So, for cooking we need*:

Water (boiling water) – 200 ml

Butter – 80 g

Salt - to taste

Flour – 400 g

For filling:

Cottage cheese – 2 packs (220 g each)

Salt – 0.5 teaspoon

Greens (I have parsley and dill) – 1 bunch

Let's start preparing the dish.

We start by preparing the dough.

Place a piece of butter at room temperature in a deep bowl.

Add salt and pour in boiling water. Stir quickly so that the butter melts and the mixture does not cool.

Add the sifted flour in small portions, constantly stirring everything with a fork. As soon as the mass has cooled a little, quickly knead the dough with your hands.

It will turn out very tender, soft and not sticky to your hands. Place the dough in a bag and let it rest for 20 minutes.

In the meantime, let's prepare the filling.

Place cottage cheese in a convenient bowl and add salt.

Then chop the greens and add them to the cottage cheese. Mix thoroughly.

Let's start forming the rugs.

Divide the rested dough into 12 equal parts, and then roll each part into a thin, almost transparent circle.

Place two tablespoons of filling on one half of the circle and pinch it in the same way as a traditional cheburek, releasing the air and passing along the edge with a fork. We do the same with all the other dough and filling.

Draniki with cottage cheese

Draniki are potato pancakes found in many different cuisines around the world. To prepare them, potatoes are grated and torn on its sharp spines.

To prepare we will need:

  • Potatoes - 7 large tubers
  • Onion - 1-2 pcs.
  • Flour - 2-3 tbsp.
  • Cottage cheese for filling - about 400 g.
  • Salt, pepper, garlic - to taste
  • Oil for frying
  1. Wash the potatoes well and grate them using the finest prickly grater. In the video, the potatoes are simply washed well, but not peeled. I haven’t tried that, I always clean it.
  2. Grate the onion on the same grater, crush the garlic with a garlic press. Salt, pepper, add flour, but not too much so that the potato mixture remains liquid.
  3. Mash the cottage cheese well and add salt.
  4. Heat a frying pan with a small amount of oil, add the potato mixture one tablespoon at a time and level it into thin pancakes, put a little cottage cheese in the center of each and another spoonful of potato mixture on top to cover the filling.
  5. Fry on both sides until golden brown.

Serve with or without sour cream.

Cottage cheese casserole without eggs

Another dietary recipe made from cottage cheese, familiar to everyone since childhood - cottage cheese casserole, syrniki (curd pie) or cheesecake, if you want to call it that.

  • Cottage cheese - about 1 kg (I have 900g)
  • Natural yogurt, condensed milk, sugar or sweetener - to taste and desire
  • Agar-agar - 2 tbsp. with a slide + 1 tsp.
  • Oranges - 3 pcs.

Recommendations:

1. The curd mass can be made to your taste. You can exclude yogurt and condensed milk, just add sugar or a sweetener. You can add any dried fruits to taste. The main thing is that the curd mass is very tasty for you.

2. If there is no oven, agar-agar can be dissolved in a glass of hot orange juice or water, very quickly mixed into the curd mass and beat with a blender, pour into a mold and put in a cold place to harden. In this case, you should not add yogurt to the cottage cheese so that the mass is not too liquid. With this cooking option, agar-agar can be replaced with gelatin.

Curd casserole with kefir

Products:

  • cottage cheese - 500 g;
  • kefir - 300 ml;
  • sour cream - 150 ml;
  • semolina - 200 g;
  • sugar - 2 tablespoons;
  • vegetable oil;
  • a teaspoon of vanillin and the same amount of soda.

Cooking process:

  1. Combine cottage cheese with sour cream and mix well. Add the remaining ingredients in the following sequence: kefir, vanillin with sugar, semolina. After each ingredient, the mass must be kneaded well.
  2. Pour vinegar over baking soda and add to curd mixture. Beat the resulting mass with a blender, then set it aside for half an hour.
  3. After 30 minutes, pour the dough into an oiled multi-cooker bowl. For baking, the same mode is used, cooking time is an hour.
  4. A hot casserole has every chance of falling apart when taken out, so at the end of the cooking time, do not remove it immediately, but let it cool.

