  1. The first step is to prepare the shins. They must be rinsed under running cool water, dried with paper towels and separated from the bones. You need to make cuts on the top and bottom of each drumstick with a sharp knife, then cut along the bone and carefully remove the meat from the bone.
  2. Then you need to prepare the sauce. Pour sour cream, soy sauce, mustard into a bowl, add dried basil, coriander, turmeric, freshly ground pepper and salt. The ingredients must be mixed well until a single mass is formed. Coat the chicken meat well with the prepared sauce and leave it to marinate for at least 40 - 50 minutes.
  3. Now you can place the chicken in a heatproof baking dish and prepare the apple and ginger. The apple must be washed in water, peeled with a knife or vegetable peeler, cut into 2 parts and cut out the seeds. The apple can be cut into small cubes and placed on the chicken in the sauce. Ginger should also be cut into small pieces and placed on top of the workpiece. A clove of garlic must be squeezed onto the workpiece through a press.
  4. Then you can grate the cheese on a coarse grater and sprinkle on the workpiece.

  5. The form with meat must be covered with foil and placed in the oven, heated to 180 °C, for 30 minutes. After the time has passed, remove the foil and return the pan to the oven for another 30 minutes.

The finished medallions with apple and ginger must be divided into portions and sprinkled with chopped parsley.

  1. First of all, fry a finely chopped onion with previously defrosted mushrooms. In this particular case - white and boletus.
  2. Remove the skin from the fillet and cut it off the bone. We wash the resulting pieces with running water, dry them and cut them as finely as possible. The resulting mass should resemble minced meat in its consistency.
  3. Season the chopped fillet with a mixture of chicken spices and salt. Add ketchup and mix thoroughly.
  4. Add mayonnaise to mushrooms and onions. Mix.
  5. Prepare a baking sheet: line it with foil and grease it with oil. We form “medallions” from minced meat, as shown in the photo.
  6. For each “medallion” we place mushrooms and onions (plus or minus a teaspoon) and sprinkle grated cheese on top.
  7. Heat the oven to 180 degrees and load a baking sheet into it for 25 minutes. If possible, you can turn on the top burner for 5 minutes for a better effect.
  8. After the specified time, the dish is completely ready and can be eaten either on its own or with a side dish. That's all, actually.   2. Next, you need to pour 2 tbsp onto a plate. l. flour, roll each piece of chicken in it and place them on a hot frying pan greased with sunflower oil. The chicken needs to be quickly fried over maximum heat so that it does not turn out to be over-dried, until a light golden color appears. The fried fillet can be transferred to a plate.
  3. Now in a clean frying pan you need to melt 50 g of butter, pour in the remaining flour and fry for about 1 - 2 minutes, stirring constantly, then pour in the milk and continue vigorously stirring the ingredients so that all the lumps of flour disperse. The sauce should be brought to a boil and simmer for 2 - 3 minutes. If lumps of flour remain, you will need to strain the sauce through a sieve.
  4. Then you need to put the chicken in the sauce, turn the heat to minimum and simmer the ingredients under the lid for at least 20 minutes. In the meantime, you can wash the mushrooms, remove the skin and cut them into slices. Place the mushrooms in a clean frying pan with 25 g of butter and fry them until the moisture has completely evaporated.
  5. Afterwards, you need to cut off the crusts from the loaf slices, heat another frying pan, melt the remaining piece of butter in it and fry the slices until a crust forms.

We divide one chicken breast into three medallions. Three pieces will yield six fairly large pieces. You can use a kitchen hammer and make them a little thinner. All of the listed dried spices should be mixed in a separate container. We will roll chicken fillet in them.

Looking at any recipe with a photo of chicken medallions, you can see that the meat pieces are always well fried. Don't keep them in the pan for too long. Three minutes on high heat is enough for an appetizing blush to appear. Before turning the medallions over to the other side, add a little butter, aromatic rosemary and garlic to the frying pan.

Let's turn down the fire. Pour a couple of tablespoons of white wine on top. Covering the pan with a lid, wait for the meat to simmer a little. During these three minutes, the spinach is chopped and added to the meat. One more minute - and the tender, delicious medallions are ready.

With pineapples

It is better to use fresh pineapples, but canned ones can also be used.

  • 4 pineapple rings;

  • 100 g hard cheese;

  • fresh ground pepper.
