Chicken fillet on skewers cooked on a grill pan
Let's prepare chicken fillet fried in a grill pan and marinate it in soy sauce.
- 500 gr. fillet;
- 50 ml soy sauce;
- 2 sprigs of rosemary (optional);
- 3 cloves of garlic;
- salt, black pepper to taste;
- vegetable oil (a little).
Wash the fillet, dry it, cut it into two parts lengthwise. Place the meat in a bowl, pour over soy sauce, add sprigs of rosemary (or add another pinch of dry rosemary). Cut the garlic into slices and add to the meat. The meat can be lightly salted, but keep in mind that soy sauce is salty. Let the meat marinate for an hour in the refrigerator.
Grease the grill pan with oil using a silicone brush. When the pan is hot, place the fillet on it and fry for 1.5-2 minutes on each side. When frying, lightly press each fillet on top with a spatula so that golden brown stripes form on it. Serve the fried fillet hot.
Kebab lovers can cook chicken fillet on skewers, fried in a grill pan. Of course, this is not a full-fledged kebab, but still very tasty.
- 2 chicken breast fillets;
- 0.5 lemon;
- 2 tablespoons mustard;

- 4 tablespoons of vegetable oil;

Place the marinated fillet on a sheet of baking paper and cover it with another sheet on top. Beat the fillet well with a rolling pin on both sides. Cut the beaten fillet into pieces the size of a walnut. Thread the pieces onto skewers.
Heat up the grill pan and place the cooked kebabs. There is no need to grease the pan; the oil in the marinade is enough. Fry the fillet on skewers on all sides until cooked through. Serve the kebabs hot.

Step 1: Preparing the steaks.
Before cooking, chicken steaks must be washed under running cold water, cut off the white veins with a knife, and then dried with a paper towel or napkins. To keep the meat soft and tender, it should be beaten with a special hammer on a cutting board, after wrapping it in cling film or a disposable bag to prevent splashes. The most optimal thickness of a pounded steak should be 0.5-1 cm.
Step 2: Prepare the milk-egg mixture for frying the steaks.
Mix milk and eggs in a bowl, whisk until smooth. Pour 3 tbsp into another bowl. spoons of flour, half a teaspoon of salt and 1/4 teaspoon of ground black pepper, you should also mix everything.
Step 3: Fry the chicken steaks.
Place the frying pan over medium heat. Dip the steaks in a mixture of milk and eggs, then roll them in flour with pepper and salt. Repeat this procedure a second time. Pour vegetable oil into a hot frying pan and wait until the oil becomes hot. Fry the steaks on each side for 3-5 minutes until golden brown.
Step 4: Prepare the sauce.
The oil from the frying pan needs to be separated and the sediment is poured into a bowl. Heat a frying pan and pour the settled oil into it, add flour and fry, whisking, until the mixture turns brown. Then pour milk into it and cook for 5-10 minutes.
Step 5: Serve the chicken steak.
Place chicken steak on a serving plate. You can pour sauce over it or not, but serve it (sauce) in a separate bowl. Chicken dishes, including this one, go very well with side dishes such as fried or boiled potatoes, mashed potatoes, salad of cucumbers, tomatoes, corn and other vegetables. Enjoy your meal!

I cleaned the chicken breast from bones, skin and membranes. The fillet was cut along the keel into two equal parts - a large cut will preserve the juiciness of the tender meat.
Wrapped the fillet in cling film. Lightly beat it with a hammer. There is no need to turn the steak into a thin chop. Try to hammer only the thick edge of the piece so that it reaches about 2 centimeters. The task here is to “flatten” the meat so that the area of contact with the pan is as large as possible. If the thickness is the same over the entire surface of the piece, then the steak will cook evenly, and there will be no such thing that in one part it is overdried or, on the contrary, damp.
To make chicken steak juicy and tasty, the meat should be marinated. In a small bowl I combined soy sauce, vegetable oil, balsamic vinegar, added pepper, salt and a couple of pinches of aromatic herbs.
I poured the prepared mixture over the chicken steaks. Peeled the garlic and cut it into large pieces. Sprinkled the meat with garlic and left to marinate for 30 minutes at room temperature.
For frying, preheat a grill pan. Lightly grease the bottom with vegetable oil, spreading it with a brush. I removed the pieces of garlic from the meat (otherwise it would burn), then rubbed the chicken steaks with sweet ground paprika and placed them in a frying pan that was as hot as possible. Fry on the highest heat, without a lid, for 1-2 minutes on each side. The surface of the steak should grip the crust and seal the meat juices inside, while the pieces will remain raw inside.
To bring the meat to readiness, I placed the fried pieces in a baking dish (my frying pan has a detachable handle, if you don’t have such a dish, then heat the dish in the oven so that it is hot). I placed pieces of garlic on top, covered the pan with foil and put it in the oven, preheated to 180 degrees. Bake for 10-12 minutes.

