So, let's start with recipes with rice, which prevents our delicious minced meatballs from falling apart. By the way, that’s why they are sometimes called “hedgehogs.” If the cereal is raw, then our animal will be prickly. Below are options with a prickly hedgehog and a soft hedgehog.
Meatballs in white sauce
We will need:
- 600 g minced meat;
- 2.5 tbsp. l. rice;
- 5 tbsp. l. parsley greens;
- ground black pepper;
- 2 medium carrots;
- a small piece of celery;
- bulb;
- 150 g sour milk or sour cream;
- 100 g flour;
- one egg;
- 1 tbsp. l. lemon juice (citric acid, vinegar);
- 4 tbsp. l. sunflower oil;
- salt.
How to cook:
- After the rice is cooked until half cooked, strain it and mix it with the minced meat.
- Add half the roughly chopped parsley, salt and pepper to taste.
- Knead the minced meat well, moisten your hands and form balls the size of a walnut; bread them in flour.
- Coarsely chop and cook two carrots, celery and an onion, cut into 4 parts, in a liter of salted water. When it all boils, add the meatballs and cook until the rice is cooked.
- Fry the flour in a dry frying pan, stirring constantly so as not to burn.
- Mix sour milk with fried flour and egg, beat it all with a fork or whisk.
- Pour this mixture into a saucepan with a thick bottom, strain into it as much cooled broth from the meatballs as necessary to obtain a liquid gravy. Place on low heat and cook, stirring constantly. As soon as the gravy boils, remove the pan from the heat and add a little more broth. Add lemon juice there.
- Place the balls into the prepared sauce and simmer over low heat until cooked.
- Sprinkle coarsely chopped parsley on top.
The dish is delicious with a side dish or on its own.
“Hedgehogs” with gravy
Ingredients:
- 500 g mixture of beef and pork;
- 2 tbsp. l. rice;
- bulb;
- 2 tbsp. l. fat for frying;
- one egg;
- 50 g tomato paste;
- spices.
How to cook:
- Grind the meat in a meat grinder 2 times, along with fried, finely chopped onion.
- Add raw cereal, egg, spices and mix well. Divide the mixture into balls the size of tennis balls and lightly fry.
- Fry the tomato paste, dilute it with water or broth, add a bay leaf, add some salt, lay out the “hedgehogs” and simmer over low heat until the rice is ready.
Serve the “hedgehogs” with gravy warm.

Mushroom sauce for meatballs
- We crush the garlic, but do it so that it does not lose its shape. Alternatively, you can flatten it a little with one side of the knife.

- Transfer the fried garlic to a plate, and add sliced mushrooms to the oil in which it was cooked. After a few minutes, add the chopped onion into the pan.

Preparation:

- Knead and form medium-sized meatballs.
- Chop the leek coarsely and cook in a small amount of salted water until soft and the liquid has evaporated. Next, add oil and fry the onion, adding paprika, diluted tomato puree and warm water.
- Fry a little on both sides and place on the onion along with the fat in which they were fried.
- Add water to ⅔ height of the meatball.

- half a bunch of greens;

Preparation:
- Mix the minced meat with coarsely chopped onion and herbs. Salt and pepper to taste.
- Let it sit for 2 hours so that the products get to know each other.
- Form round meatballs 1 cm thick.
- Place the chopped tomatoes in an oiled, thick-bottomed pan.
- Place the balls on top and cover them with tomatoes. Bake in a medium-heated oven.

Ingredients:
- For 50 g of veal pulp (beef, chicken or fish);
- 15 g buns;
- a teaspoon of butter;
- white of one egg.
Preparation:
- We clean the meat from fat, veins and films.
- Grind twice together with a bun soaked in cold water, without crust.
- Grind the resulting mass in a mortar (or beat with a blender) along with butter and tightly beaten egg whites.
- With wet hands, cut into oblong-shaped cutlets and place in a frying pan. Pour a glass of water into it (you can use low-fat broth).

I often make meatballs for future use - I freeze them so that I always have a small supply that can be prepared without wasting time.
Frozen meatballs do not require defrosting, so first you need to put the frying pan on the fire so that the oil gets hot.
After this, place the frozen meat balls in a frying pan and fry on both sides, always until golden brown.
You shouldn’t remove it right away, it’s better to keep it under the lid for another 7 minutes so that the middle is reached. Then you don’t have to worry about the readiness of the meat product and there will be no unpleasant surprises when serving delicious meatballs.
Fried meatballs can also be stewed in sour cream, tomato, creamy mushroom sauce. Then they will be even softer and juicier, and a side dish of rice or spaghetti definitely requires sauce.

Start preparing the meatballs by boiling the rice. Rinse the rice under cold running water. Then transfer the cereal to a saucepan and cover with water. Place the pot of rice on the stove. After boiling, reduce heat. Boil the rice, but do not let it turn into porridge. Place the boiled cereal in a sieve and rinse with cold water. Let the liquid drain completely. Let the rice cool.
Add minced pork and beef to the cooked cereal. You can use ready-made minced meat or grind the meat yourself. Peel the onion. Finely chop the onion. Add half of the onion slices to the rice and minced meat. The second part of the onion will be sautéed.

Preparation:
- Chicken fillet must be taken raw. You can grind it either in a blender or in a meat grinder. The option of chopped minced meat in this case would be inappropriate.