After removing the cooled casserole from the pan, cut into portions and serve with condensed milk or jam.

Chocolate-banana curd casserole without eggs

Products:

  • soft cottage cheese - 1 kg;
  • banana - 2 pcs;
  • chocolate - 1 bar (100 g);
  • sugar - 250 g;
  • 10% cream - 100 ml;
  • starch - 4.5 tablespoons.

Cooking process:

  1. Combine cottage cheese, sugar and bananas in a bowl. Grind everything thoroughly and divide the resulting mass in half (into two different bowls).
  2. Break the chocolate bar.
  3. Pour the cream into a small saucepan and add the chocolate pieces. Place the saucepan on the fire and heat until the chocolate is completely dissolved. The smaller the chocolate pieces, the faster it will dissolve. Cream can be replaced with a mixture of milk and butter.
  4. Add the chocolate mixture and 2.5 tablespoons of starch to one of the bowls with the banana curd mixture. Add the remaining starch to a second bowl.
  5. To avoid sticking, grease the multicooker pan with oil and begin laying out the dough, which follows the principle of the well-known Zebra pie. For those who don’t know: first pour a couple of tablespoons of light dough onto the bottom of the saucepan, then the same amount of chocolate dough. And so they pour out all the existing dough.
  6. Set to cook in baking mode for 60-90 minutes.

In each case, the baking time is individual, since it directly depends on the power of the multicooker.

No-bake strawberry cheesecake made from cottage cheese without eggs and gelatin

In this video, a cheesecake is made from cottage cheese with strawberries, but in fact, you can use any berries: blueberries, raspberries, peaches, etc. The recipe, without eggs or gelatin, is completely vegetarian. In the video, Chanterelle bakes the crust, but you can use cookies for the base. Be sure to watch the video - there are a couple of secrets on how to whip cream correctly.

To make no-bake strawberry cheesecake we will need:

Base: 50g sugar, 100g butter, 150g flour, pinch of salt, 1 tbsp water.

Mix all ingredients and knead the dough. Place it in a thin layer on the bottom of the mold, make a small side, and prick with a fork in several places. Bake at 200 degrees for 15-20 minutes.

Filling: about 1 kg of cottage cheese, about 1 kg of strawberries, sugar to taste, 2-3 tbsp. with a heap of agar-agar, 250g milk, 200g cream 35% fat as desired.

Beat some of the strawberries with cottage cheese and sugar in a blender.

Stir agar-agar in milk and let it swell for 5-10 minutes. Put the milk on the fire, stirring constantly, bring to a boil, do not boil. Pour milk with agar-agar into the curd mass, whisking constantly with a blender.

If you use cream, beat it separately to soft peaks and gradually fold it into the curd and strawberry mixture.

Place some of the whole berries on the cooled base, having previously greased the sides of the mold with oil or lined it with baking paper. Pour the curd and cream mixture over the berries. Place in the refrigerator to harden. Decorate the top to your taste.

Children's baked goods with apples

Required Products:

  • three tablespoons of kefir or natural yogurt;
  • two apples;
  • three spoons of sugar;
  • a handful of raisins;
  • 0.4 kg cottage cheese;
  • four spoons of semolina.

Cooking process:

  1. Grind the cottage cheese or make it more homogeneous using a blender, mix with yogurt or kefir.
  2. Add semolina, sugar and raisins to it, mix the mixture thoroughly again until smooth.
  3. The apples must be peeled, the hard center removed and the pulp turned into small pieces. Mix the fruit slices with the rest of the ingredients.
  4. Place the resulting dough in the mold and put it in the oven for about half an hour, turning on the heat at 190 degrees.

Eggless lazy dumplings with cottage cheese and coconut flakes

Well, very tasty lazy dumplings with cottage cheese without eggs, prepared with whole grain flour and a minimum amount of sugar - quick and easy, healthy and with a little secret.

