juicy berries and fruits, as well as raw fruits of plants, without mixing them.
But “ordinary” vegans use thermal processing of foods and prepare dishes from a wider range of products. When creating a menu for a week or for a longer period, adherents of this diet can use the following products:
- all varieties of fruits and vegetables;
- grains and legumes;
- whole grain products, including bread;
- vegetable oil – olive, flaxseed, sunflower;
- seeds – sesame, pumpkin, sunflower, flaxseed;
- nuts – walnuts, cashews, peanuts, hazelnuts, etc.;
- seaweed;
- dried fruits – raisins, dried apricots, prunes, figs;
- soy products.
Soybeans are the most important source of plant protein for those who do not consume animal foods.
But, since vegans have a high risk of leaching calcium , it is important for them to completely remove sweet soda, tea, coffee and alcohol from their diet.

What do vegan desserts include?
If we talk about vegans, their diet differs from vegetarian diet in strictness. After all, vegans not only consciously abandoned all types of meat, but also products such as milk, eggs, honey and other additives of animal origin.
On some edible products you can even see the “Vegan Product” logo, which makes the choice much easier and means that the additives do not contain animal origin or production.
Fortunately for those with a sweet tooth, any fruit is now available, and there are also a huge variety of recipes that allow you to combine business with pleasure. They do not increase blood sugar levels due to their low glycemic index content and are therefore considered harmless.
List of products that can be used to make vegan desserts:
- Quinoa. Suitable for making pies.
- Green and black lentils make delicious pancakes.
- Coconut oil is indispensable for baking, and sesame paste is suitable as an additive to desserts.
- Almond oil serves as a thickener. You can use it to quickly prepare almond milk for dough.
- Nutella lovers will love hazelnut butter, as it imparts a similar taste to any sweet.
- Peanut butter is added to cookie dough.
- Applesauce is a good substitute for eggs in baking.
- Maple syrup. Although it is considered a natural sweetener, it is not recommended to overdo it.

- To achieve a sweet-tart aftertaste, you can use cinnamon;
- Vanilla is more suitable for cold desserts and creams, which will give them a sweet aroma;

- Ginger and cloves give a sharp taste and strong aroma, designed for the amateur;
- Mint and anise will refresh the dish.

Vegan sweet apple-apricot pastille
There are hundreds of different marshmallow recipes. Some people boil it and grind it, while others simply dry it in the oven. How many people, so many subtleties of preparing sweets. We suggest you try a delicate marshmallow made from apples and apricots. Even if you have no culinary talents, preparing it will not be difficult.
Compound:
- Apples.
- Apricots.
- Granulated sugar.
- Vegetable oil.
Cooking:
- We wash the apples and apricots, remove the seeds, stems, and leaves.
- Cut into small pieces to make it easier to process into purees.
- Pass through a blender (you can also use a meat grinder). If the mass contains large pieces or fibers from the skin, you can additionally grind the mass through a sieve or cheesecloth.
- Add sugar to taste and mix thoroughly until it is completely dissolved.
- Take a baking sheet and line it with baking paper or parchment.
- Lubricate well with oil.
- Pour the prepared mass of apples and apricots onto parchment and level it. The thickness of the layer should not exceed 1 centimeter.
- Turn on the oven, preheating to 60 degrees. Place the baking sheet there.
- Dry the marshmallow for 5-6 hours. More precise time frames depend on the initial juiciness of the fruit.
- It is very easy to understand that the dessert is ready: press with your finger, and if the mass sticks to your hands, then you need to continue drying. As soon as the layer is easily separated from the parchment, turn it over and dry it on the other side.
- If you are preparing a dish in the summer, you can finish drying it in the fresh air, in the sun.
- Cut the finished marshmallow into strips and twist as desired.
