Liver is a very useful product. This means that it is simply necessary to include it in your diet. It can be consumed in completely different variations: stewed, fried, boiled, in the form of pates and soufflés, and also used for making soups. And this applies to any liver, be it turkey, chicken or rabbit.

Like rabbit meat itself, its liver also belongs to dietary products. Its low calorie content makes it simply irreplaceable as a starting product for culinary masterpieces intended for those gourmets who watch their figure.

Of course, like any offal, it is necessary to include liver in the diet up to once a week, because it is a “filter” of the body, which tends to accumulate harmful substances. But by eating rabbit liver dishes once a week, you will only bring benefits to the body, because it contains:

  • B vitamins;
  • almost the entire range of other vitamins necessary for the body;
  • minerals: calcium, magnesium, iron, etc.

In addition, rabbit liver:

  • easily absorbed by the body;
  • contains a large amount of protein;
  • has a beneficial effect on the gastrointestinal tract;
  • improves the condition of the skin and hair;
  • the best product to combat anemia.

Agree, there are enough reasons to include this valuable product in your diet. But in what form it’s up to you to decide. The Meat Paradise store offers farm products. You can be 100% confident in their quality and safety. You should definitely choose tasty and healthy ingredients for your daily diet.

First, let's look at a recipe for liver pancakes that will delight not only adults, but also children with their unique taste, delicate texture and juiciness. Before cooking rabbit liver, it should be left in cold water or even milk for a short time. This will remove all unnecessary odors. And this rule should be applied in any recipe. To prepare pancakes, we will need:

  • 0.5 kilograms of liver;
  • 1 onion;
  • 2 eggs;
  • flour;
  • salt pepper;
  • half a glass of buckwheat.

First you need to boil the buckwheat. Next, pass the liver, onion and cooled cereal through a meat grinder. Beat in the eggs, add salt and pepper. Now add flour little by little and mix it all thoroughly. It is necessary to bring the liver “dough” to the consistency of thick sour cream.

Now fry the pancakes in vegetable oil on both sides and place in a deep pan. Fill the pancakes with water, add 1 bay leaf and a few black peppercorns, bring to a boil. Simmer over low heat for no more than 10 minutes. After this, let it sit for a while with the lid closed. As a result, you will get tender, juicy and airy pancakes that can be served with any side dish or without it at all, for example, as a snack.

If you don’t know how to deliciously cook rabbit liver, then try making homemade pate from it. No burger can beat crispy toast topped with homemade liver pate. This is a great breakfast option that will please everyone in the household. Here is the list of ingredients:

  • 300 grams of liver;
  • 200 grams of good quality butter;
  • 100 grams of onions;
  • 100 grams of carrots;
  • salt and ground black pepper to taste.

First you need to take out the butter and leave it to warm up. Sauté the grated carrots and onion, chopped into half rings, in butter, then add the pre-washed and dried liver. Fry until done. To check the level of readiness, you need to pierce the liver. If juice is released without blood, then the liver is ready.

A little secret: adding just 50 milliliters of alcohol (cognac or whiskey) to the liver during the frying process will make the pate more aromatic and tasty. However, do not forget to open the lid and let the alcohol evaporate.

Now the last step remains. Beat the butter, fried vegetables and liver with a blender until smooth. At this stage add salt and pepper. If desired, you can include herbs and your favorite spices here. The only advice is that if you cook, it’s better to immediately make a double portion, because everything will immediately fall apart on the sandwiches of your household members.