- Rinse the fillet under running cold water and dry it with paper towels.
- In a separate container, beat the eggs and add salt to them. You can add any spices that suit your taste.
- Pieces of chicken fillet should be dipped in the egg mixture and rolled in breadcrumbs, then placed in a well-heated frying pan.
- Each piece of chicken must go through the procedure described above.
- Fry the breaded steak until the crust is golden brown and the chicken fillet inside is completely cooked.

So, to make juicy and spicy fried chicken breasts, start by preparing the breasts themselves. Remove the chicken from the refrigerator in advance; it should be at room temperature, as cold chicken will not cook evenly. Wash the chicken fillet and pat dry. Cut each fillet lengthwise into two thinner steaks. Lightly pound the chicken on both sides. To prevent splashes from flying in different directions when beating, cover the chicken with film or a bag.
Salt and pepper the steaks on both sides. You can, of course, add salt and pepper to the marinade, but, in my opinion, this way the chicken is salted more evenly.
Prepare the marinade. To do this, combine vegetable oil, pressed garlic and spices in a separate container.
Mix the marinade thoroughly and coat each piece of chicken on both sides. You can use a pastry brush, or you can simply mix the chicken breasts with the marinade with your hands.
Let the chicken marinate for at least 20 minutes. Then heat a little odorless vegetable oil in a frying pan and place the chicken in one layer. If you have a grill pan, then use it. Fry the chicken over medium heat. A small one will not produce a golden crust, and a strong one will not have time to fry the inside. First, fry the chicken on one side until golden brown, then turn over and fry on the other. Since the chicken pieces are thin, they will have time to fully cook in 7-8 minutes. If cooked longer, the chicken will become tough.
Place fried chicken pieces on a paper towel to drain excess oil. Chicken breast steaks are ready. Place them on a plate and keep them covered so they don't cool down longer. Serve the fried chicken breast hot with any cereal or vegetable side dish.

Let's start preparing the marinade. Pour about 100 ml of soy sauce into a small bowl or deep bowl, add 2-3 tablespoons of mustard to it and mix well.
Add 50 g of honey, it doesn’t matter whether it’s liquid or thick candied. Stir well with a spoon until smooth.
You should carefully add salt, pepper and spices; thanks to mustard and soy sauce, the meat will no longer be tasteless. So, in our case, the main thing is not to overdo it.
Squeeze the juice of half a lemon by hand or using a juicer, whichever is more convenient and faster. Mix everything. Our marinade is ready.
Place the steaks in a container large enough to easily add all the ingredients, and pour the sauce into it. Take 1-2 medium onions and cut into rings or half rings. I'm not a big fan of onions, so I didn't use a lot of them.
Divide the onion into rings, pour into a bowl with thighs, mix thoroughly. Cover and marinate for 20-30 minutes in the refrigerator. Meanwhile, prepare a baking dish by lightly greasing it. Turn on the oven to preheat to 180°C. If you have very little time left, don’t wait, move on to the next stage, this will not significantly affect the taste of the finished dish.
After half an hour, carefully place the steaks in the mold. It is better to make an onion base as the first layer. Pour the marinade remaining in the bowl evenly over the meat. Place the chicken thighs in the oven for about an hour. You can cover the top of the form for the first half hour, and then remove the lid, let the excess moisture escape and the meat brown. Don't be afraid to experiment, try adding a little garlic, cinnamon, ginger, chili pepper to the sauce. Adjust the spiciness and sweetness of the marinade by using more/less mustard and honey. Try different types of mustard: Russian, American, French, Dijon. The recipe is suitable for chicken legs and wings. The dish can be made in a slow cooker, first on the “Stew” mode (30 minutes), then “Fry” (20-25 minutes).