To prepare lazy dumplings without eggs we will need:

  • Cottage cheese – 400g
  • Whole grain flour - 100g (or white, premium)
  • Vanilla sugar 1 tbsp. (or vanilla essence 4-5 drops)
  • Sugar 2-3 tbsp. (adjust to taste, add more if necessary)

Classic recipe for cottage cheese cookies without eggs

To prepare you will need:

  • 600 g cottage cheese
  • 2 cups of flour
  • 1 cup of sugar
  • a pinch of salt
  • half a teaspoon of baking powder
  • a pinch of vanillin
  • 200 g margarine
  1. Mix softened margarine with sugar and cottage cheese.
  2. Gradually add flour and remaining dry ingredients.

  3. Knead elastic dough.

  4. Wrap it in cling film and leave it in the refrigerator for half an hour.

  5. We take out the dough, divide it into parts, and roll out each of them with a rolling pin. The thickness of the sheets should be approximately 5 mm.

  6. Cut the dough using a mold. And dip each side in sugar.

  7. Place the pieces on a baking sheet and put them in the oven, preheated to 200 degrees for about half an hour.

  8. The cookies are ready!

If desired, you can add cinnamon to this recipe and replace regular sugar with vanilla or brown sugar.

How to replace eggs in baking

It happens that housewives refuse to make baked goods without eggs, but for competent cooks, the lack of chicken product in the refrigerator is not a hindrance. In sweet and savory baked goods, eggs can replace the following products:

  • half tbsp. l. soda mixed in the same amount of lemon juice and milk (40 ml);
  • 20 g of yeast mixed in one quarter glass of water;
  • banana or apricot puree;
  • a pack of gelatin, diluted in 2 tbsp. l. hot water;
  • one fourth of a teaspoon of baking powder, diluted in 40 ml of water;
  • 40 g potato or corn starch;
  • 20 g soy flour, whipped in 40 ml water until foamy;
  • 17 ml of vegetable oil mixed with 40 ml of water and the same amount of baking powder;
  • oatmeal mixed with water;
  • mineral water.

To add the aroma of egg yolk when preparing second courses, a product of volcanic origin is used - black salt, and to give dishes a pleasant yellow color - turmeric.

Recipe, with photos step by step

We are carrying out preparatory work. We take out the butter. Leave to thaw at room temperature.

Pour raisins into a glass. Fill with boiled water. Leave for 20-30 minutes for swelling. After the time has passed, drain the water. Wrap the raisins in a towel, removing excess liquid.

Let's move on to cottage cheese. To make it uniform, rub through a sieve. Transfer to a deep container. Pour in semolina.

Tip: to make the casserole more tender, mix the semolina with sour cream in advance. Let it swell for 30-50 minutes .

Also add 2/3 of the melted butter. Mix into a homogeneous mass. Add dried raisins. Mix.

We take out the muffin tins.

Note: You can use a regular baking tray.

Turn on the oven at 180 degrees . Let it heat up. We proceed to filling the molds with curd mass. In a bowl, mix sour cream and remaining butter. Grease the top of the curds with sour cream. Place in the oven to bake for half an hour.

We can say that this is a recipe for a dietary casserole, because it doesn’t even contain sugar, but is full of healthy ingredients.

Required Products:

  • two spoons of semolina;
  • about 400 grams of cottage cheese;
  • 50 grams of raisins.
  • one large carrot;
  • a glass of sour cream.

Cooking process:

  1. Combine the indicated amount of semolina with sour cream and leave for about an hour so that it swells well. If desired, the dairy product can be replaced with kefir or even fermented baked milk.
  2. Add all the remaining ingredients from the list to the semolina. Please note that the carrots need to be grated, and it is advisable to pre-soak the raisins so that they become softer.
  3. Transfer the mixture into a mold and cook for about 35 minutes at 180 degrees.

Curd casserole with flour

Another well-known and beloved recipe for cottage cheese with wheat flour. The latter allows you to glue the cottage cheese together during baking and prevent crumbling.

Tip: wheat flour can be replaced with crushed oatmeal.

Ingredients for cooking:

  • 400g cottage cheese;
  • 6 tbsp. honey or granulated sugar;
  • 2 tbsp. flour;
  • 5 ml sour cream;
  • 100g raisins.

Recipe

Pour raisins with warm boiled water in a ratio of 1 to 2.

We are carrying out preparatory work. Pass the cottage cheese through a sieve. This will give it looseness and uniformity. Transfer to a deep container. Add honey, sour cream and sifted flour. Drain the water from the raisins. Remove excess liquid with paper towels. Add to the curd mixture. Mix.

