Potatoes are a budget-friendly, nutritious, and low-calorie product (calorie content in raw form is about 70 kcal). Potatoes fried in a frying pan are considered the most delicious and aromatic, despite the fact that the calorie content of the product increases to approximately 200 kcal. To increase the nutritional properties and satiety of the dish, during the frying process, potatoes are often supplemented with a chicken egg.
Potatoes with eggs - step by step photo recipe
A simple and always tasty dish, the preparation of which does not require any special culinary skills. The dish is many times healthier than traditional fried potatoes, because it is cooked in the oven without adding a large amount of fat.
Since raw potatoes take a long time to cook in the oven, we recommend boiling them in their skins first until tender.
Casserole with bell pepper
This simple and satisfying dish will be a great dinner for the whole family. It is prepared from simple ingredients that are almost always found in every kitchen. To make this casserole you will need:
- A kilo of potatoes.
- 4 eggs.
- Bell pepper.
- ¼ stick of butter.
- Salt and any fresh herbs (to taste).
The washed and peeled potatoes are boiled until tender, cut into arbitrary pieces and placed in a pre-oiled form. Lay strips of sweet pepper on top. All this is lightly salted, poured with beaten eggs and sent for heat treatment. Bake the dish at moderate temperature for twenty minutes. The finished potatoes and eggs are sprinkled with finely chopped herbs and placed on plates. It is served hot, because after it cools completely it becomes less tasty.
Cooking instructions
Peel the boiled potatoes and cut them into medium-thick pieces. Place them in a round pan lined with baking paper, sprinkle with a little coarse (or iodized) salt and ground pepper.
Now carefully break three fresh eggs inside, trying to prevent the yolk from spreading (although if this happens, it’s okay), which we immediately sprinkle with dried (or fresh) dill.
Sprinkle evenly with finely grated hard cheese of any kind on top.
Bake in an oven heated to 190 degrees until fully cooked, which will take approximately 15 minutes. The dish is ready, all that remains is to decorate it with a light sauce and serve it on the table along with green tea.

This tasty and healthy dish has a presentable appearance. Therefore, there is no shame in serving it to unexpected guests. This time you will need:
- 100 grams of cheese.
- 6 eggs.
- 3 potatoes.
- Salt, pepper and fresh herbs.
Thoroughly washed potatoes are boiled directly in their skins, cooled, cut in half and carefully removed from the core. The resulting boats are sprinkled with salt and spices, and then filled with grated cheese. An egg is driven into each of them, being careful not to damage the yolk. This nutritious Spanish dish is very similar to a regular casserole. It is an egg and potato omelet prepared with the addition of aromatic seasonings and various vegetables. To create this tortilla you will need:
- 4 potatoes.
- Large onion.
- 5 eggs.
- A clove of garlic.
- Olive oil.
- Salt and any spices (to taste).
Having figured out what to cook from potatoes and eggs, you need to understand how best to do it. The process should begin by washing and peeling the vegetables. After this, the potatoes are cut into cubes, combined with crushed garlic and fried in heated olive oil, not until fully cooked. Then add chopped onion and continue frying. After a couple of minutes, the future tortilla is poured with beaten, lightly salted eggs, mixed and fried over medium heat. At the same time, it is turned over several times from one side to the other so that it browns evenly. If desired, during the preparation of the tortilla, you can additionally add fresh champignons, frozen green peas, bell peppers or any other vegetables.
How to cook fried potatoes covered in eggs in a frying pan
First you need to peel the potatoes, then cut them into medium pieces and place them in a deep bowl.
Salt and sprinkle the chopped vegetable with seasoning. Add spices at your own discretion.
Note: Potato seasoning contains turmeric, which gives the vegetable an appetizing orange hue.
Now it’s your turn to pour in the refined oil, mix the contents of the bowl thoroughly so that each slice of potato is coated with spices.
Pour the rest of the refined oil into a hot frying pan, then place the seasoned pieces of vegetable so that they are evenly distributed along the bottom.
Cook everything covered until the slices soften. If you want to cook potatoes with a crispy crust, you need to fry them without a lid.
Peel the onion, then cut it into thin half rings.
Add the chopped onion to the potatoes, then stir everything together.
Note: It is not recommended to stir the contents of the pan frequently so that the potato slices do not fall apart. It is enough to control the degree of frying of the potatoes and stir if necessary, ensuring even cooking.
Chop the garlic cloves, then add to the contents of the pan.
Tip: If you don't like the taste of garlic, then you shouldn't add it to potatoes. The same advice applies to onions.
Preparation
I peel the potato tubers and cut them into thin slices, about 0.5 cm thick. You can cut it larger, but the potatoes will take longer to fry.
Heat the oil in a frying pan and turn the heat down to medium. I lay out the potatoes and stir immediately so that the hot oil gets on each slice. Stirring frequently, fry for about ten minutes until half cooked.
I cut the onion into small cubes, you can cut it larger or into half rings - as you are used to. I pour it into the potatoes and stir.
I fry for another ten minutes. The potatoes need to be brought to such a state that the inside of the slices becomes soft and a light golden brown crust appears on top. There is no need to fry it too much as with regular frying, a little browning is enough.
I don’t fry the onions either, they turn out soft and slightly caramelized. I remove the pan from the heat and start making the egg scramble.
I break the eggs into a spacious bowl. I foam with a whisk, combining the whites and yolks. I add some salt.
I transfer the fried potatoes into the egg mixture and mix. Straight hot, along with butter and onions - if you cool it, the taste will be completely different.
It is better to take a high pan for a Spanish omelette so that the omelette comes out fluffy. I pour a little oil and heat it up. I pour out the contents of the bowl and sprinkle with ground pepper.
Cover with a lid and cook over low heat until almost the entire mass has thickened. It usually takes me 5-6 minutes.
At this stage of readiness, I flip the tortilla. I use a spatula to run along the sides and then lightly shake the pan to make sure that the omelette does not stick to the bottom.
I take a flat plate with a diameter larger than the frying pan. I cover and turn the omelette onto a plate.
Then I carefully move it back to the pan. Cook for another three minutes until the second side is browned.
Place the tortilla on a large plate in the same manner, upside down. Sprinkle with herbs, cut into segments and serve.
The omelette is so filling that no additions are needed. Maybe fresh tomatoes or a light salad.

Scrambled eggs with potatoes and cheese
What to take:
- five pieces of potatoes;
- 5 tsp. butter;
- six eggs;
- dried dill;
- 70 g cheese;
- three onions;
- vegetable oil;
- salt.
How to do:
- Peel and cut the potatoes, place on a paper towel and pat dry.
- Prepare two frying pans. Place one on low heat, the other on high.
- Fry the potatoes in vegetable oil over maximum heat, placing them in one layer on both sides. Then transfer it to another frying pan and leave to simmer. Repeat the frying process three to four times, filling the second frying pan with browned potatoes.
- Break eggs into a bowl, add salt and mix.
- Grate the cheese, place it in the eggs and stir.
- Under the second frying pan, turn the heat to high and after 30 seconds pour the eggs and cheese over the potatoes.
- Cut the onion into thin half rings and fry it until golden brown.
- Reduce heat under the frying pan with potatoes and eggs, pierce the eggs in several places and put butter in the puncture areas.
- Rub a little cheese onto the scrambled eggs, sprinkle with dill, and cook for 10 minutes, covered, over low heat.
Place the finished scrambled eggs on plates and place a portion of fried onions next to them.
