For fish landoriki from pink salmon, prepare the ingredients according to the list for the recipe.
Cut the skin off the pieces of pink salmon, then remove all the bones from the pulp.
Cut the resulting fillet into small cubes/pieces.
Add finely chopped onion, starch, egg, mayonnaise and salt. Stir. Be careful with salt, because... The fish itself is already a little salty and there is also mayonnaise in the minced meat.
I use corn starch in the recipe, I like it better, but potato starch is also suitable instead, as well as regular wheat or rice flour, only in smaller quantities.
There is a recommendation: let the resulting mass stand in the refrigerator for at least one hour or even longer, and then fry. I tried both frying immediately and later. Indeed, it feels like after some marinating it still tastes better.
Fry pink salmon fish landoriki in vegetable oil, spooning portions of minced meat into a frying pan. First on one side, then on the other, i.e. almost like pancakes.
Potatoes (boiled, fried, mashed) and crumbly rice are especially suitable as a side dish.

Landoriki from fish
This dish is a good substitute for fried fish or fish cakes.
Ingredients:
- red fish – 400–500 g;
- onion or 2 cloves of garlic - to choose from;
- flour – 2 tbsp. l.;
- eggs – 1 pc.;
- mayonnaise – 150 ml;
- salt and pepper.
Preparation:
- Remove the skin from the fish and remove the bones. Cut into layers and then into pieces.
- Finely chop the onion.
- Mix fish with remaining ingredients. The main thing is not to add more flour than required, otherwise the mass will be very thick.
- Leave for ¼ hour for the fish to marinate.
- Fry in a frying pan on both sides.
Serve hot with mashed potatoes, but these cutlets are delicious served cold.
Potato landoriki with minced meat
Prepare any minced meat. You can take beef, or mixed pork-beef.
It’s also tasty and less fatty with minced chicken.
Grind the onion and garlic in a blender.
Add them to the minced meat. Break one chicken egg into the minced meat, add a little salt and pepper. Mix.
Now we need to grate the potatoes. Three half on a coarse grater, and the remaining half on a fine grater.
Combine both halves in one bowl and mix. Squeeze out a little excess juice and add some salt.
Do not squeeze too hard, otherwise the potatoes will turn out too dry and it will be inconvenient to make pancakes from them.
Take some potatoes in your palm and form into pancakes. Place the minced meat in the center using a spoon.
Seal the edges, adding more potatoes, so that the minced meat is completely hidden inside.
Try to make the layer of potatoes thin, then the landoriki will be well fried inside.
Give the landaurs a flat oval shape.
Fry them until nicely golden brown in a frying pan with enough oil.
Approximately 5 minutes on each side.
Ready-made Landoriki can be placed on a paper towel to drain excess oil.

Landoriki according to this recipe turn out to be unusually fluffy and incredibly tasty. The mild flavor and slight spicy note will surely help make these wonderful cabbage cutlets one of your favorite vegetable dishes.
Ingredients
- White cabbage – 500 g
- Semolina - 1/2 cup
- Onion - 1 pc.
- Lenten mayonnaise - 3 tbsp.
- Garlic - 1-2 teeth.
- Tomato sauce (homemade or store-bought) - to taste
- Salt - to taste
- Khmeli-suneli seasoning - to taste
Preparation
Let's get started. Let's start by pouring semolina with water (about half a glass), it should swell. The next step will be cabbage - we will grate it on a coarse grater. Peel the onion and finely chop it with a knife. All preparatory operations have been completed. Let's start forming the dough.
Place finely chopped onion, semolina swollen in water, and a few spoons of tomato sauce into a container with grated cabbage (in this recipe, homemade tomato sauce was used, but a store-bought version is also perfect). Add khmeli-suneli seasoning, like tomato sauce, to taste. Also add salt to taste. Press the garlic using a garlic press. Let's not forget about mayonnaise (since the ingredients do not contain eggs, it will be used as a binding element).
Mix all ingredients very well with a spoon. The dough should be sticky. If it is a little liquid, then you should add a couple of tablespoons of flour. Let's wait until the frying pan heats up, into which, of course, you have previously poured enough vegetable oil for frying. Place the molded cutlets in a frying pan. Set the fire level to the lowest setting on the stove. All you have to do is wait until all the cutlets are fried and you can start tasting. Bon appetit!