Tip: raisins can be replaced with any dried fruit or fresh fruit.

Turn on the oven at a temperature of 180 degrees . Let it heat up. Grease a baking tray with butter. Spread the mixture. Bake for 30 minutes . After the time has passed, take it out and let it cool.

This recipe is suitable for adherents of a sports lifestyle. The dish is a rich source of protein, which can replace a chicken egg by 100%.

Tip: you can replace sour cream with 1 softened banana.

The pie according to this recipe turns out to be unsurpassably tasty and reminiscent of a shortcrust pastry cake. You can make it for breakfast for the whole family or serve it in portions for a holiday lunch. When choosing the main ingredient, you should give preference to dry cottage cheese.

Tip: moist, long-stay cottage cheese can be easily made dry and crumbly. To do this, just add 2 tbsp to it. starch.

Ingredients for cooking:

  • 500g dry cottage cheese;
  • a pinch of turmeric (to add color);
  • 150g honey or 350g granulated sugar;
  • vanillin (for aroma);
  • 1 stick of butter;
  • 1 tsp soda;
  • 3 tbsp wheat flour.

Recipe

Take the butter out of the refrigerator. We cut it into several parts. Let it melt slightly near the battery.

In a deep container, combine the following ingredients: cottage cheese, ½ part of all granulated sugar, vanilla sugar and turmeric (for color). Turn on the blender and mix until a homogeneous mass is formed.

Let's move on to the test. Place the melted butter in a deep saucepan. Add 150g of sugar and soda to it.

Tip: in order for the dough to rise during baking, the soda should be quenched with vinegar in a separate cup or completely replaced with 3 teaspoons of baking powder.

Turn on the blender and knead a homogeneous dough. We begin to gradually add wheat flour. In total we pour out 450g. The dough should become elastic, not stick to your hands and not tear.

Turn on the oven at 180 degrees . Let it heat up. Grease the baking container with butter. Divide the dough into 3 parts. 2/3 should be placed in a baking dish. We put curd filling on it. Sprinkle the rest of the dough with the remaining flour. Grind by hand until crumbs form. Sprinkle it over the top of the pie. Press lightly. Bake for 25-30 minutes .

After the time has passed, the curd pie is ready. He needs to cool down.

Attention: starting to cut it while it is hot, the pie will simply fall apart.

Serve in portions with hot tea or coffee.

Tip: the baked goods turned out quite sweet. For those who don’t like excessive sweetness or plan to serve the pie with condensed milk or jam, reduce the amount of granulated sugar. You can also replace it with dried fruits, fresh or canned fruits.

Additional Information

Like any cottage cheese pastry, this pie is best cooled and then enjoyed! We really liked the combination of lightly chocolate chips with the filling, which during baking becomes almost a single whole, not a sweet pie, you can adjust the sweetness yourself. I really liked it!

Curd cookies

The recipe for such cookies is not only simple, but also requires a minimum of ingredients that every housewife can find in her home.

Ingredients for cooking:

  • 1 pack of cottage cheese (150-200g);
  • ½ pack of butter (100-130g);
  • 1 cup wheat flour;
  • 100-150g brown or regular sugar.

Recipe

In a deep container, combine the following solid ingredients: cottage cheese, butter and wheat flour. Mix vigorously until smooth. You should end up with an elastic (due to the oil) ball. Wrap it in cling film and put it in the refrigerator for 40-60 minutes . The dough should rest.

After the time has passed, take out the dough. We begin to roll out into a layer no more than 5mm thick. Using a cup, cut out circles.

Turn on the oven at 200 degrees . Let it warm up. Line a baking tray with baking paper.

Pour granulated sugar into a plate. Dip the prepared dough circles into sugar on one side. Fold in half. Dip one half again. Let's add it up again. Dip the top layer in sugar again. Place on a baking sheet. The distance between them is at least 2cm. We do this with all the cookies. Bake for 20 minutes . After the time has passed, let it cool.

Serve with aromatic hot tea. Your friends and family will not remain indifferent to these tender, eggless cookies that melt in your mouth.
